¼ cup butter
4 yellow summer squash, thinly sliced
1 small yellow onion, thinly sliced
1 cup sour cream
1 egg, lightly beaten
1 cup shredded sharp Cheddar cheese
1 sleeve buttery round crackers (such as Ritz®), crushed and divided
¼ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Cook and stir squash and onion in hot butter until tender, 10 to 15 minutes. Drain and cool vegetables.
  • Whisk sour cream and egg together in a large bowl. Add squash mixture, Cheddar cheese, and 1/2 of the crushed buttery round crackers; stir to combine and pour into prepared baking dish.
  • Stir remaining buttery round crackers and melted butter together in a bowl; spread over the top of squash mixture and gently pat down.
  • Bake in the preheated oven until crackers are lightly browned, about 20 minutes.

2 medium butternut squash, peeled and cut into chunks
1/2 cup sugar
2 large eggs
1/4 cup milk
2 tablespoons butter
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Place squash in a large saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 12-16 minutes or until tender. Drain., In a small bowl, beat squash until smooth. Add the remaining ingredients; beat well. Spoon into a 1-1/2-qt. baking dish coated with cooking spray. Cover and bake at 350° for 30-35 minutes or until a thermometer inserted in the center reads 160°.

2 small onions, chopped
1 (2 1/2 pound) butternut squash - peeled, seeded, and cubed

¼ teaspoon salt

⅓ cup chopped fresh basil
¼ teaspoon ground black pepper
½ (8 ounce) package coarsely shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13-inch casserole dish.
  • Heat olive oil in a skillet over medium heat; cook and stir onions in the hot oil until softened, about 10 minutes. Stir in squash and garlic; season with salt. Cook squash mixture, stirring occasionally, until squash is slightly tender, about 10 minutes. Add water if mixture gets too dry. Transfer squash mixture to the prepared casserole dish.
  • Lightly whisk eggs in a bowl; stir in sour cream, Parmesan cheese, basil, and black pepper. Pour egg mixture over squash mixture; top with mozzarella cheese.

7 cups thinly sliced yellow summer squash (about 5 medium)
1 large sweet onion, chopped
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup sour cream
1/4 cup mayonnaise
1 teaspoon celery salt
1/2 teaspoon pepper
1 cup (4 ounces) shredded Gouda cheese
1 cup (4 ounces) shredded provolone cheese
10 bacon strips, cooked and crumbled
20 Ritz crackers, crushed
1-1/2 cups coarsely crumbled cornbread
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. Place 1-1/2 cups broth in a large skillet; bring to a boil. Add squash and onion; cook, covered, 3-5 minutes or until crisp-tender. 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup sour cream
1/3 cup butter, melted
2 medium carrots, shredded

  • Cut squash in half; remove and discard peel and seeds. Cut squash into 1/2-in. cubes. 1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream
⅓ cup butter, melted
2 carrots, shredded
½ cup finely chopped onion
2 ½ cups herb-seasoned dry stuffing mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11-inch baking dish.
  • Bring a pot of lightly salted water to a boil; stir in squash cubes. Reduce heat to low; simmer squash until slightly softened, about 3 minutes. Drain and set aside.

This is my attempt at trying to come up with a new way to use up the abundance of squash coming from our garden. I was going for a creamy, cheesy casserole, and it turned out pretty darned good. Next time, I may add a cup of chopped cooked chicken to the mix.

4 - 4 1/2 c yellow squash (sliced & chopped)
1 c diced sweet onion
3 Tbsp butter, divided
1 can(s) cream of onion soup
1/4 c sour cream
1/4 c mayonnaise
1/8 tsp ground black pepper
1/4 tsp salt
1/4 tsp seasoned salt
1 1/2 c shredded sharp cheddar cheese, divided
2 c crushed ritz crackers, divided (i like "everything" flavored)

Steps:

  • 1. Gather and prep ingredients. (Prep time is approximate.)
  • 2. Place chopped squash and onions in a microwave safe casserole dish; cover with lid. Microwave for 5 minutes on high power; stir; microwave on high for additional 5 minutes.
  • 3. Drain squash in mesh strainer placed over a bowl. Set aside. Preheat oven to 350 degrees F.
  • 4. In the still hot casserole dish, place one tablespoon butter; swirl to melt and coat sides of dish.
  • 5. In prepared dish, mix together 1 can condensed cream of onion soup, 1/4 cup sour cream, 1/4 cup mayonnaise, 1/8 teaspoon pepper, 1/4 teaspoon salt and 1/4 teaspoon seasoned salt.
  • 6. Mix in 1 1/4 cup shredded cheddar cheese and one cup crushed ritz crackers.
  • 7. Add well drained squash and onion mixture; stir until well combined.
  • 8. Smooth the mixture down; cover with remaining cheese.
  • 9. Melt 2 tablespoons butter; pour over remaining 1 cup crushed crackers, mix well until crumbs are evenly coated.
  • 10. Scatter crumbs evenly over casserole. Bake, uncovered, on middle rack of preheated 350 degree F oven for one hour, turning dish after first half hour.
  • 11. Let cool for 5 to 10 minutes before serving. Cover and refrigerate leftovers.

