I made this last night from things in the pantry and fridge. I guess it's based loosely on Alamatriciana, though that has crisp bacon and no cream or herbs!

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, crushed
6 slices bacon, diced
1/2 cup white wine
dried red chili pepper flakes, to taste (I used about 1/2 teaspoon)
1 (700 ml) jar tomato sauce
1/2 cup water
1 teaspoon chicken stock powder
1/2 cup cream (I used light)
1 tablespoon chopped fresh basil
2 tablespoons chopped fresh parsley
fresh ground black pepper

Steps:

  • Heat the oil in a heavy based fry pan over medium heat.
  • Add the onion and cook for about 5 minutes, add the bacon and garlic, and cook for a further 5 minutes or until the bacon is cooked to your liking.
  • Pour in the wine, and allow to cook and reduce for a couple of minutes, then add the chilli flakes, tomato sauce, water and stock powder.
  • Simmer for about 15 minutes.
  • Add the cream and fresh chopped herbs and freshly ground black pepper, reheat and serve immediately over the pasta of your choice.
  • We ate this last night over spinach and cheese tortellini.

A delicious and simple tomato pasta sauce which I've been using for years and is the first one I taught my kids how to make. The fresh garlic at the end, uncooked, is what makes it really tasty. I hesitate to post it because the cream will curdle if the heat is too high. It sometimes takes a couple of times before you get the feel of how much heat it will take. It will still taste ok, but won't look really yummy. Do remember to dilute the paste with water first. Very important. All quantities are flexible. Substituting with milk or garlic powder will absolutely not work.

1 can tomato paste, mixed with about
2 -3 tablespoons water
1 -2 tablespoon olive oil
3 -5 tablespoons cream
1 -2 clove crushed garlic
fresh ground black pepper
chopped fresh basil or other fresh herb

Steps:

  • Heat a saute pan on medium heat.
  • Pour in the olive oil.
  • Stir the tomato paste gently into the oil.
  • It may not completely mix just yet.
  • (Don't get the heat too high).
  • Add the cream and stir into the tomato mixture.
  • Heat it gently so that it almost starts to simmer.
  • At this point it is done.
  • Add the crushed garlic and fresh ground pepper.
  • Serve immediately over or in your pasta, and garnish with lots of fresh chopped basil.

150g red lentil fusilli
2 handfuls of rocket
60g unsalted, unroasted cashews
1 large garlic clove, roughly chopped
1 large roasted red pepper (in red wine vinegar) from a jar, drained, any seeds removed
4 sundried tomatoes
8 large basil, roughly chopped

Steps:

  • First, make the sauce. Put the cashews and garlic in a bowl, then pour over 125ml boiling water and set aside for 5 mins. Meanwhile, put a large pan of water over a high heat. When the water is boiling rapidly, tip in the pasta and a little salt, stir once, then continue to boil for 8 mins, or following pack instructions, until the pasta is softened but still retains some bite.
  • Meanwhile, add the roasted pepper and sun-dried tomatoes to the bowl with the cashews, garlic and water, then whizz with a hand blender or in a food processor to make a smooth, creamy sauce. Stir through the basil and season with black pepper.
  • Drain the pasta, mix with the sauce in a large bowl, then divide between two bowls and add a handful of rocket to each.

2 tablespoons oil
1 onion, finely chopped
1 garlic clove
400 g bacon, diced
1/2 cup white wine
1 cup cream (I use light)
1 (300 g) box frozen spinach, thawed
cracked black pepper
1/2 cup sun-dried tomato, drained and chopped
1/2 cup grated parmesan cheese
2 tablespoons toasted pine nuts (shake them in a dry pan over high heat until golden-remove to a plate to cool)

Steps:

  • Heat the oil in a large frypan and fry the onion, garlic and bacon over medium heat for about 10 minutes.
  • Add the white wine, cream, spinach and black pepper and bring to a gentle boil; reduce the heat and cook for a couple of minutes.
  • Add the sundried tomatoes and parmesan cheese, stir through and serve with the cooked pasta of your choice, with the toasted pinenuts over the top.
  • Serve with extra parmesan if you wish.

This is a creamy, very tasty dish that I hope you enjoy. I used whole wheat pasta, but either would be good. Also, adjust the spices to your liking. I have posted the recipe for one serving, but it is easily doubled, tripled, and so on.

  • Cook pasta according to the directions on the package. (Or take some leftover pasta out of the fridge.).

1 lb mushroom, quartered
1 1/2 cups broccoli, coarsely chopped and blanched

9 ounces low-fat, firm silken tofu

1 medium onion, finely chopped

Steps:

  • Heat oil in a medium pot over medium-high heat (use enough oil to cover the bottom of your pot you may need more than 1/4 cup).

  • Add in garlic, chili flakes and basil; cook stirring for 2 minutes,.

  • At this point and before the addition of the cream you may cool the sauce and refrigerate up to 3 days.
  • At the end of cooking mix in the cream starting with 1/3 cup and adding in more until you reach your desired creaminess; stir until heated through.

