  • In a bowl, mix cream cheese, mayonnaise, salt and pepper until smooth. Stir in green pepper, celery, relish and parsley. Fold in eggs. Refrigerate, covered, until serving.

¾ cup prepared yellow mustard
¼ cup white sugar

  • Mix creamy salad dressing, mustard, sugar, and vinegar together with a whisk in a large bowl; add egg slices and gently stir to coat.

2 stalks chopped celery
1 chopped green pepper
1/2 cup chopped onion
1/2 cup chopped pickle
1 1/4 cups mayonnaise

2 teaspoons spicy brown mustard or 2 teaspoons Dijon mustard
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Boil potatoes in water for 25 minutes, drain and set aside to cool.
  • Combine remaining ingredients in large covered container and place in refrigerator while potatoes are cooling.
  • When potatoes are cool enough to handle, peel and cube them.
  • Add to vegetable mayonnaise mixture and toss.
  • Cover and chill at least 6 hours or overnight.
  • Delicious!

I was hungry for egg salad but wanted it to have a bit more omphf and some more protein to last in my gut, so I added tuna. I have both mayo and miracle whip in the recipe just in case some don't like the tang of miracle whip, so it tones it down somewhat.

1 (15 ounce) can tuna (in water)
8 eggs
1 medium onion (or more if you're gaga over onion)
1 teaspoon ground mustard
2 teaspoons paprika
1 tablespoon mayonnaise (more or less to your liking)
1 tablespoon Miracle Whip (more or less to your liking)
1 dash yellow mustard or 1 dash Dijon mustard
salt and pepper

Steps:

  • Put eggs into a pot with cold water and bring to a boil.
  • Once the water is boiling, cover the pan and remove from the burner. Set your timer for ten minutes.
  • Cut up onion and drain tuna while the eggs cook.
  • Once the eggs have done their 10 minute soak, rinse with COLD water to stop the cooking process.
  • Continue to rinse the eggs until you can hold them to remove the shell.
  • Remove the shell, rinse away any shell particles and cut into chunks (or small pieces if you like a finer texture).
  • Mix the egg, tuna, onion in a bowl with a fork.
  • Add mayo, Miracle Whip, ground mustard, paprika, salt and pepper and mix until blended.
  • Enjoy on bread or toast; or top a plate of mixed greens with tomatoes. You could also stuff tomatoes with the salad. A perfect summer meal when you don't want to turn on the oven!

1 (28 g) package dry hidden valley dry ranch dressing mix (can use another brand but Hidden Valley seems to be the best!)
2 cups mayonnaise
1 cup Miracle Whip (or just use 3 cups mayonnaise)
1/3-1/2 cup milk (or use buttermilk)
1/3 cup sweet relish (can add in more to taste)
2 tablespoons prepared yellow mustard
5 -6 hard-boiled egg yolks, mashed well
1 teaspoon garlic powder
1 teaspoon seasoning salt (or to taste)
seasoned salt and black pepper (can use white salt, seasoned is better)

Steps:

  • Mash the egg yolks to a fine powder (or as close to a fine powder as you can, save the whites to add in the pasta salad).
  • In a bowl, whisk together the dry dressing mix with mayo, salad dressing and milk until very smooth.
  • Mix in the sweet relish, mustard, garlic powder and seasoned salt.
  • Adjust the relish and mustard adding in more to to taste if desired.
  • Add in the mashed egg yolk and whisk vigorously to combine (there might still be small pieces of yolk, not too worry!).
  • Season with black pepper to taste.
  • Pour over cooked pasta or cubed potatoes and chill for a couple of hours.

2 large shallots, chopped medium
6 large eggs
1/4 cup mayonnaise
1 tablespoon minced fresh parsley leaves
1/4 cup watercress, leaves chopped coarse
2 teaspoons Dijon mustard
2 teaspoons lemon juice

Steps:

  • 1. In medium skillet over medium heat, fry bacon until brown and crisp, about 5 minutes. Transfer bacon with slotted spoon to plate lined with paper towel; pour off all but 1 tablespoon of fat from pan. Add shallots and sauté until softened and browned, about 5 minutes. 2. Place eggs in medium saucepan, cover with 1 inch of water, and bring to boil over high heat. Remove pan from heat, cover, and let sit for 10 minutes. Meanwhile, fill a medium bowl with 1 quart water and 1 tray of ice cubes (or equivalent). Transfer eggs to ice water bath with slotted spoon; let sit 5 minutes, peel and dice medium. 3. Mix all ingredients, including bacon and shallots, together in medium bowl, including pepper to taste. Serve. (Can be covered and refrigerated overnight.)
