4 skinless, boneless chicken thighs
salt and ground black pepper to taste
10 ounces water
1 (10 ounce) can diced tomatoes with green chile peppers
1 poblano pepper, sliced
½ onion, diced
8 ounces cream cheese, softened

Steps:

  • Season chicken thighs liberally with salt and black pepper.
  • Combine water, tomatoes, poblano pepper, and onion in a multi-functional pressure cooker (such as Instant Pot®). Add chicken. Close and lock the lid. Choose Meat setting and set the timer for 17 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 5 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Remove chicken from the pot and shred. Add cream cheese to the soup in the pot and stir until mixed well. Return shredded chicken to the pot and mix well.

3 tablespoons butter or 3 tablespoons margarine
1 large sweet onion, chopped
2 poblano chiles, seeded and diced
3 -4 cloves garlic, minced
4 -5 boneless skinless chicken breast halves, fat discarded,washed,dried,and cut into bite size pieces
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 (10 3/4 ounce) can cream of chicken and mushroom soup, undiluted
1 cup sour cream
8 ounces shredded sharp cheddar cheese (about 2 cups)
1 1/2 cups cornmeal
1/2 cup flour
2 1/2 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
1 large egg
1 1/2 cups milk
1/4 cup melted butter or 1/4 cup margarine
1 1/2 cups frozen white shoepeg corn, thawed or 1 1/2 cups other frozen corn kernels

Steps:

  • Prepare biscuits, and bake while fixing chicken.
  • Melt butter in a Dutch oven or large heavy saucepan.
  • Add onion, poblanos, and garlic, and saute for 5 minutes.
  • Add chicken, salt, and pepper, and cook, stirring often, for 8-10 minutes or until chicken is done.
  • Stir in soup and sour cream.
  • Add cheese, and cook over low heat, stirring occasionally, for an additional 7-8 minutes or until cheese is melted.
  • Serve over Cornbread Biscuits.
  • Cornbread Biscuits: Stir together the first 5 ingredients in a large bowl.
  • In a small bowl, stir together egg, milk, melted butter, and corn.
  • When combined, add to dry mixture, and stir just until dry ingredients are moistened.
  • Pour into a well greased 10" pie plate or 9x9" square pan.
  • Score into wedges or squares, and bake in a preheated 375 degree F oven for 15-20 minutes or until done and golden brown.

Cook, stirring often, 8-10 minutes, or until chicken is cooked through. Stir in soup and sour cream until smooth. Stir in cheese, cook & stir until melted and smooth. Serve over Cornbread Waffles.
  • To prepare waffles, Combine cornmeal, flour, baking powder, salt, and sugar in a large mixing bowl. Stir in egg, milk, and melted butter, stirring just until just moistened. Batter will be somewhat lumpy.
  • Bake batter in a lightly buttered, preheated waffle iron until golden brown & crispy.

I have never been able to do the cold-pizza-for-breakfast thing, but there are some foods I just love eating cold the day after-fried or barbecued chicken, for instance. Happily, my local grocery store does rotisserie chicken, either plain or barbecue, and on weeknights when homework is taking forever, I am grateful for this easy main course salad that the kids will actually dig into. For my husband and me, it's all about the creamy, spicy poblano dressing. But for the kids it's strictly ranch-no cilantro, please! For a more substantial meal, serve this with corn bread or, better yet, jalapeño corn bread (add chopped pickled jalapeños to your favorite recipe).

Number Of Ingredients 13

1 1/2 to 2 cups diced barbecued chicken meat, from leftovers or a store-bought roasted chicken
1 ripe avocado, diced
1/2 cup frozen corn kernels, thawed, or 2 ears corn, grilled in the husk (see below), then shucked and cut from the cob
1/4 cup thinly sliced celery or celery hearts
3 scallions, thinly sliced
1 head Bibb lettuce, broken into leaves, washed, and dried
Creamy Poblano Dressing (or quick ranch dressing)
1 poblano, roasted and peeled (see below)
2 tablespoons fresh lime juice
2 tablespoons chopped scallion greens
1 garlic clove
1 cup Mayonnaise (p. 181)
2 tablespoons sour cream or buttermilk

Steps:

  • Toss all the ingredients except dressing in a salad bowl, then toss in the dressing or serve it on the side.
  • Place all the ingredients in a blender and puree until smooth. Adjust seasonings as necessary.
  • Feel free to also add red peppers, tomatoes, and cotija (an aged Mexican cheese) or any crumbly white cheese to the salad. This salad is also delicious with corn bread croutons. Day-old corn bread actually works best, because it will be drier. If you use fresh, you can dry it out in a 350°F oven for a few minutes.) Cut the corn bread into cubes, toss them with a little melted butter, and toast in a 350°F oven until golden brown and crisp. Let them cool, and toss with the salad.
  • Grilled corn has a sweet, smoky flavor that's great on its own (eaten off the cob with butter and a squirt of lime) and in salads. You'll want to grill the corn in its husk, because this preserves moisture and imparts a distinctive sweet and "corny" flavor. Simply soak the ears in cold water for about 20 minutes. Place them directly on a medium-low grill or over pale gray coals, and cover. Grill for about 20 minutes, turning the cobs every 5 minutes to ensure even cooking. As with any cooked corn, you'll know it's done when the kernels are tender and release a milky liquid when pierced. Peel away the husk and silk and serve as you wish.
  • To roast fresh poblanos or other peppers or chiles, place them directly on the grill over a low flame on a gas range, or on a baking sheet under a broiler, and char until evenly blackened, turning as necessary. Transfer peppers to a bowl and cover with a hand towel for about 5 minutes to steam the peppers (this will make their skins easier to remove). Alternatively, you can steam the peppers in a sealed plastic bag. Use your paring knife and/or your fingers to remove the stem, seeds, and skin from the peppers and use the smoky flesh as directed in the recipe.

