Steps:

  • In a small bowl, combine the cream cheese, hot pepper sauce and salad dressing. Stir in chicken. , Spread into an ungreased 11x7-in. baking dish. Sprinkle with cheddar cheese. 1/3 cup all-purpose flour
Salt and ground black pepper
1 pound boneless, skinless chicken breasts cut lengthwise into 1/2-inch wide strips
1/3 cup milk
1/3 cup grated Parmesan
1/2 cup quick-cooking oats
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 cup sour cream, regular or low-fat
2 teaspoons Dijon mustard
2 teaspoons honey

Steps:

  • Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
  • In a shallow dish, combine flour and 1/2 teaspoon each salt and black pepper. Add chicken to flour mixture and turn to coat. Place milk in a separate shallow dish. In a third shallow dish or resealable plastic bag, combine parmesan, oats, garlic powder, onion powder, and oregano. Dip chicken into flour and turn to coat. Dip flour-coated chicken into milk and then transfer chicken to oat mixture. Turn to coat chicken (or shake bag) until well covered with oat mixture. Place chicken on prepared baking sheet and spray the surface with cooking spray. Bake 15 minutes, until crust is golden brown and chicken is cooked through.
  • To make dip, in a small bowl, whisk together sour cream, Dijon mustard and honey.

  • Line a baking sheet with foil. Place a baking rack on top of the foil and lightly spray with nonstick cooking spray. Preheat oven to 425 F.
  • Add flour to a large freezer bag. Mix together Panko Breading ingredients in a separate large freezer bag (or separate large bowl). In a large bowl, whisk together 2 eggs and 1/4 cup hot sauce.
  • Add chicken to flour mixture and toss until coated. Dip chicken in egg/buffalo sauce mixture and let any excess drip off before placing in bag with Panko Breading. Toss with breading until well coated, pressing breading into chicken through the bag.
  • Line chicken on the baking rack, and lightly spray with cooking spray. Bake for 10-15 minutes or until the chicken is cooked through and golden. Broil to desired crispiness.

1 boneless chicken breast half (fully thawed, fat trimmed and rinsed)
8 ounces cream cheese (I use Philadelphia)
1 cup ranch dressing (I use Hidden Valley)
1/2 cup sweet unsalted butter
1/2 cup cayenne pepper sauce (I use Franks)
1 teaspoon apple cider vinegar
2 garlic cloves
1/4 medium yellow sweet onion
1 cup cheddar cheese (or both) or 1 cup monterey jack cheese (or both)
3 -4 bunches scallions (chopped, just the greens)

Steps:

  • Preheat oven to 375. Dice onion and garlic and spread on chicken breast. Wrap chicken in tinfoil, put on oven safe tray, place on center rack and cook for 16 minutes. Turn chicken over and bake for another 16 minutes. Remove from oven and let stand for 5 minutes. Unwrap and allow to cool enough so that you can shred it.
  • On medium heat, melt butter in small sauce pan. Once butter is completely melted, add hot sauce and apple cider vinegar to the sauce pan and whisk until fully combined. If you like hotter buffalo dip, add cayenne pepper powder. Whisk periodically until the sauce is bubbling, and remove from heat. You can do this while the chicken is cooking.
  • To a medium-sized bowl, add softened cream cheese and ranch dressing. Combine fully before adding the buffalo sauce. Once sauce is added, stir until no longer lumpy. You can also do this while chicken is cooking.
  • Decrease oven temp to 350. Add shredded chicken, garlic and onions to mixture. Move mixture to an 11 x 7 baking dish. Evenly distribute cheese on top. Bake uncovered for 20-25 minutes, or until cheese is bubbling all over. You can always broil at the end if need be. Remove from oven when done.
  • Chop and add scallions (optional).
  • Serve with tortilla chips or whatever you might like.

Remove chicken to a plate to cool. Shred with 2 forks. Place shredded chicken and hot sauce in a medium-size skillet and heat through. Add cream cheese and dressing and heat until well blended. Add half of the shredded cheese; stir until melted. Place in a small crock; sprinkle remaining cheese on top. Serve warm with crackers

1 - 8 oz. pkg cream cheese, softened
1 cup Frank's Hot Pepper Sauce
1 cup blue cheese dressing
1 pkg. boneless skinless chicken breasts, cooked and cut into chunks
1 cup (4 oz.) shredded cheese (Cheddar or Mozzarella)
Crackers, chips or celery sticks

Steps:

  • Preheat oven to 350 degrees. In a mixing bowl combine cream cheese, hot sauce and salad dressing. Stir in chicken. Spread into an ungreased 8 x 8 in. baking dish. Sprinkle with cheese. Bake, uncovered for 22-25 minutes or until heated through. Served with crackers, chips or celery sticks.

1 cup Roma tomatoes, diced
½ teaspoon salt
2 tablespoons olive oil
1 cup chopped onion
1 cup diced red bell pepper
1 small jalapeño, stemmed, seeded and minced
2 tablespoon minced garlic
1 ½ pounds chicken tenders
1 14-ounce can chicken stock
½ cup heavy cream
3 ounces cream cheese, softened
8 ounces Fontina cheese, shredded
2 tablespoons butter, softened as needed
2 tablespoons flour as needed
Tortilla chips, for serving

Steps:

  • Place diced tomatoes in a strainer over a bowl and sprinkle with salt. Let this sit and drain while you work on the rest of the dish. Every now and then give the tomatoes a turn to help them drain.
  • In a skillet heat oil over medium high heat and sauté onions, both peppers and garlic for two minutes.
  • Add chicken and stock, cover and simmer for 15 minutes. Remove cooked chicken to your cutting board and lower heat under skillet to medium.
  • Add cream and drained tomatoes to the pan and simmer while you shred the chicken.
  • With a fork, hold the fat end of the cooked tender and pull with the fork starting at the small end. When you reach the fat end, work around the tendon that is in each tender and discard the tendon. Set the shredded chicken aside.
  • Add the cream cheese and Fontina to the pan and stir until they are melted into the mixture.
  • At this point, the mixture should be thick and creamy. If it is too loose (depends how watery the tomatoes were), take the softened butter and add the flour in a small bowl until a paste forms. Add little bits of this to the sauce until it reaches the desired consistency. This step may not be necessary if the consistency is already thick and creamy. Our tomatoes were very meaty but they are not always that way.
  • Add shredded chicken and stir.
  • If serving as a meal, you can serve it two ways. Place tortilla chips in a bowl and spoon this over, or serve the chips on the side.
  • If serving as an appetizer, when ready to serve, pour hot mixture in a bowl, and serve along side a bowl of tortilla chips.
