4 small boneless skinless chicken breasts (pounded to about 1/2-inch thick)
black pepper
38 saltine crackers, crushed (1 sleeve)
1 cup all-purpose flour
1 teaspoon seasoning salt
1 pinch cayenne pepper (optional or adjust to heat level)
1/2 teaspoon garlic powder (garlic lovers use 1 teaspoon)
1/2 teaspoon baking powder
3/4 cup milk
2 large eggs
1 1/2 cups vegetable oil
3 -4 cups half-and-half cream (use 4 cups for a thinner gravy)
1/4 cup all-purpose flour
1 teaspoon seasoning salt or 1/2 teaspoon white salt
1 teaspoon black pepper (can reduce if desired)

Steps:

  • Season the chicken breasts with black pepper.
  • In a shallow dish combine crushed cracker crumbs with flour 1 teaspoon seasoned salt, 1/2 teaspoon black pepper, cayenne pepper (if using) and baking powder.
  • In another shallow dish whisk together eggs with 3/4 milk.
  • Dredge the chicken breasts in the cracker mixture then dip in the egg/milk mixture, then dredge AGAIN in the cracker mixture.
  • Pour the oil into a large skillet and heat to 360 degrees F.
  • Fry the breasts in hot oil for about 3-4 minutes on each side or until golden brown; remove to a wire rack and cover lightly with foil.
  • Carefully drain oil but reserve the browned bits in the bottom of the skillet along with a couple tablespoons of the oil.
  • In a bowl mix together 4 cups half and half cream, 1/4 cup flour 1 teaspoon seasoned salt and 1 teaspoon black pepper; whisk until combined, then add to the reserved drippings in the skillet, cook whisking constantly over medium-high heat for about 10 minutes or until thickened.
  • Serve the creamed gravy with the breasts.

Steps:

  • In a medium bowl, beat together 1/2 cup milk and egg. In a resealable plastic bag, mix together the flour, garlic salt, paprika, pepper and poultry seasoning. Place chicken in bag, seal, and shake to coat. Dip chicken in milk and egg mixture, then once more in flour mixture. Reserve any remaining flour mixture.
  • In a large skillet, heat oil to 365 degrees F (185 degrees C). Place coated chicken in the hot oil, and brown on all sides. Reduce heat to medium-low, and continue cooking chicken until tender, about 30 minutes. Remove chicken from skillet, and drain on paper towels.
  • Discard all but 2 tablespoons of the frying oil. Over low heat, stir in 2 tablespoons of the reserved flour mixture. Stirring constantly, cook about 2 minutes. Whisk in chicken stock, scraping browned bits off bottom of skillet. Stir in 1 cup milk, and bring all to a boil over high heat, stirring constantly. Reduce heat to low, and simmer for about 5 minutes. Serve immediately with the chicken.

½ cup unsalted butter
½ yellow onion, finely chopped
½ cup all-purpose flour
¼ teaspoon freshly ground black pepper
1 pinch freshly grated nutmeg
1 pinch cayenne pepper

2 cups finely chopped, cooked chicken meat
½ cup finely chopped ham

  • Melt butter in pan over medium heat. Add onions; cook and stir until onions begin to turn translucent, about 5 minutes. Stir in 1/2 cup flour and cook until flour loses its raw taste, 3 or 4 minutes. Add black pepper, nutmeg, and cayenne pepper; stir. Remove from heat.
  • Pour milk into butter-onion mixture to make the bechamel sauce. Whisk until incorporated. Return pan to medium-high heat and continue whisking until mixture thickens, 1 or 2 minutes; continue to cook and stir 3 or 4 minutes. Remove from heat and stir in salt.
  • Place chopped chicken, ham, and parsley in bowl. Add bechamel sauce and mix thoroughly. Allow mixture to cool to room temperature; cover with plastic wrap and refrigerate until firm, 2 or 3 hours.
  • Heat oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C).
  • Place 1 cup flour, beaten eggs, and bread crumbs in 3 separate shallow bowls.
  • Scoop out chilled mixture into evenly-sized portions (about the size of a golf ball) to form croquettes. Roll balls first in flour, then in beaten eggs, and then in bread crumbs.