4 -5 yellow squash, peeled and chopped in big chunks (peeling is optional)
1 medium onion, chopped
1 (10 1/2 ounce) can cream of mushroom soup (I have used cream of chicken)
1/2 cup milk
1 -2 inch Velveeta cheese, chopped (off the big block)
2 cups shredded cheddar cheese (use more or less)
1 (12 ounce) bag Doritos, broken up (not to fine, you may not use the whole bag so crumble a layer at a time)
salt and pepper

Steps:

  • Heat soup and milk in sauce pan.
  • Add Velveeta stir until melted.
  • Add squash and onion to mixture and stir gently until mixed.
  • Layer Doritos in casserole sprayed with cooking spray, just enough to cover bottom good.
  • Pour enough squash mixture to cover chips.
  • Sprinkle enough cheese to cover mixture.
  • Repeat layers until all is used, ending with chips then cheese.
  • Cover and bake in 350 degree oven for 25 minutes.
  • Uncover and bake for 10 more minutes until top is lightly brown.

The original recipe was from Detoxinista which changes to suit my personal preference. When I was young I loved creamy casserole dishes. My mom made the most delicious tuna casserole with elbow pasta, cream of mushroom soup, green beans, tuna and LOTS of cheese -- Midwest comfort food at it's finest, but not healthy in the least. This recipe is so yummy! It is a great way to sneak veggies into a picky child or spouse's diet. It tastes way to good to be healthy...or so they'll think.

1 large spaghetti squash
1 sweet onion, diced
6 ounces Greek yogurt
4 ounces shredded goat cheddar cheese
2 garlic cloves, minced
3 tablespoons fresh parsley, chopped fine
1/4 teaspoon nutmeg
organic butter
sea salt and pepper

Steps:

  • Preheat oven to 400°F.
  • First, cut your spaghetti squash in half lengthwise and use a spoon to scrape away the seeds. Drizzle with a little sea salt and fresh cracked pepper and place down on a lined baking sheet and cook for about 45 minutes.
  • While the squash is baking, prepare your filling. In a medium skillet over med-high heat add a small pat of butter, minced garlic, diced onion, a pinch of sea salt, and pepper and cook for several minutes until soft.
  • In a large mixing bowl combine the cooked onions and garlic with greek yogurt, 1 oz of shredded goat cheddar, parsley, nutmeg, sea salt and pepper to taste.
  • Remove squash from the oven and let cool. When your squash is cool enough to handle, use a fork to scrape out the inside which will come apart in strands. Place spaghetti squash strands in your mixing bowl and combine all ingredients together. Place your mixture in a large baking dish and top with the remaining 3 oz of shredded goat cheddar. Place bak in the oven at 400° and let cook for about 15 minutes. Then set the oven to broil and cook until the top has formed a delicious golden crust.
  • Serve immediately and prepare to be blown away at how delicious this healthy dish is.

1¼ cups chopped onion
3 cups chicken broth
10 cups sliced yellow squash
1½ cups shredded cheddar cheese, divided
½ cup sour cream
¼ cup mayonnaise
⅓ cup grated Parmesan cheese
4 ounces cream cheese, softend
1½ teaspoons salt
½ teaspoon pepper
½ teaspoon garlic powder
1 egg
1½ cups crushed Ritz crackers, divided

Steps:

  • Spray a 2½ quart baking dish with cooking spray.
  • Preheat oven to 350 degrees F.
  • In a large sauce pan, boil about 3 cups water, chicken broth, and the onions. Add the squash and bring to a boil again. Reduce heat and simmer for about 6 minutes. Remove from heat and drain.
  • In a large mixing bowl, combine sour cream, mayo, Parmesan cheese, cream cheese, salt, pepper, garlic powder and egg. Mix well.
  • Gently stir in the squash.
  • Layer ½ of the squash mixture into the prepared dish.
  • Sprinkle ½ of the cheddar cheese over the squash.
  • Next, sprinkle ½ of the Ritz crackers evenly over the cheese.
  • Next, spread the rest of the squash mixture over the crackers.

1 can(s) cream of mushroom soup
1 can(s) cream of chicken soup
2 c frozen or fresh squash
1/2 c kraft mayo
1 c sour cream
1 medium onion, chopped
1 can(s) italian bread crumbs
butter, room temperature

Steps:

  • 1. boil squash & onions till soft (no crunchies!)
  • 2. drain me please i'm soaked!
  • 3. in a seperate bowl mix together mayo,both cans of soup, & sour cream (put me in the fridge, till the squash is done.)
  • 4. combine your squash & onion mixture with your soup mix until well combined
  • 5. take your baking dish & line it with butter(sides & all honey!)
  • 6. cover the butter with your italian bread crumbs
  • 7. pour mixture into baking dish
  • 8. melt 1/2 cup of your butter & gently coat the top of casserole
  • 9. sprinkle more bread crumbs on top
  • 10. bake for 35 mins at 350'
  • 11. when you remove it from the oven let it cool before eating.(don't burn your tongue, you won't enjoy the wonderful taste!)
