CREAMY ORANGE CAKE

1 cup boiling water
1 box (4-serving size) Jell-O™ orange-flavored gelatin
1 box Betty Crocker™ Super Moist™ white cake mix
3/4 cup frozen (thawed) orange juice concentrate
1/3 cup vegetable oil
1/4 cup water
4 egg whites
1 container Betty Crocker™ Whipped vanilla frosting
1 container (8 oz) Cool Whip frozen whipped topping, thawed
Orange peel strips, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour. In small bowl, mix boiling water and gelatin until gelatin is completely dissolved. Cool slightly, about 5 minutes.
  • In large bowl, beat cake mix, 1/4 cup of the gelatin mixture, 1/4 cup of the orange juice concentrate, the oil, water and egg whites with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan. Reserve remaining gelatin mixture and orange juice concentrate.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Poke warm cake every inch with fork. Place 1 tablespoon of the reserved gelatin mixture in small microwavable bowl; set aside. Into remaining gelatin mixture, stir remaining 1/2 cup orange juice concentrate; pour slowly over cake. Cool cake completely, about 1 hour.
  • In medium bowl, gently stir together frosting and whipped topping; frost cake. Microwave 1 tablespoon gelatin mixture uncovered on High 10 seconds to liquefy. Using 1/4 teaspoon measuring spoon, place small drops of gelatin mixture over frosting. With spoon or toothpick, swirl gelatin into frosting. Garnish each cake piece with orange peel strips. Store covered in refrigerator.

I love to make this light orange cake in the spring and summertime. I discovered this great recipe in a cookbook called "My Mother's Southern Desserts". There are tons more wonderful recipes in it! Frost with Recipe #26165.

8 large eggs, separated
1 1/3 cups granulated sugar
1 teaspoon grated orange rind
1/2 cup fresh orange juice
1 cup cake flour
1 teaspoon cream of tartar
1/2 teaspoon salt
creamy orange frosting (Creamy Orange Frosting)

Steps:

  • Preheat the oven to 325°F.
  • In a large mixing bowl, beat the egg yolks with an electric mixer until frothy, then gradually add 2/3 cup of the granulated sugar, beating until thick.
  • In a small bowl, combine the orange rind and juice and add to the yolk mixture alternately with the flour, beating until well blended.
  • Wash and dry the beaters.
  • In another large mixing bowl, combine the egg whites, cream of tartar and salt.
  • Beat until soft peaks form, then gradually add the remaining 2/3 cups granulated sugar and beat until stiff peaks form.
  • Gently fold the egg whites into the yolk mixture, scrape the batter into an ungreased 10-inch tube pan and bake until a cake tester inserted in the center comes out clean (about 1 hour and 10 minutes).
  • Let the cake cool in the pan for 10 minutes, then invert on wire rack to cool completely.
  • Frost the top and sides of the cake with Creamy Orange Frosting and let the cake stand for at least 1 hour before serving.

Many carrot cakes call for as much as a cup of oil, 4 eggs, 2 cups of sugar. But all that oil isn't necessary for this moist, delicious cake. I love this low fat cake. Use Whole Wheat PASTRY flour found in health food stores. You can use whole wheat flour but the cake will be denser. I also sifted my all purpose flour.

2 -3 large carrots
1 large navel orange
1 tablespoon raisins
1 cup whole wheat flour
1 cup unbleached all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon freshly grated nutmeg
1/2 teaspoon salt
2 eggs, lightly beaten
1/3 cup buttermilk
1/2 cup pure maple syrup
1/2 cup packed brown sugar
1/3 cup canola oil
4 tablespoons fat-free cream cheese, softened
1 teaspoon orange juice
1/2-2/3 cup powdered sugar

Steps:

  • Preheat oven to 350°F (175 C).
  • Lightly butter a 13 x 9-inch baking pan.
  • Wash and trim carrots and cut into large pieces.
  • Place in a food processor and process until finely chopped, or grate carrots finely, to make 2 cups.
  • I grated my carrots.
  • Set aside.
  • Cut orange into 8 wedges.
  • Do not peel.
  • Remove white center and seeds.
  • Cut wedges into 3 or 4 pieces each and puree in a food processor or blender along with the raisins.
  • Combine flours, cinnamon, baking powder, baking soda, nutmeg and salt in a large bowl.
  • In another bowl, combine eggs, buttermilk, maple syrup, brown sugar, oil, carrots and orange.
  • Stir carrot mixture into dry ingredients until combined.
  • Spread batter evenly in pan and bake 25 to 30 minutes, until a cake tester or wooden pick inserted in the center comes out clean.
  • Cool cake in pan.
  • Prepare icing by working cream cheese and orange juice together with the back of a spoon until combined.
  • Stir in enough powdered sugar to obtain a spreadable consistency.
  • When cake is cool, spread top with icing.

This is my version of an easy moist orange cake, I have my piece of cake with a tall cold glass of milk. 8)

1 box duncan hines orange supreme cake mix
1 c sour cream (8oz.)
1 pkg small vanilla istant pudding mix
4 eggs
1/3 c canola or vegetable oil
1/4 c water
1/4 c buttermilk
2 Tbsp white sryup
2 tsp orange extract
BUTTERCREAM FROSTING
1 1/2 c butter, softened
4 1/2 c confectioners sugar
2 Tbsp orange juice
1 Tbsp orange zest

Steps:

  • 1. Preheat your oven to 350. Grease and flour well, two 8 inch cake pans, set aside. In the bowl of your standing mixer, combine the first nine ingredients; beat on low speed for 30 seconds. Then beat on medium for 2 minutes.
  • 2. Pour into your two greased and floured pans evenly. Bake at 350 for about 40 minute or until cake springs back in center when lightly pressed. Remove from oven and cool 10 minutes before removing to wire racks to cool completely.
  • 3. Frosting-Combine butter and sugar, creaming until well blended. Add orange juice and beat until smooth. Stir in orange zest. Spread on cooled cake immediately.

MANDARIN ORANGE CAKE & CREAMY TOPPING

CREAMY TOPPING
1 package(s) 8 oz cream cheese (softened)

Steps:

  • Combine cake mix, eggs and juice off of the mandarin oranges and mix for 2 minutes.
  • Then add oranges and mix until well blended. Pour into cake pan and bake at 350 degrees for 35-40 minutes.
  • Mix together all of the creamy topping. Once the cake as cooled you can frost the top of the cake OR you can serve this on top of each individual slice of cake.

1-1/3 cups BREAKSTONE'S or KNUDSEN Sour Cream, divided
3/4 cup water
1/4 cup oil
3 eggs
2 Tbsp. orange zest
1/4 cup powdered sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 can (11 oz.) mandarin oranges, drained

Steps:

  • Heat oven to 350°F.
  • Beat cake mix, dry pudding mix, 1 cup sour cream, water, oil, eggs and orange zest with mixer until blended. Pour into 2 greased and floured 9-inch round pans.
  • Bake 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool cakes in pans 10 min. Invert onto wire racks; gently remove pans. Cool cakes completely.

1-1/2 tubs (8 oz. each) COOL WHIP Whipped Topping, thawed, divided
grated peel and juice from 1 navel orange, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
2 Tbsp. powdered sugar

Steps:

  • Prepare cake batter and bake as directed on package for two 9-inch round cake pans, substituting 1-1/2 cups of the whipped topping for the oil and stirring orange zest into the batter before pouring into prepared pans. Cool cake layers in pans 10 min.; invert onto wire racks. Carefully remove pans; cool cakes completely.
  • Beat cream cheese, orange juice and powdered sugar in small bowl with electric mixer until well blended. Stir in remaining whipped topping.

1 (3 ounce) package orange flavored Jell-O® mix
1 cup boiling water
1 (3.4 ounce) package instant vanilla pudding mix
1 cup milk
1 teaspoon vanilla extract
1 teaspoon orange extract
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Prepare and bake cake mix according to package directions for a 9x13 inch pan. Poke holes in cake while still hot with the round handle of a wooden spoon.
  • In a medium bowl, make gelatin with only 1 cup of boiling water. Pour liquid gelatin over cake while hot. Cool cake completely.