1 1/2 teaspoons dried thyme
1/2 teaspoon ground allspice
4 large boneless skinless chicken breast halves

1 lb mushroom, thinly sliced
1 small onion, chopped

1 cup canned low sodium chicken broth

Steps:

  • Blend flour, 1/2 teaspoon thyme and allspice in small bowl.
  • Set aside 1 tablespoon of flour mixture.
  • Sprinkle chicken with salt and pepper, then with enough of remaining flour mixture to coat.
  • Melt butter in heavy large skillet over medium-high heat.
  • Add chicken to skillet.
  • Saute until brown, about 4 minutes per side.
  • Transfer chicken to plate.
  • Add mushrooms, onion, and remaining 1 teaspoon thyme to skillet.
  • Saute until mushrooms are brown, about 5 minutes.
  • Mix in reserved 1 tablespoon flour mixture; cook 1 minute.
  • Add cream and broth and bring to boil, stirring occasionally.
  • Return chicken and any collected juices to skillet.
  • Reduce heat to medium-low; simmer uncovered until chicken is cooked through and gravy thickens slightly, about 5 minutes.

Chicken Soup Knishes with Creamy Gravy image

The best thing about my Nana Celie's chicken soup (other than how comforting her house smelled when she had a pot simmering on the stove) was how tender the chicken meat was no matter how long she cooked it. I later learned that her secret was to use only dark meat, which was rendered so silky it practically slipped of the bone in one piece. In this twist on a classic knish, I use only chicken thighs and turn the soup into an uber-chicken-y gravy for dunking. While you can replace the schmaltz with any neutral cooking oil, I strongly recommend sticking with dark meat chicken since white meat will cook up mealy and dry.

2 1/2 cups all-purpose flour, plus more for dusting (see Cook's Note)
1 teaspoon baking powder
1 teaspoon kosher salt
6 tablespoons schmaltz, melted and cooled, or neutral oil, such as vegetable oil (see Cook's Note)
1 teaspoon distilled white vinegar
2 pounds skin-on, bone-in chicken thighs
3 cups low-sodium chicken broth
4 garlic cloves
2 large carrots, cut into large chunks
1 large onion, chopped
1 parsnip, cut into large chunks
1 bay leaf
1/3 cup fresh parsley leaves, chopped
2 tablespoons chopped fresh thyme leaves (from about 24 sprigs)
Kosher salt and freshly ground black pepper
1/2 cup plain breadcrumbs
Nonstick cooking spray, optional
1 large egg
6 tablespoons schmaltz, melted and cooled, or neutral oil, such as vegetable oil (see Cook's Note)
6 tablespoons all-purpose flour

Steps:

  • For the pastry: Whisk together the flour, baking powder and salt in the bowl of a stand mixer. Add the schmaltz, vinegar and 1/2 cup water and stir into a shaggy ball with a spoon or large rubber spatula. (It's OK if some of the flour remains dry at the bottom of the bowl; the dough will come together during kneading.) Attach the dough hook to the mixer and knead on medium speed until the dough is smooth and elastic, about 8 minutes. Dump out the dough onto a lightly floured surface and knead it into a uniform ball, about 30 seconds. Wrap the dough in plastic wrap and chill for at least 30 minutes while making the filling. (The dough can be made and refrigerated up to 1 day ahead.) For the filling: Combine the chicken thighs, chicken broth, garlic, carrots, onion, parsnip, bay leaf, half the parsley, half the thyme and 2 teaspoons salt in a wide shallow pot and bring to a simmer over medium-high heat. Cover the pot, and simmer gently over low heat until the chicken is very soft and tender, about 1 hour 30 minutes.
  • Transfer the chicken to a plate and set aside until cool enough to handle, about 10 minutes. Use a slotted spoon to remove the vegetables to a second large plate. Place a strainer over a large bowl and strain the broth; reserve for the gravy. Transfer the strainer over a plate to catch any drips and set the vegetables and the broth aside. Wipe out the pot and set it back on the stove off the heat.
  • Transfer the vegetables to a large bowl and discard the bay leaf. Mash the vegetables with the back of a fork. Pick the chicken meat, discarding the skin and bones. Chop the chicken meat finely and add to the vegetable mixture. Stir in the breadcrumbs and the remaining parsley and thyme. Season generously with salt and pepper. (The filling can be made up to 1 day ahead, but the knishes need to be formed and baked on the same day.)
  • To form the knishes: Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment or spray lightly with nonstick cooking spray and set the pans aside.
  • Beat the egg with one tablespoon water in a small bowl and set aside.
  • Divide the dough in half: Use your hands to roll 1 of the dough halves into a 6-inch-long log on a lightly floured surface, then use a rolling pin to roll the log out into a 16-by-12-inch rectangle. The dough will be very thin. Square off the sides, if necessary, to prevent the end pieces from being too thick and uneven.
  • Position the dough so that the long edges are parallel with the edge of the counter. Shape half of the filling into a 2-by-16-inch log. Transfer the filling on top of the dough, 1 inch in from the bottom edge. Gently stretch the dough up and around the filling. (It's ok if the dough tears a little as at this stage as it will be hidden as the dough is rolled up.) Then continue rolling up the filling in the dough into a long log. Score the log in 2-inch intervals and then cut the log into 8 segments.
  • Working with one segment at a time, turn the piece so one of the cut sides is up and pinch and smooth the top until sealed. Turn over so the other cut side is facing up, and pinch and smooth that side until sealed as well. Place the formed knish with a sealed side down on one of the prepared baking sheets and then gently press down to flatten it slightly. Repeat the process with the remaining segments, pastry and filling until all the knishes have been formed. (See Cook's Note.)
  • Arrange the knishes about 1 inch apart on the baking sheets. Lightly brush the tops and sides with the reserved egg wash. Bake, rotating the pans halfway through, until the knishes are golden brown, 45 to 50 minutes. Cool at least 10 minutes before serving. The knishes can be served hot, warm or at room temperature.
  • For the gravy: While the knishes are baking, melt the schmaltz in a large saucepan over medium-high heat. Add the flour and cook, whisking, until the flour smells toasty but has no color, about 1 minute. Whisk in the reserved chicken broth and cook, whisking constantly and being sure to get the flour in the corners and sides of the pan, until the mixture begins to thicken, about 1 minute. Simmer the sauce over medium heat, whisking occasionally and running the whisk around the sides and into the corners of the pan to prevent clumping, until the sauce is thick enough to coat the back of a spoon, about 10 minutes. Season lightly with salt, if needed. Serve the warm gravy with the knishes.

1 lb ground pork
2 shallots, peeled and diced fine or 1/3 cup shallot

1 cup fresh breadcrumb (do NOT use seasoned dry breadcrumbs)
1/2 cup grated parmesan cheese

1/8 teaspoon nutmeg
2 eggs, lightly beaten
1/3 cup sour cream

  • MEATBALLS:.
  • Combine all ingredients, except vegetable oil, in large bowl as listed. Mix well to ensure all ingredients are combined. (I use my hands, clean of course!) Using a small ice cream scoop or a tablespoon, scoop up mixture and form into balls. When all meatballs are all formed - Heat 3 tablespoons of vegetable oil in 12" skillet over medium hi heat. Add as many meatballs to skillet without crowding and fry till all sides are golden brown. (You may need to add more vegetable oil with each batch you fry) Set on rack placed over cookie sheet and continue to fry meatballs until all are done. Place meatballs in oven to finish cooking while you make the sauce.
  • GRAVY:.
  • In large measuring cup or bowl, whisk together Hidden Valley Ranch Dressing, milk and sour cream. Set aside.
  • In large saucepan over medium heat, melt butter. Whisk in flour, mixture will be crumbly and a little dry.
  • Gradually add dressing mixture to pan, whisking constantly. Mixture will begin to thicken almost immediately. Continue to whisk, adding in pepper, salt,nutmeg, scallions and parmesan cheese. Turn heat to lowest setting and cover.
  • Remove meatballs from oven and place on large platter or dish. Spoon gravy over top, sprinkle chopped scallions over top, and serve extra gravy on the side.

