¼ cup
1 tablespoon honey
1 teaspoon mustard powder
½ teaspoon celtic sea salt
½ cup olive oil

Steps:

  • Place onion, vinegar, honey, mustard, and salt in a vitamix and puree on high speed for 20 seconds, until smooth
  • Turn on vitamix and drizzle in olive oil
  • Serve over your favorite greens --cooked or raw

1 Tablespoon Minced Red Onion
1 Tablespoon plus 1/4 Teaspoon Red Wine Vinegar
1 Clove of Garlic (grated)
1/4 Teaspoon Grated Fresh Ginger
1/2 Teaspoon Honey
1/4 Teaspoon Dried Oregano
1 Tablespoon 0% Fat Plain Greek Yogurt
1 Teaspoon Minced Fresh Basil
1/2 Cup Light Olive Oil
Salt and Freshly Cracked Black Pepper (to taste)

Steps:

  • Add the minced red onion and red wine vinegar to a small mixing bowl. Let it sit for a few minutes to slightly pickle the red onions.
  • Add the rest of the ingredients except for the olive oil.
  • Whisk the ingredients to incorporate the honey. Keep whisking and stream in the olive oil until a nice creamy and combined consistency.
  • Add salt and pepper, adjust to taste.
  • Store in an airtight container in the fridge. Dressing only lasts for a few days. Let the dressing come to room temperature and whisk to combine before serving.

I got this from a lady at church who served it for lunch. At least four of us mobbed her the minute we tasted it (luckily she'd brought copies). It's almost like a cross between vidalia onion dressing and regular poppy seed dressing. It's sweet, creamy, and tangy all in one! This recipe yields enough to fill a small-ish mason jar. Cook time is chill time.

I love to order salad with red onion when we eat out, but the red onions I buy at the store are never as sweet and mild. That prompted me to come up with this recipe where the onion marinates in the dressing to calm it down a bit. :lol:

1/4 cup olive oil
1 1/2 teaspoons lemon juice
1 teaspoon italian seasoning
1 pinch kosher salt
2 pinches fresh ground pepper
1/2 teaspoon minced garlic
3 tablespoons parmesan cheese
1/4 red onion, sliced thinly (optional)

Steps:

  • MAKE AHEAD: Mix all ingredients except onion in a jar and shake, then add onion, stir and store in fridge.
  • OPTIONAL: If you prefer, you can saute the onion slightly before mixing up the salad dressing.
  • WHEN NEEDED: Either take out of fridge an hour ahead or place in microwave for 10 seconds to loosen up.
  • TO SERVE: Stir dressing, then with a slotted spoon, scoop out some of the onion and place on the salad. Seems like that carries along with it enough dressing for tossing the salad. Amount of onions scooped will depend on the size of the salad.
  • LATER: If all the onion gets used up before the dressing is gone, just add more onion and cheese.

Posted this recipe as a request on the message board. I found the recipe in the "Blueberries and Polar Bears" cookbook. The recipe suggests serving this with "beef or Jalaneo Goose, or on top of a beef sandwich the next day!" I guessed on the serving size, because it wasn't given.

6 Spanish onions (whatever kind you have on hand)
1/2 cup vinegar
1/2 cup water
3/4 cup sugar
2 teaspoons salt
1 1/4 cups mayonnaise or 1 1/4 cups similar salad dressing
2 tablespoons celery seeds

Steps:

  • Slice the onions very thin and place them in a plastic or glass dish.
  • Combine the vinegar, water, sugar, and salt.
  • Mix well to dissolve the sugar and salt.
  • Pour over the sliced onions and mix well.
  • Put a plate on top of the onions and set a weight on it.
  • A plastic bottle of oil and vinegar works well.
  • Let the onions sit on the counter all day- overnight is best.
  • Drain the onions (You will wonder where all the liquid came from!).
  • Combine the dressing and celery seed and toss with onions.
  • Put in a serving bowl and serve.
