Creamy goat's cheese with chive & pomegranate image

150g pack soft, rindless goat's cheese
250g tub ricotta
50g pomegranate seeds, from a tub
½ small bunch chives , snipped
1 tbsp clear honey
2 tsp red or white wine vinegar
loaf of crusty bread , to serve

Steps:

  • Mash the goat's cheese and ricotta together in a bowl, then use a spatula to roughly spread over a large plate. Scatter with the pomegranate seeds and chives and set aside until ready to serve.
  • Stir together the honey and vinegar, then as you're about to serve, drizzle over the plate. Enjoy with crusty bread.

Steps:

  • Blend 8 ounces goat cheese, 1/4 cup each fresh parsley and chopped chives, 2 teaspoons each fresh thyme and chopped rosemary and 1 small garlic clove in a food processor. Season with salt and pepper. Form into a 3- to 4-inch ball and roll in pomegranate seeds; add more seeds to fully coat. Refrigerate until firm, about 30 minutes. Serve with crackers.

16 ounces cream cheese, softened
8 ounces shredded Italian 5-cheese blend
2 tablespoons chopped fresh chives
1 teaspoon lemon zest
1/4 teaspoon kosher salt
2 cups pomegranate juice
1/4 cup hot honey or (1/4 cup honey plus 1/2 teaspoon crushed red pepper flakes)
1/4 cup sugar
1/2 teaspoon ground cardamom
1/4 cup shelled pistachios, roughly chopped
1/4 cup pomegranate seeds
Crackers, for serving

Steps:

  • In a large bowl, beat the cream cheese, shredded cheese, chives, lemon zest and salt with a wooden spoon or spatula until well blended. Spoon onto a large piece of plastic wrap and form into an even 1-inch-diameter log. Refrigerate until firm, at least 2 hours or up to overnight.
  • In a small pot, combine the pomegranate juice, hot honey, sugar and cardamom. Bring to a boil over medium heat, then let the sauce cook and reduce until thickened, about 20 minutes. (It should coat the back of a spoon and have a glazelike consistency.) Keep warm or serve at room temp.
  • Unwrap the cheese log and place on a platter. Garnish the log with the pistachios, pomegranate seeds and a generous drizzle of the pomegranate syrup. Serve with your favorite crackers.

3 lb yellow-fleshed boiling potatoes
2 shallots, chopped
2 tablespoons unsalted butter
1 cup whole milk
1 cup heavy cream
8 oz soft mild goat cheese
1 1/2 to 2 teaspoons coarse salt
1 teaspoon freshly ground black pepper
Garnish: fresh chives (preferably flowering) snipped with scissors

Steps:

  • Preheat oven to 350°F.
  • Peel potatoes and cut into 1/8-inch-thick slices with a manual slicer or sharp thin knife. Keep slices in a large bowl of cold water while making sauce.
  • Cook shallots in butter in a small skillet over moderately low heat, stirring, until softened. Transfer to a blender and purée with milk, cream, cheese, kosher salt to taste, and pepper.
  • Drain potatoes in a large colander and pat dry. Arrange in a buttered 3-quart shallow baking dish in 3 layers, pouring some of sauce over each layer (use all of sauce) and putting best potato slices on top layer. Bake, covered with foil, in lower third of oven. Remove foil after 45 minutes and continue to bake until potatoes are tender, 30 to 45 minutes more. If desired, briefly broil potatoes under preheated broiler until top is golden.

8 ounces soft fresh goat cheese (such as Montrachet), room temperature
4 ounces cream cheese, room temperature
6 tablespoons minced fresh chives (about 1 ounce)
1 garlic clove, pressed
12 whole long fresh chives
1 French bread baguette, sliced

Steps:

  • Combine goat cheese, cream cheese, minced chives and garlic in medium bowl. Stir with fork until well blended. Place large piece of plastic wrap on work surface. Arrange whole chives in crisscross pattern atop center of plastic. Spoon cheese into center of chives, forming 4- to 5-inch round. Lift edges of plastic, wrapping chives around cheese and covering cheese completely. Refrigerate overnight. (Can be prepared 2 days ahead. Keep refrigerated.) Remove plastic wrap from cheese. Place cheese on platter; surround with baguette slices and serve.

This is a fresh summer dip that my sis and me came up with when needing to use up some things that were left in the fridge. It is tangy from the goats cheese with a nice freshness added by cucumber and tomatoes. Goes great with crudites and crackers. I hope youll enjoy this as much as we do!

4 tablespoons goat cheese (cream cheese)
3 tablespoons cream cheese with chives
1 teaspoon light sesame oil
1 tablespoon fresh chives, snipped
6 cherry tomatoes, chopped (I leave the seeds in for moisture, but you may deseed them, too)
1/4 cucumber, deseeded and finely diced
fresh ground pepper

Steps:

  • In a bowl stir together goats cheese and cream cheese with oil. Add cucumber, chives and tomatoes and mix well. If you have deseeded your tomatoes you might need to add a little milk to reach the desired consistency.
  • Season with pepper to taste.
  • Serve with crackers or veggies of your choice.