1 tablespoon oxo chicken bouillon powder (I just use 1 small package OXO bouillon powder)

1 pinch garlic powder (optional)
1 -2 teaspoon dried onion flakes (rubbed between fingers to release the flavors)
black pepper (lots black pepper!)

Steps:

  • In a heavy saucepan melt butter over medium-high heat.
  • Whisk in flour and stir constantly for 1 minute (do not let the flour brown).
  • Slowly add in broth, chicken bouillon powder, half and half or milk, pinch garlic powder (if using) and dryed onions; stir/whisk over medium heat until smooth and thickened (this should take about 2-3 minutes).
  • Add in lots black pepper and salt if desired.

4 large skinless boneless chicken breast halves

Something I just made up one day looking for something different for dinner. I like it because its fairly simple but looks really gourmet and it taste delicious. I suggest serving with Mashed Potatoes.

4 boneless skinless chicken breasts
10 ounces spinach
extra-sharp cheddar cheese
1 onion
1 (1 ounce) package chicken gravy
seasoning salt
onion powder
oregano
salt & pepper
vegetable oil
butter

Steps:

  • Preheat Oven to 365.
  • Thaw and Clean Chicken Breast Removing Any Excess Fat.
  • Slice Chicken Breast Horizontally (Flat on Cutting Board) through the Center Creating a Pocket for Stuffing.
  • Chop Desired Amount of Onions. approximately 1/4 to 1/2 of Onion.
  • Sautee Onions in 2 tablespoons of vegetable oil. Sprinkle salt & pepper to taste over onions while sauteeing. (If any oil left after sauteeing, save it for gravy).
  • Boil Spinach in pot of approximately 1/3 cup of water and 1 tablespoon of butter until most of water has boiled off. (Spinkle salt to taste in spinach).
  • Pour just enough vegetable oil to cover the bottom of oven baking pan and place chicken breasts in baking pan.
  • Season chicken breasts on both sides with Seasoning Salt, Onion Powder and Oregano. Do not season inside pocket of chicken.
  • Open flap to reveal inside pocket of chicken. Place a layer of cheddar cheese first. Then place a layer of the Sauteed Onions. Next a layer of Cooked Spinach. Finally sprinkle salt to taste over last layer of spinach.
  • Close the flap as well as possible. It may not close completely depending on how much you stuffed it. It is fine if its still open a bit.
  • Place in oven uncovered for 35-45 minutes.
  • While chicken is cooking in oven, prepare package of chicken gravy according to package ingredients. If you have any oil left from sauteeing the onions, pour up to 2 teaspoons of the oil in the gravy for more flavorful taste.) During this time you can also make the mashed potatoes I suggested.
  • When chicken is finished in oven, Pour desired amount of gravy over the chicken and enjoy! (Gravy can also be used for mashed potatoes).

If desired you could omit oven baking and completely fry the chicken pieces in oil, increase oil to 3 cups for this, fry turning occasionally for about 30 minutes or until chicken is cooked through. One 3-1/2 to 4-pound chicken cut up can be used instead of the chicken thighs or use all breasts, I prefer to use all the same so the chicken cooks at the same time. *NOTE* if you wanted to take this chicken to a whole new level then brine in recipe#168990 for 24 hours, rinse the chicken thoroughly and completely under cold water, then continue with the recipe as stated, if you are using skin on chicken breasts I would highly recommend using the brine ;-)

1 large egg, beaten
2 cups flour
1 1/2 teaspoons garlic salt

8 chicken thighs
1/2 cup vegetable oil
1 cup canned low sodium chicken broth (use only low-sodium!)
1 cup half-and-half cream (can use milk but half and half cream is better)

