CREAMY SPINACH AND ARTICHOKE CHICKEN SKILLET



Creamy Spinach and Artichoke Chicken Skillet image

Inspired by a favorite hot appetizer, this creamy weeknight chicken skillet dinner has all the best parts of spinach and artichoke dip.

1/4 cup all-purpose flour
Kosher salt and freshly ground black pepper
Four 6-ounce boneless, skinless chicken breasts
4 tablespoons vegetable oil
1 small onion, chopped
2 cloves garlic, minced
4 ounces cream cheese, cut into chunks
1 cup half-and-half
One 5-ounce package baby spinach (about 4 cups)
One 14-ounce can artichoke hearts, drained and quartered
Steamed rice, for serving

Steps:

  • Whisk together the flour, 1 tablespoon salt and a few grinds of pepper in a pie plate or shallow dish. Coat both sides of the chicken breasts in the seasoned flour. Shake off any excess and set aside.
  • Heat 3 tablespoons of oil in a large, heavy-bottomed skillet over medium-high heat. Add the chicken and cook, undisturbed, until deeply golden, about 4 minutes (do not turn). Remove the chicken to a plate. Add the remaining tablespoon oil to the skillet. Add the onion and cook, stirring occasionally, until it begins to soften, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Add the cream cheese and stir until melted. Pour in the half-and-half and use a wooden spoon to scrape up any brown bits from the bottom of the skillet. Season with salt and pepper. Add the chicken back to the skillet, seared-side up, reduce the heat to medium, cover and cook, turning about halfway through, until an instant-read thermometer inserted into the thickest part of the chicken reaches 165 degrees F, 12 to 14 minutes.
  • Transfer the chicken to a serving platter. Add the spinach to the sauce in the skillet, cover and cook until wilted, about 5 minutes. Stir in the artichoke hearts and cook until heated through, about 1 minute. Season with salt and pepper. Pour the creamy sauce over the chicken. Serve with steamed rice.

Steps:

3 tablespoons soy sauce
3 tablespoons balsamic vinegar
2 tablespoons light brown sugar
4 cloves garlic, crushed, plus 3 whole cloves garlic
Juice from 3 lemons
4 boneless chicken breasts
Kosher salt and freshly ground black pepper
Oil, for oiling grill grates
2 tablespoons unsalted butter
2 Fresno chiles, seeded and cut into 1/4-inch strips
2 poblano chiles, seeded and small diced
1 small Maui or other sweet onion, minced
1/2 cup sherry wine
4 ears fresh sweet corn, shucked and kernels cut off cobs
1 medium yellow squash, sliced into 3/4-inch half-moons
1 medium zucchini, sliced into 3/4-inch half-moons
1 cup heavy cream
1/2 cup plus 2 tablespoons grated Parmesan
1/2 cup chicken stock, plus more for thinning sauce if needed
1/4 cup fresh cilantro leaves
1/2 cup corn nuts, crushed in a plastic bag until sandy

Steps:

  • Whisk together the soy sauce, balsamic, sugar, crushed garlic and juice of 2 lemons in a bowl until the sugar is dissolved. Add the chicken and marinade to a resealable plastic bag and marinate in the fridge for 3 hours.
  • Take the chicken out of the marinade and dry off. Sprinkle with salt and pepper.
  • Preheat a grill to high heat. Place a large cast-iron skillet on one side of the grill. Place a smoker box or foil pan with wood chips on the grill.
  • Once the smoker has begun to produce smoke, liberally oil the grill grates and place the chicken on the grates. (We are just looking for a quick hard sear on both sides to get that char flavor. The goal is to finish cooking in the creamy, smoky corn.)
  • Add the butter to the skillet along with the Fresnos, poblanos, onions and remaining 3 whole cloves garlic. Saute until the onions are translucent and chiles are tender, about 10 minutes. Deglaze with the sherry and add the fresh corn, squash, zucchini, cream, 1/2 cup Parmesan and half of the stock. Season to taste.
  • Add the chicken to the skillet and lower the grill to medium. Close the lid and smoke the skillet over medium heat, playing with the position of the skillet to ensure you get the liquid to simmer ever so slightly, until the chicken hits 160 to 165 degrees F, 10 to 15 minutes. Take the skillet off the grill and pour in a little chicken stock if the sauce is very thick. Add the remaining lemon juice on top and garnish with the cilantro, remaining 2 tablespoons Parmesan and crushed corn nuts.