2 large poblano peppers, halved and seeded
12 ounces evaporated milk
1/2 teaspoon garlic, minced
1 teaspoon chicken bouillon powder
1 tablespoon butter
2 teaspoons all-purpose flour

Steps:

  • Broil pablanos 10-15 minutes until blackened.
  • Allow pablano to cool while cooking chicken, 3-6 minutes per side until fully cooked.
  • Blend evaporated milk, poblanos, garlic and bouillon in a blender.
  • Melt butter in a saucepan over medium heat. Stir in flour, stirring constantly until smooth.
  • Slowly stir in the poblano mixture. Cook over medium heat, stirring constantly, until it comes to a boil and thickens.

6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
2/3 cup fat-free reduced-sodium chicken broth
2 poblano chiles, roasted, peeled, seeded and deveined
2 cups shredded cooked chicken
3 Tbsp. chopped fresh cilantro

Steps:

  • Cook Macaroni as directed on package.
  • Meanwhile, blend Neufchatel, chicken broth and chiles in blender until smooth; pour into saucepan. Cook on medium-low heat 5 min. or until heated through, stirring frequently. Remove from heat.

2 Tbsp extra virgin olive oil
2 medium poblano peppers, chopped
1 large onion chopped
4 clove garlic, minced or chopped
1 lb cream cheese, softened room temperature
1 3/4 c sharp cheddar cheese, divided-shredded
6 large poblano peppers, split & top removed
3 c cooked chicken shredded or chopped
8 oz jar roasted red peppers, chopped
1 can(s) rotel diced tomatoes
1 tsp kosher salt, optional or to taste
2 tsp coarse black pepper
2 tsp granulated garlic

Steps:

  • 1. These are some of the main ingredients for the stuffed poblano peppers. I had to use an additional cream cheese. Pre heat oven to 375 degrees F. I chopped these two peppers to go into the filling for flavor.
  • 2. Add olive oil to a medium skillet and add chopped peppers onions and garlic, I USED A FOOD PROCESSOR. and heat over medium high heat until mixture is transparent about 5-7 minutes, then add to a large bowl and allow to cool somewhat.
  • 3. Once cooled add in the softened cream cheese, and chopped roasted red peppers, to a large bowl, stir to mix together.
  • 4. Cook chicken till tender by adding to a large pot of water, adding spices of your choice and cook till tender, once fully cooked, remove from heat, allow to cool, remove skin and bones.
  • 5. Then chop or shred chicken according to your personal preference. NOTE, I AM SURE YOU CAN USE COOKED GROUND BEEF AS WELL IN THIS DISH.
  • 6. Add 1 cup of shredded cheese to cooked pepper mixture, then add in shredded chicken, and stir to mix together.
  • 7. Add in spices, then taste and adjust seasoning according to your personal preference. Remove top from peppers, then slit down the middle leaving an opening for peppers to be filled with chicken & cheese filling. Fill each pepper, then place in a greased casserole dish large enough to accomodate all the stuffed peppers.
  • 8. Now add in the can of un drained diced tomatoes, spreading evenly in casserole dish. Cover dish tightly with a lid or foil, then place in oven and bake in preheated 375 degree F oven for 50 minutes, then remove foil from dish, and top each pepper with remaining shredded cheese. Return to oven until cheese melts. About 10 minutes.
  • 9. Remove from oven allow to cool at least 10 minutes then serve as desired. Note additional peppers can be used to stuff for more servings. My peppers were overly stuffed.

1 c onions, chopped
1 1/2 c poblano peppers, finely chopped (about 2 peppers)
2 clove garlic, minced
1/4 c vegetable oil
6 corn tortillas, cut into 1 inch pieces
1/4 c flour
1 tsp chili powder
2 tsp ground cumin
4 Tbsp butter
6 c chicken broth
1 1/2 c half and half
1 can(s) white hominy, undrained (30 ounces)
OPTIONAL TOPPINGS
1 avocado, diced
1/2 c grape tomatoes, halved
1 c mexican-blend cheese, shredded

Steps:

  • 1. Put tortillas, chili powder, cumin, and salt in food processor. Process until the consistency of cornmeal.
  • 2. Heat vegetable oil in a large stockpot. Saute onions, peppers, and garlic until onions are transparent. Add butter and let it melt.
  • 3. Add processed tortillas and cook 4-5 min, stirring constantly.
  • 4. Slowly add chicken broth and blend tortilla mixture until smooth.
  • 5. Add half and half, chicken, and hominy. Simmer 10 minutes. Do not allow to boil.
  • 6. Serve over crushed tortilla chips. Top with desired toppings.

Steps:

  • Blend broth, chiles and cream cheese in blender until smooth; set aside. Cook spaghetti in large pot as directed on package.
  • Meanwhile, cook chicken, onions and garlic salt in large nonstick skillet on medium-high heat 5 to 7 min. or until chicken is lightly browned, stirring frequently.