Steps:

  • In a shallow bowl beat 1/2 cup milk with 1 egg.
  • In a shallow bowl mix together flour, garlic salt, paprika, black pepper and poultry seasoning until well combined.
  • Dip one piece of chicken into the flour mixture, then dip into the egg/milk mixture.
  • Coat once again generously into the flour mixture (RESERVE any remaining flour mixture) place the chicken onto a plate/s.
  • Repeat with remaining chicken pieces using the same method.
  • In a large heavy skillet heat 1/2 cup vegetable oil (can use more or less but no less than 1/4 cup oil) over medium-high heat.
  • Add in the flour-coated chicken into hot oil and brown on both sides, turning frequently until cooked (about 5-6 minutes per side).
  • Using large tongs remove the chicken to a foil-lined greased baking sheet.
  • Set oven to 400 degrees.
  • Bake for about 30 minutes or until cooked through.
  • Meanwhile while the chicken is baking discard all but 2 tablespoons of the frying oil (leave the 2 tablespoons oil in the skillet) heat over low heat then add in 2 tablespoons of the RESERVED flour mixture; cook about 2 minutes whisking constantly.
  • Whisk in in the chicken stock scraping any browned bits on the bottom of the skillet.
  • Stir in half and half cream; bring to a boil over medium-high heat, whisking vigorously and constantly until thickened and very smooth.
  • Reduce heat to low and simmer for about 3-5 minutes.
  • Season with black pepper to taste and salt if desired.
  • Serve immediately with the baked chicken.

This is simple to make and so good! I have made it several times and plan on making it on a regular basis, we really enjoyed this chicken dish. Although it does not say to, I deglazed the pan with about 1/4 cup dry white wine after I browned the cutlets and transfered them to a plate, you can also deglaze with dry vermouth. If you don't care for garlic then leave it out.

1 1/2 teaspoons dried thyme (rubbed between fingers)
1/2 teaspoon allspice

3 tablespoons butter (or use 1/4 cup butter)
1 lb button mushroom, sliced
1 medium onion, chopped
1 tablespoon chopped garlic (optional)

1 -2 tablespoon grated parmesan cheese (or to taste)

Steps:

  • Flatten chicken breasts slightly between two pieces of plastic wrap.
  • In a small bowl, combine flour, 1 teaspoon thyme, allspice, salt and pepper (set aside about 1 heaping tablespoon flour).
  • Rinse the chicken in cold water, pat dry with paper towel.
  • Coat the chicken with flour mixture.
  • In a heavy large skillet oven medium heat melt the butter with olive oil.
  • Add the chicken and brown for about 3-4 minutes on each side; transfer to a plate.
  • At this point you can deglaze with white wine if desired.
  • Add in sliced mushrooms, onion, garlic (if using) and remaining 1/2 teaspoons dried thyme; saute until mushrooms are brown (about 5 minutes).
  • Mix in reserved 1 tablespoon flour; cook 1 minute.
  • Add in the whipping cream, grated Parmesan cheese and chicken broth; bring to a boil and stir occasionally.
  • Return the chicken and any juices to the skillet.
  • Reduce heat to medium-low and simmer uncovered until the chicken is cooked through and the gravy thickens slighty (about 5-8 minutes).

1 jumbo Italian eggplant, trimmed and sliced into 1/2-inch-thick slices
Sea salt and freshly ground black pepper
Neutral oil, for frying
2 cups all-purpose flour
1 cup buttermilk
3 ounces thinly sliced Jamon Serrano, roughly chopped, plus more whole slices for garnish
4 shots strong coffee or espresso
3 tablespoons unsalted butter, at room temperature
Sea salt and freshly ground black pepper

Steps:

  • For the eggplant: Lay the eggplant slices out on a paper or kitchen towel-lined cutting board and sprinkle with salt. Let sit for 20 to 30 minutes. (This will pull the moisture out.)
  • Heat 1 inch oil in a 14-inch cast-iron pan to 350 degrees F. Line a sheet tray or workstation with kitchen towels or paper towels.
  • Sprinkle the flour with salt and pepper in a bowl. Pat the eggplant dry with more paper or kitchen towels, then dip each slice in the buttermilk followed by the seasoned flour. Repeat 1 more time. Fry the eggplant in batches until golden brown, about 3 minutes on each side. Remove from the oil and drain on the prepared workstation.
  • For the gravy: Add the ham to a large cast-iron pan over medium heat and let the fat begin to render and get crispy, about 3 minutes. Deglaze the pan with the strong coffee and add the butter, stirring constantly, to combine. Taste and adjust the seasoning as needed.
  • Shingle the eggplant pieces in a large shallow dish. Top with the gravy and more pieces of ham. Serve.

8 partially boned quail
1/2 cup well-shaken buttermilk
1 large egg
2 dashes hot sauce
1 cup dried bread crumbs
1/2 cup all-purpose flour

Pinch of ground cayenne pepper
Canola oil, for frying
2 tablespoons bacon drippings (optional)
Gravy
1 shallot, minced
3 tablespoons all-purpose flour
2 cups milk
1 tablespoon fresh thyme
Sea salt and freshly ground black pepper

Steps:

  • Quail
  • Preheat the oven to 200°F. Line a rimmed baking sheet with a brown paper bag.
  • Rinse the quail and pat dry with paper towels. Combine the buttermilk, egg, and hot sauce in a shallow bowl and whisk to mix. In a separate shallow bowl or plastic bag, combine the bread crumbs, flour, salt and black pepper to taste, and cayenne and stir or shake to mix.
  • Pour canola oil 1/4 inch deep in a large skillet, add the bacon drippings, if using, and place over medium-high heat until sizzling hot (see Know-how, page 100).
  • Dip each quail into the buttermilk mixture, then into the bread crumb mixture to evenly coat. Place in the skillet 3 or 4 at a time, taking care not to overcrowd the skillet. Cook for 4 to 5 minutes per side, until golden brown and crispy and the interior is slightly pink. If the quail are browning too quickly, reduce the heat slightly. Transfer the quail to the lined baking sheet and place in the oven to keep warm. Repeat with the remaining quail, and pour off all but 3 tablespoons of the oil, reserving the pan drippings.
  • Gravy
  • Add the shallot to the same skillet and cook and stir over medium heat for about 1 minute. Sprinkle the flour over the shallot and cook and stir for 1 minute more, scraping up all the brown bits from the bottom of the pan. Whisk in the milk, thyme, and salt and pepper to taste and cook, stirring, until the gravy is thick and creamy, 3 to 5 minutes.
  • Spoon the gravy over the quail and serve warm.
  • On the Side
  • This chicken-fried quail is delicious with Summer Succotash (page 232), Spring Coleslaw with Fresh Herbs and Light Honey Citrus Vinaigrette (page 258), and Watercress Angel Biscuits (page 54). Or try them for breakfast over Country Ham and Hominy Hash (page 82) or with Buttermilk Waffles (page 91) in place of fried chicken.
  • Chew on this: About Quail
  • Southerners have long been crazy for quail, a small bird favored for eating and-perhaps especially-hunting. It was one of the few game species to flourish in the new landscape carved out by cotton farming, and the birds remain a favorite catch of hunters today.
  • That was certainly true in my family, and I've been eating quail for as long as I can remember. Whenever my dad and grandfather brought them home from a hunt, Granny Foster would dust them lightly with flour and fry them in a skillet for breakfast along with pan gravy and angel biscuits. Like many Southerners, my grandfather called quail "bobwhites" for their characteristic whistle, which sounds like they are singing "bobwhite! bobwhite! bobwhite!" The meat tastes sort of like chicken, but with a lovely, nutty-sweet twang, and quail can be prepared in all the ways you'd prepare chicken-but with much shorter cooking times.
  • Quail are so dainty that you will want to budget at least one, but more likely two, per person. Farmed quail can be bought from a number of online providers and usually come partially boned (see Sources, page 377).