  • THE ADDITION OF SAUSAGE MEAT; in the pot brown the sausage meat with onion, bell pepper and sun-dried tomatoes until no longer pink (breaking up the meat while cooking) drain fat.
  • Add in the garlic, red pepper flakes and basil; cook stirring until the meat is browned (about 7-8 minutes, or best flavor the meat should be lightly browned).
  • Add in the tomato paste and continue with the recipe as stated from step# 5.

1 tsp olive oil
1 red onion, chopped
1 garlic clove, crushed
1 red and 1 green pepper, chopped
400g tin chopped tomatoes
1 vegetable oxo cube
1 tsp mixed herbs
1 tsp paprika
2 cooked chicken breasts
Approx 80g light soft cheese with garlic and herbs

Steps:

  • Heat oil, then fry onion gently for 5 mins. Add garlic and fry for 2 mins more. Add peppers and cook for 5 mins.
  • Add tomatoes, oxo cube, mixed herbs and paprika, stir together and simmer gently for 20 mins.
  • Add chicken and heat through, then turn heat down to minimum and add soft cheese. Heat very gently for a couple of minutes to warm through. Season and serve with pasta and grated parmesan.

•5 cloves garlic, finely minced, divided
•1/4 cup red wine vinegar
•1 tsp Dijon mustard
•1/2 tsp cinnamon, ground
•1/2 tsp fresh ground black pepper
•1 lb lean eye round steak, cubed
•16 oz whole-wheat farfalle pasta
•Olive oil cooking spray
•1 medium yellow onion, finely diced
•1 28-oz jar or can no-salt-added crushed tomatoes
•1 1/2 tsp Italian seasoning
•1 tsp dried basil
•8 oz low-fat sour cream

Steps:

  • 1.Prepare marinade: In a bowl, whisk together 3 cloves garlic, vinegar, Dijon, cinnamon and pepper. Pour marinade over steak cubes in another container, cover and refrigerate for at least 1 hour. (You can also leave steak to marinate overnight.) 2.Cook farfalle according to package directions. Drain and set aside. 3.Drain steak cubes and discard marinade. Heat a large cast-iron or nonstick skillet over high heat for 1 minute. Reduce heat to medium-high, mist with cooking spray and sauté steak until browned on each side, about 4 minutes total. Remove steak from pan and set aside. 4.Mist same pan with cooking spray again, add onion and remaining 2 cloves garlic and sauté until brown, about 2 to 3 minutes. Add tomatoes and reduce heat to medium low. Add seasoning, basil and sour cream and combine. Cook for an additional 2 to 3 minutes, then mix in reserved steak and cook for 2 more minutes, until meat and sauce are completely warmed. 5.Serve 1 cup farfalle with 3/4 cup steak sauce. Garnish with an additional sprinkling of Italian seasoning, if desired.

I adapted this recipe from one I found in a cookbook a few years ago; it's now become my signature pasta sauce. I love it because it mixes my two favorite sauces -- red tomato sauce and cheese! It takes a little more effort than just opening up a jar of Ragu, but the end product is SO worth it, I think. Good for special occasions when you want to WOW your guest(s).

3 garlic cloves, crushed
2 tablespoons olive oil
8 ounces mushrooms, sliced (you can substitute other veggies if you prefer, like zucchini)
1/2 cup sun-dried tomatoes packed in oil (drained and chopped) or 1/2 cup of red pepper pesto sauce
2 cups of your favorite ready-made spaghetti sauce
1/4 cup red wine
1 tablespoon balsamic vinegar
1/4 teaspoon crushed red pepper flakes
1 (8 ounce) package cream cheese (cubed)
12 ounces pasta (penne or whatever you like)
shrimp (peeled and deveined) (optional) or chicken piece (optional)

Steps:

  • Saute the garlic in the oil for 2 minutes.
  • Add the chicken (optional) and cook.
  • Next add the mushrooms (or other veggies) and saute until tender.
  • Add the tomatoes or pesto sauce, wine, spaghetti sauce, vinegar and crushed red pepper flakes. Simmer 7-10 minutes.
  • Add the cream cheese, and stir until it's melted throughout.
  • Add the shrimp (optional).
  • Cook your pasta of choice (I like penne).
  • Top the pasta with this sauce, add some parmesan and whatever else you like (pine nuts, parsley, etc.) and serve. Yum!

1/2 lb. linguine, uncooked
2 Tbsp. olive oil
1/2 cup chopped onion s
3/4 lb. uncooked deveined peeled medium shrimp
2 cups CLASSICO Tomato and Basil Pasta Sauce
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/2 cup KRAFT 2% Milk Shredded Italian* Three Cheese Blend
2 Tbsp. chopped fresh parsley

Steps:

  • Cook pasta as directed on package. Meanwhile, heat oil in large skillet on medium heat. Add onions; cook and stir 3 min. Stir in shrimp; cook and stir 5 min. or until shrimp turn pink.
  • Add pasta sauce; cook 2 min. or until heated through, stirring frequently. Stir in cream cheese; cook 2 min. or until cream cheese is melted, stirring occasionally.
  • Drain pasta; place on serving plate. Top with shrimp mixture, shredded cheese and parsley.
