2 large beets, trimmed
1/2 cup sour cream
5 1/2 teaspoons Champagne vinegar or white wine vinegar
2 teaspoons prepared white horseradish
1 1/4 teaspoons sugar
2 bunches watercress, tough stems trimmed
2 tablespoons corn oil
16 1/3-inch-thick rounds unpeeled English hothouse cucumber

Steps:

  • Preheat oven to 400°F. Wrap beets in foil. Bake until tender when pierced with fork, about 1 hour 15 minutes. Cool. Peel beets. Cut each beet into 8 rounds. Whisk sour cream, 1 1/2 teaspoons vinegar, horseradish, and sugar in bowl to blend. Season dressing with salt and pepper. (Beets and dressing can be made 1 day ahead. Cover separately and chill.)
  • Toss watercress with corn oil and remaining 4 teaspoons vinegar in large bowl. Season with salt and pepper. Divide watercress among 4 plates. Overlap beet slices and cucumber slices atop each. Drizzle with dressing and serve.

1/2 cup cucumber, coarsely chopped
1 tablespoon dill
1/2 teaspoon jalapeno pepper
1 large garlic clove
1 tablespoon lemon juice
3/4 cup yogurt
1 tablespoon olive oil
1/4 teaspoon salt
1 teaspoon sugar
12 cups salad greens

Steps:

  • Place the cucumber, dill, jalapeno and garlic in the bowl of a mini-chop or blender and process until creamy. Mix with the remaining dressing ingredients.
  • Cut the salad greens into two-inch pieces and wash thoroughly in cold water. Drain and spin dry.
  • At serving time, toss the greens with the cucumber dressing and serve immediately.

If you like garlic, you will love the dressing on this cucumber salad. It better to make it ahead to let the flavors meld...I usually make it the day before...the dressing is great on salads as well. Enjoy!

5 baby cucumbers, sliced thin - i use my mandolin ( if you like a sturdier cucumber after soaking in salt...slice them thicker.
2 tsp kosher salt
1/2 red pepper, diced
2 medium tomatos, - i remove seeds, slice thin and cut into fourths - can chop if you wish
2 - 3 radishes - sliced thin
2 - 3 spring onions, sliced thin or 1/4 cup diced red onion
DRESSING
3/4 c mayonnaise
1/4 c sour cream
3 clove garlic, minced - i use food processor
1 /4 tsp dried basil
1/4 tsp ground mustard
1 tsp sugar
2 tsp white vinegar
1/4 tsp each - salt & pepper
2 - 3 Tbsp milk

Steps:

  • 1. In a medium bowl, mix all dressing ingredients until smooth. Taste to see if you want to add more seasoning. Cover and chill or even better if sits over night.
  • 2. Place cucumbers in a colander and add 2 tsp kosher salt and toss to coat. Leave drain for 30 minutes...this removes much of the water and won't water down your dressing. After draining, rinse and place in a clean tea towel to dry. Place all prepared vegetables in a bowl and toss.
  • 3. Spoon dressing over the vegetables and toss to coat all cucumbers, as they tend to stick together. I use my fingers, they are your best tools.
  • 4. Refrigerate for at least 2 hours before serving. Enjoy!

CREAMY CUCUMBER SALAD DRESSING

Delicious dairy-free version of cucumber dressing. I liked to use 2 small cucumbers, rather than 1 large because of the seeds. IF using a large or non-organic cucumber, make sure there is no wax on the peel, and scrap some of the seeds out! For a thicker, creamier dressing add more cashews and less water; for a thinner, lighter dressing add more water and fewer nuts.

Number Of Ingredients 9

2 small cucumbers, chopped (peel and all if organic)
1/2 cup cashews, soaked
1/4 cup water (more or less depending on how thick you like)
1 lemon, juice of
1 tablespoon apple cider vinegar (to taste)
1 tablespoon agave nectar (to taste)
2 tablespoons dried dill (or 1/2 bunch fresh)
1 tablespoon sea salt (to taste)
1 tablespoon black pepper (to taste)

Steps:

  • Blend all ingredients in a high speed blender, adding water as needed.
  • If using fresh dill, blend 1/2 of it at first, them add the rest after the cucumbers and cashews are smooth!
  • Dressing will thicken in fridge.