Add the chicken back to the skillet, cover and cook, turning about halfway through, until an instant-read thermometer inserted into the thickest part of the chicken reaches 165 degrees F, 15 to 20 minutes. Transfer the chicken to a serving platter filled with warm egg noodles. Add the spinach to the skillet, cover and cook until wilted, about 5 minutes. Stir to combine and season with salt and pepper. Pour the creamy spinach sauce over the chicken and noodles.

The small amount of garlic in the adobo works for us, but your mileage may vary. You can tone down the heat by serving this dish with a side of yellow rice or kick it up by adding in cayenne. Adding in the optional chipotle chilies approximately doubles the heat of the recipe.

I also substitute 3 cans (12 oz.) of chicken if I don't have time to cook the chicken breasts. 3 chicken breasts, cooked and diced
2 (8 ounce) cans cream of chicken soup (although you can substitute cream of broccoli, broccoli cheese, or cheddar cheese soup)
1 (8 ounce) container sour cream
1 (8 ounce) can evaporated milk or 8 ounces half-and-half
1 1/2 cups milk
2 cups shredded cheese (any variety, although I have found a cheddar or colby-jack blend works best)
1 tablespoon garlic powder
1 tablespoon black pepper
1 teaspoon seasoning salt
2 cups frozen broccoli florets
egg noodles or rice

Steps:

  • Cook chicken and allow to cool. Dice and set aside or use canned chicken and drain.
  • Mix the soup, sour cream and milk in a mixing bowl with the seasonings listed. Put on stovetop on medium-low and add chicken. Stir occasionally until slightly bubbly. Add the cheese and cook until melted, stirring occasionally. Set temperature to simmer until noodles or rice are done.
  • Put frozen broccoli in a microwave safe dish and cook, covered until thawed, (usually about 3-5 minutes, depending on microwaves). Drain, if needed, and pour and stir into chicken mixture. (One thing I have done is, I line a glass bowl or dish with about 4 paper towels, and pour the frozen broccoli on the towels. I then cover the dish, and nuke for about 4-6 minutes. When it's done, the broccoli doesn't need draining because the towels absorbed all the liquid from the frozen broccoli).
  • Prepare egg noodles or rice as directed on packaging.
  • Serve creamy, cheesy mixture over noodles or rice. I imagine you could serve it over stuffing as well, although I have yet to try it that way. Serve with a salad. Enjoy!

1 ½ pounds boneless, skinless chicken thighs
salt and ground black pepper to taste
1 ½ tablespoons olive oil, divided
1 tablespoon minced garlic
2 teaspoons dried thyme
1 teaspoon dried rosemary
½ cup chicken broth
⅓ cup oil-packed sun-dried tomatoes, drained and cut into strips
1 cup heavy cream
½ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Season chicken thighs with salt and pepper.
  • Set an oven-proof skillet on high heat. When hot, add 1 tablespoon oil and chicken. Cook until well seared, about 3 minutes per side. Remove chicken to a plate and reduce heat to medium.
  • Add remaining 1/2 tablespoon oil, then add garlic, thyme, and rosemary. Bloom spices together for 1 minute. Pour in chicken broth, then add sun-dried tomatoes, and finally the cream. Stir well and then blend in Parmesan cheese. Bring to a light simmer. Add chicken back to the pan.
  • Transfer to the preheated oven and bake, uncovered, until chicken is no longer pink in the center and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove from the oven and allow to cool slightly to let the sauce thicken before serving, about 5 minutes.

