1 (20 ounce) can pineapple chunks in juice, do not drain
1 (15 ounce) can fruit cocktail, drained
2 (15 ounce) cans mandarin oranges, drained
2 bananas, sliced
2 cups miniature marshmallows
1 (3 ounce) package instant vanilla pudding
1 (8 ounce) container Cool Whip, thawed

Steps:

  • Drain pineapple, reserving juice.
  • Mix pineapple juice and dry instant vanilla pudding together and set in the refrigerator for 30 minutes.
  • Mix the pineapple, fruit cocktail, mandarin oranges, bananas & marshmallows together.
  • Gently fold in pudding mixture.
  • Lastly, fold in cool whip.
  • Cover and refrigerate.

2 cups flour
3 teaspoons baking powder
1 1/4 cups sugar
2 teaspoons baking soda
2 eggs, beaten
1 (30 ounce) can fruit cocktail, juice included
3/4 cup sugar
1/2 cup milk
1/2 cup coconut
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Mix all batter ingredients well with wooden spoon.
  • Pour into large greased pie dish.
  • Bake at 350F for 40 - 50 minutes.
  • Boil together topping ingredients for 5 minutes.
  • As pudding comes out of oven stab it all over with a knife and pour topping over.

  • In a large bowl, combine fruit cocktail and dry pudding mix; stir for 2 minutes. Let stand for 2 minutes or until soft-set. Chill until serving. Fold in marshmallows just before serving. Garnish with nuts if desired. Refrigerate leftovers.

This recipe comes from my mother, she always made this when I was a child. It is one of my favorite puddings, I make this pudding very, often as it is quick and very, very, very easy to make. I use a can of fruit that has a little bit of everything in it, such as cherries,grapes, peaches, pears, pineapple and guavas. One could use any fruit, however I find a can of mixed fruit is the secret to this pudding

410 g canned fruit
2 cups self raising flour
1 1/2 cups sugar
1 teaspoon bicarbonate of soda
1/4 teaspoon salt
2 eggs
1 cup sugar
1/2 cup coconut
1/2 cup milk
1 teaspoon vanilla essence
4 tablespoons butter

Steps:

  • Pudding.
  • preheat oven to 180%C.
  • Mix the self raising flour, bicarbonate of soda, salt, and sugar together.
  • Add the canned cocktail fruit and eggs mix well.
  • Pour the mixture into a greased dish and bake for 30 minutes.
  • While the pudding is baking make the sauce.
  • Sauce.
  • Put the sugar, coconut, milk, vanilla essence and butter into a saucepan boil together for 5 minutes.
  • As soon as the pudding comes out of the oven, prick the pudding with a large prong fork and pour the hot sauce over.
  • The sauce will be absorbed by the pudding.
  • Serve the pudding hot.

1 (11-ounce) can mandarin oranges, drained
1 & 1/2 cups sliced fresh strawberries
1 cup cool whip, thawed
1 (5.1-ounce) package vanilla instant pudding

Steps:

  • In a large bowl add the fruit cocktail with juice, pineapple tidbits with juice, drained mandarin oranges and the strawberries. Sprinkle the vanilla pudding mix over the fruit and juice and stir well. Fold in the cool whip. Refrigerate the creamy fruit cocktail salad for an hour then stir just before serving. *I get the Fruit Cocktail that has extra maraschino cherries. Try to get the brand that is in juice or light syrup. The heavy syrup is not recommended for this recipe.
