Number Of Ingredients 10

2 cups brown rice flour
1 cup yellow cornmeal
1 tablespoon garlic powder
1 teaspoon cayenne
1 teaspoon freshly ground black pepper
1 teaspoon baking powder
1 teaspoon fine sea salt
4 ounces jalapeno, finely diced
4 ounces vegan butter, melted
Olive oil, for deep-frying

Steps:

  • In a bowl combine the rice flour, cornmeal, garlic powder, cayenne, black pepper, baking powder, sea salt and jalapenos. Mix thoroughly with spoon. Add the vegan butter and 1 1/2 cups water, and mix well until the ingredients form a wet mixture.
  • For the mixture into balls, 1 tablespoon per ball.
  • Fill a tabletop deep-fryer with olive oil and heat to 350 degrees F (see Cook's Note). Fry the hush puppies in batches of 10 to 20 until light brown, 3 to 4 minutes.

The last time we fried catfish, I decided to try out this hush puppy recipe for a bit of a change. I used a can of mild Rotel tomatoes since I have small children, but you could use the hotter Rotel if you wish. This makes a lot of hush puppies, so you might want to halve the recipe. We really enjoyed the flavor of these...hope you will too! Recipe from Southern Living.

5 cups self-rising cornmeal
1 (14 2/3 ounce) can cream-style corn
1 (10 ounce) can diced tomatoes with green chilies
2 large eggs
2 cups buttermilk
3 medium onions, chopped
1 banana pepper, chopped
1/2 cup bell pepper, chopped
1 teaspoon creole seasoning

Steps:

  • Combine all ingredients in a large bowl; stir together just until moistened.
  • Heat oil in a Dutch oven to 375°F.
  • Drop teaspoonfuls of batter into the hot oil and fry 2-3 minutes or until golden brown, turning once.

2 c. yellow cornmeal
1 c. flour
1 teaspoon baking powder
1/2 tsp. baking soda
1 teaspoon creole seasoning
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. black pepper
1 tsp. sugar
½ tsp. cayenne
¼ tsp. salt
2 teaspoons hot sauce
1/4 cup minced onions
2 fresh jalapenos, minced
2 eggs, beaten
¾-1 cup buttermilk
Cooking oil

Steps:

  • In a large pot, fill half way with cooking oil. Heat oil to 365 degrees. In a large bowl add all ingredients, mix well with a fork, and allow mixture to rest about 15 minutes. Roll into balls or drop by tablespoonfuls into hot oil. Fry about 3 minutes stirring constantly until golden brown. Drain and serve.
