1 lb bulk pork sausage
1 (8 ounce) package sliced mushrooms
2 stalks celery, coarsely chopped (about 1 cup)
1 large red pepper, coarsely chopped (about 1 cup)
1 large onion, coarsely chopped (about 1 cup)
1 teaspoon dried thyme leaves, crushed
1/2 teaspoon dried marjoram, crushed
1 (6 ounce) box seasoned long grain and wild rice blend
1 3/4 cups swanson chicken stock
1 (10 3/4 ounce) can Campbell's Cream of Mushroom Soup (Regular or 98% Fat Free)
1 cup shredded cheddar cheese (about 4 ounces)

Steps:

  • Cook the sausage in a 12-inch skillet over medium-high heat until it's well browned, stirring often to separate meat. Pour off any fat.
  • Add the mushrooms, celery, pepper, onion, thyme, marjoram and seasoning packet from the rice blend to the skillet and cook until the vegetables are tender-crisp.
  • Stir the sausage mixture, stock, soup, rice blend and 1/2 cup cheese in a 3-quart shallow baking dish. Cover the baking dish.
  • Bake at 375°F for 1 hour or until the sausage is cooked through and the rice is tender. Stir the sausage mixture before serving. Sprinkle with the remaining cheese.
  • Tip: For an extra-special touch, substitute 1 package (8 ounces) baby portobello mushrooms, sliced, for the sliced mushrooms.

A delicious side dish for just about any kind of meat. Originally from a Junior League of El Paso cookbook. I've been making this for over 20 years and everyone has always enjoyed it! It can be assembled earlier in the day and baked later.

1 (6 ounce) package uncle ben long grain and wild rice blend or 1 cup wild rice, mixture
1 lb bulk sausage
1 lb mushroom, sliced
2 medium onions, diced
3 tablespoons butter or 3 tablespoons margarine
1/4 cup flour
1/2 cup half-and-half
2 1/2 cups chicken broth
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon marjoram
salt
1/8 teaspoon black pepper
1 (1 3/4 ounce) package blanched almonds

Steps:

  • Fry sausage; crumble and drain on paper towels.
  • Remove all but about 1 tablespoon sausage grease; add onions and mushrooms and sauté till onions are wilted.
  • In another pan, melt butter; stir in flour.
  • Stir in cream and chicken broth, stirring until thickened.
  • Add seasonings to simmering sauce.
  • Add the sausage, onions and mushrooms to the sauce.
  • Add wild rice mix with package of seasonings to the sauce mixture. (If using plain wild rice mixture, you may want to adjust the dried spices added to the sauce.) Stir well.
  • Pour into a greased 1 1/2-2-quart casserole dish.
  • Cover and bake for 50 minutes at 350°.
  • Remove cover and sprinkle with almonds.
  • Return to oven for about 10 minutes to toast almonds.

2 pounds bulk Italian sausage
4 celery ribs, thinly sliced
1 large onion, chopped
1 large green pepper, chopped
4-1/2 cups water
3/4 cup dry chicken noodle soup mix
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup uncooked long grain rice
1/4 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • In a large skillet, cook the sausage, celery, onion and green pepper over medium heat until meat is no longer pink and vegetables are tender; drain. In a large saucepan, bring water to a boil; add dry soup mix. Reduce heat; simmer, uncovered, for 5 minutes or until the noodles are tender. Stir in canned soup, rice and sausage mixture; mix well. , Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 40 minutes. Toss bread crumbs and butter; sprinkle over rice mixture. Bake, uncovered, for 10-15 minutes or until rice is tender. Let stand for 10 minutes before serving.

This is my favorite casserole! It features pork sausage, rice, chicken noodle soup mix and various vegetables. I grew up loving this and now I make it for my husband, who loves it as much as me if not more.

1 pound pork sausage, sliced
½ onion, chopped
1 stalk celery, chopped
1 green bell pepper, chopped
½ cup uncooked long grain white rice
1 (4.5 ounce) package chicken noodle soup mix
2 cups hot water
½ cup slivered almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium high heat, combine the sausage, onion, celery and green bell pepper and saute for 5 minutes. Drain any excess fat.
  • Stir the dry rice in with the sausage and vegetables, then add the water and the soup mix. Transfer this mixture to a lightly greased 2 quart casserole dish and top with the almonds.
  • Bake, covered, at 350 degrees F (175 degrees C) for 90 minutes.

1 lb bulk sausage
1 cup onion, chopped
1 garlic clove, minced
1 cup celery, chopped
1 green pepper, chopped
1 cup rice, uncooked and washed
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup

Steps:

  • Preheat oven at 350°.
  • Brown sausage in frying pan and pour off grease.
  • Add chopped onion, garlic, celery, and green pepper to sausage and simmer until tender.
  • In bowl combine rice and soups and then add cooked ingredients.
  • Pour into greased Pyrex pan.
  • Bake 1 1/2 hours at 350°, stirring occasionally.