1-1/2 cups whole grain penne pasta, uncooked
1 red pepper, chopped
1 cup fresh broccoli florets
1 cup fresh peas
1/2 lb. boneless skinless chicken breasts, cut into thin strips
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Chive & Onion 1/3 Less Fat than Cream Cheese
1/4 cup milk
1/2 tsp. lemon zest
3/4 cup STOVE TOP Everyday Stuffing Mix for Chicken

Steps:

  • Cook pasta in large saucepan as directed on package, omitting salt and adding vegetables to the boiling water for the last 3 min.
  • Meanwhile, cook chicken in large nonstick skillet on medium-high heat 5 to 7 min. or until done, stirring frequently. Add reduced-fat cream cheese, milk and lemon zest; cook and stir 2 to 3 min. or until cream cheese is completely melted and mixture is well blended.
  • Drain pasta. Add to chicken mixture; stir. Sprinkle with stuffing mix.

This was an existing recipe on here but made some changes to my liking. ¥¥ Because my family loves to put the chicken over pasta with the same sauce, I doubled the sauce ingredients. We LOVE lemon and tangy chicken but if you're not a fan of it then cut back the lemon juice & lemon vinegar. I also added some other ingredients to my personal liking...hope you enjoy it!!

6 medium boneless skinless chicken breasts, cut into cubes
olive oil
2 tablespoons garlic butter (I use Land O'Lakes)
2 tablespoons garlic, minced or 1 tablespoon garlic paste
3 cups chicken stock
1/3 cup heavy cream
1 1/2-2 tablespoons lemons or 1 1/2-2 tablespoons vinegar
1 cup dry white wine
1/4 cup lemon juice (to taste)
2 tablespoons capers, drained and chopped
1 tablespoon fresh parsley, chopped

Steps:

  • In a nonstick skillet, heat olive oil over med high.
  • Stir in garlic butter until melted.
  • Add chicken.
  • Cook 5 min to brown, then reduce heat to med.
  • Turn chicken and cook about 4-5min more until juice runs clear when pierced.
  • Transfer chicken to a warm dish.
  • Lower heat if needed to maintain medium-low to medium heat so as not to scorch the garlic, then add garlic to the drippings in the skillet.
  • In a cup, mix stock, wine, lemon juice, and 1 1/2 teaspoons of flour until smooth.
  • Stir into mixture in skillet. Scrape skillet to incorporate any browned bits from the chicken.
  • Heat to a boil, boil 1 minute. Stir in capers and remaining 1 tablespoon of butter and the heavy cream, simmer until thickened.
  • Pour sauce over chicken, sprinkle with parsley and garnish with additional lemon slices.
  • **This recipe is to make double the sauce to add to add to pasta if you are laying the chicken on top.
  • Note: Occasionally, this has turned out a little more "tangy" than I would like with too much lemon. If this happens, just dilute with a little extra chicken stock or broth mixed with cornstarch or flour to keep thicker consistency.

1 tsp. cracked black pepper, divided
1 tsp. garlic powder, divided
6 boneless skinless chicken thighs (1-1/2 lb.)
1 Tbsp. oil
1 lb. fresh mushrooms, sliced
1 large leek, light green and white parts only, sliced
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/2 tsp. dried thyme leaves
1 frozen puff pastry sheet (1/2 of 17.3-oz. pkg.), thawed

Steps:

  • Heat oven to 350°F.
  • Mix 2 tsp. mustard and 1/2 tsp. each pepper and garlic powder; spread onto chicken.
  • Heat oil in large ovenproof skillet over medium heat. Add chicken; cook 1 min. on each side. Transfer chicken to plate, reserving drippings in skillet.
  • Add mushrooms to reserved drippings; cook, stirring frequently to loosen browned bits from bottom of skillet, 6 min. Add leeks; cook, stirring frequently, 6 min. or until tender. Add cream cheese; cook, stirring, 2 min. or until melted. Add thyme, and remaining mustard, pepper and garlic powder; stir until blended. Remove from heat. Return chicken to skillet; cover with foil.
