1 (9 ounce) package refrigerated cheese tortellini
¼ cup ranch dressing
1 tablespoon milk
8 ounces cubed, cooked chicken
2 ½ ounces fresh mozzarella, diced
⅓ cup chopped cooked bacon
2 tablespoons chopped green onions
1 tablespoon chopped fresh flat-leaf parsley
salt and freshly ground black pepper to taste (optional)

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes. Run tortellini under cold water and drain. Store in the refrigerator until chilled, at least 30 minutes.
  • Stir ranch dressing and milk together in a large bowl. Add chilled pasta, cooked chicken, mozzarella, bacon, green onions, and parsley.
  • Toss to combine. Season with salt and pepper if desired.

2 boneless, skinless chicken thighs (about 8 ounces)
One 1-ounce package ranch-dressing seasoning mix
1 pound penne pasta
4 ounces cream cheese, at room temperature
2 tablespoons sour cream, at room temperature
1/4 cup sharp yellow Cheddar, shredded

Steps:

  • Pat the chicken thighs dry with a paper towel and sprinkle all over with 1 tablespoon of the seasoning mix.
  • Add the penne to the 6-quart Instant Pot® and add 4 cups water to the pot. Place the chicken thighs on top of the penne. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 8 minutes (see Cook's Note). After the pressure-cook cycle is complete, follow the manufacturer's guide for quick- release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid. Transfer the chicken to a cutting board until cool enough to handle.

  • Heat oven to 350. Spray a 13x9 inch glass dish.

1 cup fresh breadcrumb (do NOT use seasoned dry breadcrumbs)
1/2 cup grated parmesan cheese

2 eggs, lightly beaten

  • Preheat oven to 350.
  • MEATBALLS:.
  • Combine all ingredients, except vegetable oil, in large bowl as listed. Mix well to ensure all ingredients are combined. (I use my hands, clean of course!) Using a small ice cream scoop or a tablespoon, scoop up mixture and form into balls. When all meatballs are all formed - Heat 3 tablespoons of vegetable oil in 12" skillet over medium hi heat. Add as many meatballs to skillet without crowding and fry till all sides are golden brown. (You may need to add more vegetable oil with each batch you fry) Set on rack placed over cookie sheet and continue to fry meatballs until all are done. Place meatballs in oven to finish cooking while you make the sauce.
  • GRAVY:.
  • In large measuring cup or bowl, whisk together Hidden Valley Ranch Dressing, milk and sour cream. Set aside.
  • In large saucepan over medium heat, melt butter. Whisk in flour, mixture will be crumbly and a little dry.
  • Gradually add dressing mixture to pan, whisking constantly. Mixture will begin to thicken almost immediately. Continue to whisk, adding in pepper, salt,nutmeg, scallions and parmesan cheese. Turn heat to lowest setting and cover.
  • Remove meatballs from oven and place on large platter or dish. Spoon gravy over top, sprinkle chopped scallions over top, and serve extra gravy on the side.

Steps:

  • Mix together dip ingredients in a small bowl. Refrigerate until ready to serve.
  • Preheat oven to 350 degrees.
  • In a pie plate or shallow bowl combine olive oil and garlic.
  • In a separate pie plate or shallow bowl combine Panko, Parmesan cheese, basil, smoked paprika and pepper.

2 teaspoons poultry seasoning, 2/3 palmful
2 lemons
Salt and black pepper
Vegetable oil, for frying and for drizzling
2 cups buttermilk
1 teaspoon paprika, 1/3 palmful
All-purpose flour, for dredging
16 to 18 scallions, trimmed of roots
4 sandwich-size English muffins, split
Creamy Ranch dressing, for slathering toasted muffins
1 beefsteak tomato, cut into 8 slices

Steps:

  • Cook the bacon in a large nonstick skillet over medium-high heat until it is crisp.
  • While the bacon cooks, in a large bowl combine the ground chicken, garlic, onion, parsley, dill havarti chunks, poultry seasoning, the zest and juice of 1/2 lemon, salt, and pepper. Divide the mixture into 4 equal mounds, then form the meat into large, thin patties, about 1 inch thick. Drizzle them with vegetable oil to coat.
  • Remove the crispy bacon from the skillet to a paper-towel-lined plate and reserve. Wipe the excess grease from the skillet and return it to the cooktop over medium-high heat, add the burgers to the skillet, and cook them for 5 to 6 minutes on each side, or until they are cooked through.
  • While the burgers are cooking, put together the scallion "sticks." Heat 1 1/2 inches of the vegetable oil in a deep-sided skillet over medium heat. In a wide mixing bowl, combine the buttermilk, paprika, and the zest of the remaining 1 1/2 lemons. Place the flour in a second wide mixing bowl. Before you go at it, take one of the scallions and hold it up next to the skillet containing the heating oil. If needed, trim off some of the green tops to allow it to fit in the skillet easily.
  • Line a plate with a few paper towels and set it near the stovetop. Add a 1-inch cube of bread to the hot oil. If it turns deep golden brown in color after a count of 40, the oil is ready. If the bread cube browns too quickly, turn down the heat and wait a few minutes for it to cool.
  • Working in 2 to 3 batches, dip some of the scallions in the buttermilk, then into the flour, coating thoroughly. Put them back into the buttermilk and then into the flour again. Fry the coated scallions into the hot oil for about 1 minute on each side, or until golden brown. Transfer to the paper-towel-lined plate and immediately season them with a little salt. Repeat the process until all the scallion "sticks" are fried up.
  • Toast the English muffins and slather both sides with the Ranch dressing. Arrange the cooked Ranch burgers on the English muffin bottoms, top each burger with 2 slices of the crispy bacon and 2 slices of tomato, and finish them with the English muffin tops. Serve them alongside the crispy scallion "sticks."

