After trying a lot of complicated tuna salad recipes and not liking any of them, I finally created my own. Just the basics. Serve on bread, tortillas, or lettuce.

CREAMY AND CRUNCHY TUNA SALAD SUPREME
This tuna salad is made special with the addition of cream cheese and chopped raw carrots. Red peppers make it pretty and one or two other vegetables, fruits or nuts keep it changing and interesting. I developed this recipe after I tasted cream cheese in a salmon salad sandwich at a funeral lunch in Canada many years ago. Add baby spinach or lettuce leaves, and serve on your favorite bread or as a wrap in a tortilla.

TUNA EGG SALAD MELTS

- Heat the broiler to high and line a rimmed baking sheet with aluminum foil.
- Add the tuna, chopped eggs, celery, dill pickles, pickled jalapeños and scallions to a mixing bowl. Mix to incorporate and to break up any large chunks of tuna. Set aside.
- Add the mayonnaise, mustard and smoked paprika to a small bowl. Whisk to combine. Add the mayonnaise mixture to the tuna mixture and use a rubber spatula to mix until evenly combined. Season to taste.
- Arrange the bread on the foil-lined baking sheet. Divide the tuna mixture evenly among the slices of bread. Top the tuna with a few slices of tomato. Sprinkle the tomato with salt and pepper. Top the tomatoes with the pepper jack cheese.
- Transfer the baking sheet to the broiler and broil until the cheese is bubbling and melted, 1 to 2 minutes.
- Transfer the sandwiches to a cutting board, then slice in half and serve immediately.
CREAMY TUNA EGG PASTA SALAD
Our Creamy Tuna Egg Pasta Salad is creamy and absolutely delicious, both in texture and flavor. It comes together quickly and tastes great!

Steps:
- Fill a large pot half full with water, add pasta, and boil over high heat for 10-12 minutes or until pasta is tender. Once pasta is cooked, drain water and run cold water over pasta until it is no longer warm.
- Fill a medium pot half full with water, add eggs, and boil over high heat for 10 minutes. Remove from heat and cover for 10 minutes.
- Chop celery.
- Transfer cooked pasta to a large bowl. Add Miracle Whip and stir to fully cover noodles.
- Add tuna and stir well to combine.
- Add sweet peas, cheddar cheese, and chopped celery. Stir to combine.
- Run eggs under cold water. Tap lightly on the hard surface, roll around to crack the shells, and remove the shell. Rinse under cold water, then cut eggs into pieces.
- Add chopped eggs to salad. Toss lightly to combine. *Optional: Slice 1-2 eggs to add to the top of the salad to make it look prettier.
- Chill salad for 1 hour and serve.
