50 vanilla wafers, finely crushed
2 Tbsp. sugar
1/4 cup butter, melted
1 can (11.3 fl. oz.) mango nectar
2 pkg. (3 oz. each) JELL-O Orange Flavor Gelatin
1 can (5 oz.) evaporated milk
1 mango, peeled, chopped
1-1/2 cups thawed COOL WHIP Whipped Topping, divided

Steps:

  • Heat oven to 350ºF.
  • Combine wafer crumbs, sugar and butter; press onto bottom of 8-inch square pan. Bake 10 min. or until lightly browned; cool completely.
  • Bring nectar to boil in saucepan. Add to gelatin mixes in large bowl; stir 2 min. until completely dissolved. Beat with mixer on high speed 5 min. or until frothy and opaque.
  • Blend milk and mangos in blender until smooth; whisk into gelatin mixture. Stir in 1 cup COOL WHIP; pour over crust. Refrigerate 2 hours or until firm. Serve topped with remaining COOL WHIP.

Betty Crocker™ sugar cookie mix makes a perfect cookie crust, which gets topped with layers of creamy vanilla pudding, orange Jell-O® gelatin and Cool Whip whipped topping, then garnished with mandarin oranges for added flair. It's guaranteed to be the favorite dessert at any potluck, and we recommend making it in a glass baking dish so everyone can see the pretty layers in its presentation.

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
Butter and egg called for on cookie mix pouch for drop cookies
1/3 cup butter, melted
2 boxes (3 oz each) Jell-O® orange-flavored gelatin
1/3 cup boiling water
2 boxes (3.4 oz each) Jell-O® vanilla-flavor instant pudding & pie filling mix
2 1/2 cups cold milk
1 package (8 oz) cream cheese, softened
1 cup powdered sugar
1 container (12 oz) Cool Whip frozen whipped topping, thawed
1/2 cup canned mandarin orange segments, drained

Steps:

  • Heat oven to 375°F. Make and bake drop cookies as directed on pouch. Cool completely, about 30 minutes.
  • In food processor, process half of the cookies to coarse crumbs. Remove to medium bowl. Continue to process remaining cookies to coarse crumbs; add to bowl. Stir in melted butter until well blended. In ungreased 13x9-inch (3-quart) glass baking dish, press cookie crumb mixture firmly in bottom. Set aside.
  • In small bowl, place gelatin, and add boiling water; beat with whisk until blended. Stir occasionally about 2 minutes or until mostly dissolved. In medium bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Stir in dissolved gelatin. Let stand 5 minutes, stirring occasionally.
  • In large bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until smooth, scraping down side of bowl frequently. Beat in 2 cups of the whipped topping. Spread over cookie crust.
  • Pour pudding mixture over cream cheese layer; spread evenly over top. Drop remaining whipped topping by spoonfuls over pudding layer; carefully spread until even. Refrigerate 5 hours.
  • When ready to serve, sprinkle orange segments on top. Cut into 6 rows by 3 rows. Cover and refrigerate any remaining pieces.

2 cans (15 ounces each) diced or sliced mangoes, drained
1 package (8 ounces) cream cheese, softened and cubed
2 cups boiling water
2 packages (3 ounces each) lemon gelatin
1 package (3 ounces) apricot gelatin
2 cups cold water
Optional: Fresh mint leaves and cranberries

Steps:

  • Place mangoes and cream cheese in a food processor; process until blended., In a large bowl, add boiling water to gelatins; stir 2 minutes to completely dissolve. Stir in cold water, then mango mixture. Pour into a 8-cup ring mold coated with cooking spray or a 2-qt. serving bowl. Refrigerate until firm, about 4 hours. If using a ring mold, unmold onto a serving plate. If desired, serve with mint and cranberries.

1-1/2 cups boiling water
1 pkg. (6 oz.) JELL-O Orange Flavor Gelatin
1 cup cold club soda
2 mangos, chopped (about 2 cups)
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in club soda. Place mangos in 6-cup mold; top with 2 cups gelatin mixture. Refrigerate 30 min. or until gelatin is set but not firm.
  • Meanwhile, refrigerate remaining gelatin mixture 30 min. or until slightly thickened.
  • Add 2 cups COOL WHIP to remaining gelatin mixture in bowl; whisk until blended. Pour over fruited layer in mold. Refrigerate 4 hours or until firm. Serve topped with remaining COOL WHIP.
