This Pizza Soup is like an ultra-cheesy supreme pizza in a bowl! A delicious and hearty way to enjoy all those pizza flavors without the crust.

Number Of Ingredients 16

1 (16 oz) package Italian sausage (mild, medium, or hot)
1 green bell pepper (diced)
1/2 large yellow onion (diced)
1 (8 oz) container mushrooms (diced)
2 teaspoons Italian seasoning
2 teaspoons garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt (plus more to taste (I used 1 teaspoon))
1/2 teaspoon pepper
4 cups chicken broth
1 (14.5 oz) can diced tomatoes
1 (14 oz) jar pizza sauce
1 (6 oz) package pepperonis (quartered)
1/2 cup finely grated parmesan
Shredded cheese (for serving (I used a pizza cheese blend: mozzarella, provolone, parmesan, asiago, fontina, and romano))

Steps:

  • Heat a large stockpot over medium heat.
  • Once hot, add in Italian sausage, bell pepper, onion, mushrooms, Italian seasoning, garlic powder, dried oregano, dried basil, salt, and pepper.
  • Cook, breaking up the meat as you go, until the sausage is no longer pink.
  • Stir in the chicken broth, scraping up any brown bits, then stir in the diced tomatoes, pizza sauce, pepperoni, and parmesan.
  • Bring to a simmer, stirring occasionally to prevent the cheese from sticking to the bottom.
  • Cover, reduce heat to low, and simmer for 15 minutes.
  • Taste and re-season, if necessary.
  • Ladle into bowls, then top each bowl of soup with a generous amount of shredded cheese and enjoy!

Take one bite of this pizza soup, and it tastes just like your favorite pie in bowl form! Serve with crusty bread for an outrageously delicious meal.

1 red onion
4 cloves garlic
1 green bell pepper
1 red bell pepper
2 medium portobello mushroom caps
2 tablespoons olive oil
1/2 teaspoon kosher salt
1 tablespoon dried oregano
1 teaspoon fennel seeds
15 ounce jar pizza sauce (or Easy Pizza Sauce)
28-ounce can fire-roasted crushed tomatoes
1 quart (4 cups) vegetable broth
1/2 cup Parmesan cheese, plus more for the garnish
Fresh basil, for the garnish (optional)
1/2 recipe Homemade Croutons, crusty bread, garlic bread or garlic toast, for serving (optional)

Steps:

  • Dice the onion. Mince the garlic. Dice the bell peppers. Destem and chop the mushroom caps into bite-sized pieces.
  • In a large pot or Dutch oven, heat the olive oil over medium high heat. Add the onion, mushrooms, and peppers and sauté for 4 minutes, until translucent. Add 1/2 teaspoon kosher salt, the garlic, oregano, fennel, and red pepper flakes and cook 2 to 3 minutes until fragrant and the veggies have softened.
  • Add the pizza sauce, canned tomatoes and their liquid, and vegetable broth. Bring to a boil, then reduce heat and simmer 10 minutes. Stir in the cheese and simmer 5 more minutes until it is melted. Taste and add additional kosher salt if necessary.
  • Serve warm topped with homemade croutons, additional Parmesan cheese, and fresh basil leaves (or simply serve with crusty bread or a gluten free bread substitute).

1 pound ground beef
2 cans (26 ounces each) condensed tomato soup, undiluted
6-1/2 cups water
3-1/2 cups spaghetti sauce
1 tablespoon Italian seasoning
2 cups shredded cheddar cheese
Additional shredded cheddar cheese, optional

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add the soup, water, spaghetti sauce and Italian seasoning; bring to a boil. , Reduce heat; simmer, uncovered, for 15 minutes. Add cheese; cook and stir until melted. Garnish with additional cheese if desired.

1 (1 7/8 ounce) package cream leek soup mix (dry mix, i am not sure about the size here!)
1 quart water
1/4 teaspoon italian seasoning
1/4 teaspoon dried onion
1/4 green pepper, chopped (add just before serving)
1 (4 ounce) can sliced mushrooms
1 (4 ounce) can sliced black olives
1 ounce green olives
1/2 cup shredded mozzarella cheese
1/2 cup shredded colby-monterey jack cheese
1/4 cup shredded sharp cheddar cheese
2 ounces pepperoni (slightly microwaved)
1 1/4 ounces Canadian bacon (slightly sauteed)
1/4 lb Italian sausage (slightly sauteed)

Steps:

  • Microwave pepperoni.
  • Sauté Canadian bacon and sausage.
  • Combine all ingredients in a large pot and heat through.
