My grandmother's special recipe and a family favorite in our house. Shrimp, egg noodles, peas and a few mushrooms layered in creamy sauce. Although this recipe yields quite a bit, my family of 4 usually devours the whole dish in one sitting.

1 pound shrimp, peeled and deveined
1 teaspoon salt
3 cups wide egg noodles
2 tablespoons butter
1 ½ tablespoons all-purpose flour
2 ½ cups milk
½ cup heavy cream
salt and ground black pepper to taste
1 cup frozen green peas, thawed
1 (4.5 ounce) can sliced mushrooms, drained
1 cup crushed buttery round crackers
1 tablespoon cold butter, thinly sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 3-quart casserole dish.
  • Fill a large pot with water, and bring to a boil over high heat. Stir in the shrimp, reduce heat to a simmer, and cook the shrimp until opaque and bright pink, about 3 minutes. Remove the shrimp to a bowl with a slotted spoon. Return the water to a full rolling boil over high heat, and stir in the noodles. Cook until the noodles are tender, about 8 minutes; drain in a colander set in the sink.
  • Melt 2 tablespoons of butter in a saucepan over medium heat, and stir the flour into the butter to make a paste. Remove the pan from the heat; slowly whisk in the milk and cream until smooth. Season to taste with salt and black pepper. Return the sauce to the heat, lower heat to a simmer, and whisk constantly until the sauce thickens, about 5 minutes.
  • Place noodles into the prepared casserole dish, and top with peas, mushrooms, and cooked shrimp. Pour the sauce over the casserole, and sprinkle the crushed cracker crumbs evenly over the top. Dot the top of the casserole with about 6 thin slices of butter.
  • Bake in the preheated oven until the cracker topping is crisp and golden brown, about 1 hour.

This is from Southern Living. So good. I posted as written. However, if you can actually find "cream of shrimp soup" send me some as I have never seen it. NOTE: I sub 1 can cheese soup & 1 can cream of celery for the two cans of cream of shrimp and add some extra shrimp and I think it is good! Prep time includes time to cook rice and shrimp in skillet. :) Also, I will separate this into TWO casserole dishes, then cook one all the way (follow recipe through to the end) and the other I freeze right before sprinkling with cheese. I am jsut careful to eat it within about one month since there is seafood in the casserole. Also, sometimes I make half chicken/half shrimp or one of each. When I add chicken instead of the cream of celery soup I use cream of chicken. I always use the cheese soup. Really the possibilities are endless :) Also, add some cayenne pepper if you like it spicy! We ALWAYS add cayenne!

1 1/2 lbs medium shrimp, raw, peeled and deveined
1/2 cup butter
1 green bell pepper, chopped
1 onion, chopped
3 celery ribs, chopped
2 garlic cloves, minced
4 green onions, chopped
2 (10 3/4 ounce) cans cream of shrimp soup, undiluted
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 cup cheddar cheese, shredded

Steps:

  • Prepare rice according to package directions.
  • Preheat oven to 350*F.
  • Melt butter in a large skillet over medium heat; add bell pepper and next 4 ingredients, and sauté 10 to 12 minutes or until tender.
  • Stir in soup, shrimp, salt, and pepper; cook 3 minutes or just until shrimp turn pink, taking care not to overcook the shrimp.
  • Combine shrimp mixture and rice.
  • Pour mixture into a lightly greased 13- x 9-inch baking dish. Sprinkle evenly with 1 cup shredded cheese and 1/4 cup breadcrumbs.

MAKE AHEAD: The recipe can be prepared through Step 4 and placed in the refrigerator overnight. Let stand at room temperature for about 20 minutes before proceeding to the next step. WINE: Spanish white wines with their bright citrus flavors will complement the shrimp and creaminess here and still hold up to the spices. Look for a Spanish wines like the Sierra Cantabria White 2003 or the 2004 Rias Baixas Bodegas Terras Gauda Albarino 'Abadia de San Campo'.

3 cups heavy cream
1/4 cup dry sherry

6 medium scallions, white and tender green parts, minced
2 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
fresh ground pepper
hot sauce or cayenne pepper, to taste
4 cups small oyster crackers
1/4 teaspoon sweet Hungarian paprika or 1/4 teaspoon paprika

Steps:

  • Butter a 3 1/2-quart casserole dish. Arrange shrimp in a single layer. Cover with plastic wrap and refrigerate.
  • In a medium saucepan, combine cream, sherry and shrimp shells with a pinch of salt and bring to a boil. Simmer on low for 25 minutes. Remove from stove and strain through a coarse sieve set over a large glass measuring cup or bowl; should yield about 2 1/2 cups.
  • Preheat the oven to 400°F.
  • Melt 1 tablespoon of butter in a medium skillet. Add scallions and cook over moderate heat, stirring, for about 3 minutes. Add the shrimp cream to the skillet and simmer until reduced (2 cups, about 5 minutes).

1 1/2 lbs shrimp, steamed and cleaned
1 lb fresh asparagus, lightly steamed
1 (14 ounce) can artichoke hearts, drained and quartered
1/4 lb fresh mushrooms, sliced or 1 (4 ounce) can mushrooms, drained
6 tablespoons butter, divided
4 1/2 tablespoons flour
3/4 cup whipping cream
3/4 cup milk
1/4 teaspoon salt

1 tablespoon Worcestershire sauce

Steps:

My mom made this and I thought that she was nuts to mix shrimp & cream cheese. Boy was I wrong! My husband told me that this was one of the best things that I've ever made. For a twist on this recipe, you can add 1 lb crabmeat.

1 stick butter
1-8oz pkg cream cheese
3 Tbsp butter
1 large onion, chopped
1 small bell pepper, chopped
3 ribs celery, chopped
1/2 lb fresh mushrooms, sliced
1-1/2 lb shrimp, peeled & deveined
1 can(s) cream of mushroom soup
1 Tbsp finely chopped garlic
tabasco, to taste
1 tsp white pepper
1 c cooked rice
8 oz sharp cheddar cheese, grated
cracker crumbs

Steps:

  • 1. Melt butter in 2 quart saucepan; add cream cheese and stir until cheese is melted. *I usually whisk the melted cream cheese and butter together once the cream cheese is melted.
  • 2. In heavy Dutch oven, saute onion, bell pepper and celery in 3T butter.
  • 3. Add sliced mushrooms and shrimp and simmer about 5 minutes, stirring constantly.
  • 4. Add the melted cream cheese and butter mixture.
  • 5. Blend in soup, seasonings and rice.
  • 6. Spray a large casserole dish with vegetable spray. Then carefully place mixture in the casserole dish.
  • 7. Toss Cheddar cheese and cracker crumbs together and sprinkle over top. Bake at 350 for 30 min, until bubbly and golden brown.
