Sour Cream Pesto Dip with Prosciutto Dippers image

30 g basil leaves
10 g pine nuts
20 g Parmesan (freshly grated)
1 clove garlic (cut in half)
40 ml olive oil (extra virgin)
100 g sour cream
pinch salt and pepper (to season)
230 g puff pastry (pre-rolled rectangle)
1 tbsp (heaped) Dijon mustard
1 tbsp (heaped) Parmesan (freshly grated)
100 g Prosciutto Crudo (good quality)
1 egg (beaten)
pinch pepper (to season)

Steps:

  • Preheat the oven to 180°C. Place the pre-rolled rectangle of puff pastry on a lined baking tray and brush with the mustard. Sprinkle over the Parmesan then make a layer of prosciutto so the pastry is mostly covered. Press down slightly so everything sticks together a little easier
  • . Cut the pastry into 14 strips across the way then double them up making sure the Prosciutto sides are facing each other. You should now have 7 long prosciutto pastry sandwiches. Each dipper can be cut in half at this point if you want to serve more smaller portions.
  • Twist each dipper into curly straws and place back onto the baking sheet. Brush each dipper with egg then bake for 10-15 minutes until golden and crispy.
  • Meanwhile make the pesto. Place the basil, parmesan, garlic, pine nuts and olive oil in a bowl and blitz together with an immersion (handheld) blender until completely smooth. Season with salt and pepper and add the sour cream, stir then transfer to serving bowl.
  • Once the dippers are golden and crispy, remove from oven and let cool slightly before serving with the sour cream pesto dip.

Spinach-Ricotta Pesto Pasta with Crisp Prosciutto and Asparagus image

1 pound orecchiette or penne pasta
1 tablespoon olive oil
3 ounces prosciutto, cut into 2-inch strips
12 ounces asparagus, trimmed and sliced thinly on bias (about 2 cups)
3/4 cup Spinach-Ricotta Dip, recipe follows
1 tablespoon olive oil
2 tablespoons pine nuts
1/2 medium yellow onion, finely chopped
3 medium garlic cloves, thinly sliced
1 (10-ounce) package frozen spinach, thawed
1/2 cup fresh ricotta
1/2 teaspoon kosher salt

Steps:

  • Bring a large pot of heavily salted water to a boil over high heat. When it boils, add pasta and cook as indicated on box.
  • Meanwhile, heat oil in a large frying pan over medium heat. When it shimmers, add prosciutto and cook, stirring occasionally, until prosciutto is crisp, about 5 minutes. Add asparagus and toss to coat evenly. Let cook until asparagus just starts to get browned on the edges, about 3 minutes.
  • Remove 1/2 cup of the pasta cooking water. Add a few tablespoons of the water to the asparagus mixture, stir, scraping the bottom of the pan to incorporate browned bits, and remove from heat. Drain pasta and return to pot (off heat), add remaining reserved pasta cooking water, asparagus, Spinach-Ricotta Dip, and stir until thoroughly coated. Taste and adjust seasoning, as desired. Serve immediately.
  • In a large frying pan, heat oil over medium heat. When oil shimmers, add pine nuts and cook until they make a popping noise and start to brown, about 1 minute. Stir in garlic and onion and season well with salt and freshly ground black pepper. Cook, stirring occasionally, until onion is golden brown, about 3 minutes. Transfer onion mixture to a food processor fitted with a blade, add in remaining ingredients, and process until smooth. Taste and adjust seasoning, as necessary.

1 cup white wine or chicken broth
1 loaf (1 pound) French bread, cut into 1/2-inch slice

  • In a shallow bowl, combine milk and wine. Dip both sides of bread in milk mixture; squeeze gently to remove excess liquid.
