CREAMY GORGONZOLA PENNE
This is one of my all-time favorite recipes for penne pasta with Gorgonzola. It is a bit heavy, but so delish and quick, too! My whole family enjoys this one, even my 3-year-old! You can use fresh spinach if you like, just let it wilt in the sauce. I use frozen spinach for speed. You can also use two 10-ounce packages of spinach if you'd like. Enjoy! Serve with additional Parmesan cheese.

Steps:
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and keep warm.
- Melt butter in a large soup pot over medium heat. Stir in Gorgonzola cheese until creamy, 3 to 4 minutes. Pour in heavy cream and cook, stirring frequently, until sauce has thickened, about 10 minutes. Add spinach and Parmesan cheese to sauce; cook until spinach is heated through and Parmesan is melted, 3 to 4 minutes.
- Place warm pasta into the pot with the sauce and toss evenly to coat. Season with salt and pepper.

- 1. Heat oil and cook onion and garlic 2. Add proscuitto and zucchini cook until proscuitto is crispy 3. Add gorgonzola, mix well 4. Add wine and stir until gorgonzola is dissolved 5. Add cream and white sauce, bring to a boil until creamy 6. Mix in pasta, add basil and truffle oil.
PENNE WITH CREAMY GORGONZOLA SAUCE
Perfectly cooked al dente penne pasta tossed with a super quick and Creamy Gorgonzola Sauce. Cheesy, creamy and comforting!

- Bring a large pot of salted water to a boil and cook the pasta until al dente. Make sure to serve 1/3 pasta water.
- Meanwhile, put the milk and butter in a large deep sided skillet or pan and heat until the butter has melted. Once the butter has melted add the gorgonzola and stir until melted.
- Add the cream and 1 tbsp parmesan with a a good pinch of pepper (around 1 tsp freshly grinded) and a pinch of salt.
- Cook the sauce until the pasta is ready (around 3 minutes) and then add 1/2 cup of pasta water. Add the cooked pasta and toss until evenly coated, serve with an extra grating of parmesan.
