An adopted recipe given a facelift. Serves 4 for a light lunch with a side salad, or 2 to 3 for supper.

2 teaspoons vegetable oil or 2 teaspoons butter
1 cup ricotta cheese
1 small onion, diced
1 cup celery, diced
1 (170 g) can albacore tuna, flaked (undrained weight)
1/4 cup low-fat mayonnaise
1 tablespoon lemon juice
1 garlic clove, minced
1 stalk broccoli floret, diced
2 bagels, sliced in half
1 cup cheddar cheese or 1 cup mozzarella cheese, shredded

Steps:

  • Place broiler rack in position under broiler and turn on broiler.
  • Saute garlic,celery and onion in a small amount of oil or butter in a skillet. Cook until onion is just tender.
  • Drain tuna and add to skillet along with ricotta cheese, broccoli, mayonnaise, and lemon juice. Cook long enough to warm ingredients through, perhaps 3 minutes, stirring frequently.
  • If you like your bagels to be a bit toasted, place them under broiler while tuna mixture is warming up.
  • Place bagel halves, split side up, in baking dish. Spread tuna mixture over top covering all and sprinkle cheese over top of mixture.
  • Broil 2 or 3 minutes, until cheese melts.
  • Serve at once.
  • Broil 3 to 4 inches from the heat until the cheddar melts, about 5 minutes.

2 ribs celery (for 1 cup diced)
1 small onion (for 1/2 cup chopped)
12 oz can white tuna, packed in water
1 1/2 cups low-fat cottage cheese
1/2 cup reduced-fat mayonnaise
1 tablespoon lemon juice
1/4 teaspoon garlic powder
3 English muffins
1 cup shredded Cheddar cheese

Steps:

  • 1. Place the broiler rack in the position nearest the heating element and turn on the broiler. 2. Dice the celery and peel and finely chop the onion. Spray a 12 inch non-stick skillet with cooking oil spray and place it over medium heat. Add the celery and onion and cook until the onion is tender, about 2 minutes. 3. Drain the tuna and add it to the skillet along with the cottage cheese, mayonnaise, lemon juice, and garlic powder. Stir well to combine and break up the tuna chunks. Cook just long enough to warm the ingredients, 2 - 3 minutes, stirring frequently. If you like a little crunch in your muffins, toast them now while the tuna mixture is warming up. Remove the pan from the heat and set aside. 4. Spray a 13 x 9 inch glass baking dish with cooking oil spray. Split the English muffins in half and place the halves, split side up, side by side in the baking dish. Spread the tuna mixture evenly over the muffins and sprinkle with the cheese. Broil until the cheese melts, 2 to 3 minutes. Serve at once.

2 stalks celery , diced
1 onion , diced
1 (12-ounce) can tuna , drained
1/2 cup cottage cheese
1/2 cup mayonnaise
1/4 teaspoon garlic salt
1/8 teaspoon sugar
4 English muffins , split and toasted
8 slices American cheese

Steps:

  • In a skillet sprayed with non-stick cooking spray, sauté celery and onion until tender. Add tuna, cottage cheese, mayonnaise, garlic salt and sugar to skillet. Mix well, breaking up tuna. Cook over low heat until warmed through, stirring frequently; remove from heat. Place toasted muffins cut-side up on a broiler pan. Spread with tuna mixture and top with cheese slices. Broil until cheese melts; serve immediately. Tip: Making biscuits and there's no biscuit cutter handy? Try Mom's little trick...just grab a glass tumbler or the open end of a clean, empty soup can.