20 ounces potatoes, peeled and cubed
dry ranch dressing mix, 1/2 package
1 lb boneless skinless chicken breast, cubed
1 (10 ounce) can 98% fat-free cream of chicken soup
1/4 cup nonfat sour cream
1/4 cup onion, finely chopped
salt and pepper

Steps:

  • Spray crockpot with non-stick cooking spray.
  • Mix potatoes, ranch dressing mix, chicken, cream of chicken soup, sour cream, onion, and salt and pepper together.
  • Place mixture in crockpot.
  • Cook on low for 6 to 8 hours or high for 4 to 5 hours.

3-4 Boneless Skinless Chicken Breasts
6-8 medium potatoes, chopped into large pieces
2 cups baby carrots
1 can cream of chicken soup
1 package dry ranch dressing mix
1/4 cup milk
parsley to sprinkle on top (optional)

Steps:

  • Spray your slow cooker with non stick cooking spray. Layer the potatoes and baby carrots on the bottom of the slow cooker. Lay chicken breasts on the top. In a medium bowl, mix together the soup and dry ranch packet and milk. Pour on the top of the chicken breasts. Cook on low for 4-5 hours. Use extra sauce as a gravy over the top of the potatoes and chicken breasts and sprinkle with parsley if desired.

1 green pepper, chopped
1 onion, chopped
2 cups chopped cooked chicken
1 can (10-1/2 oz.) condensed cream of chicken soup
1 can (10 oz.) diced tomatoes with green chiles, undrained
1 cup KRAFT Classic Ranch Dressing
1 tsp. chili powder
1-1/2 cups KRAFT Shredded Cheddar Cheese
12 corn tortillas (6 inch), cut into strips
1 cup tortilla chips (1 oz.), coarsely crushed
2 Tbsp. chopped fresh cilantro

Steps:

  • Heat oven to 350°F.
  • Heat oil in large skillet on medium-high heat. Add vegetables; cook 5 min. or until crisp-tender, stirring frequently. Remove from heat.
  • Stir in chicken, soup, tomatoes, dressing and chili powder.
  • Spread 1/3 of the tortilla strips onto bottom of 13x9-inch baking dish sprayed with cooking spray; cover with layers of 1/3 each of the chicken mixture and cheese. Repeat layers twice.
  • Bake 30 min. or until heated through. Top with crushed chips and cilantro.

6 slices bacon
4 boneless skinless chicken breasts, cut in bit size pieces
2 tablespoons all-purpose flour
1 (2 ounce) packet dry ranch dressing mix
1 1/4 cups milk
3 cups dried medium noodles
1 tablespoon finely shredded parmesan cheese

Steps:

  • Cut bacon into narrow strips. In a large skillet, cook bacon over medium heat until crisp.
  • Drain bacon on paper towels; discard all but 2 tablespoons of drippings.
  • In the same skillet, cook chicken in reserved drippings until no longer pink, turning to brown evenly.
  • Sprinkle flour and salad dressing mixture over chicken; stir well.
  • Stir in milk. Cook & stir until thickened and bubbly. Cook and stir 1 minute more. Stir in bacon.
  • Meanwhile, cook noodles according to package directions.
  • Serve chicken mixture with noodles; sprinkle with Parmesan cheese.

2 (12.5 fl oz) cans chicken chunks, drained
1 ½ cups panko bread crumbs
1 (4 ounce) packet saltine crackers, finely crushed
1 cup sour cream
2 eggs
½ (1 ounce) package ranch dressing mix, or to taste
1 tablespoon Dijon mustard
1 tablespoon dried onion granules
1 teaspoon ground black pepper
1 tablespoon dried parsley
1 tablespoon cooking oil, or as needed
1 (11 ounce) can condensed Cheddar cheese soup
1 cup chicken broth
1 cup sour cream
5 green onions, thinly sliced

Steps:

  • Mix chicken, panko, saltines, sour cream, eggs, ranch dressing mix, mustard, onion, black pepper, and parsley together in a bowl until well combined. Shape chicken mixture into 8 patties, approximately 3/4-inch thick.
  • Pour panko onto a plate, coat patties, and place on a platter. Chill for 1 hour or overnight.
