1 (2 pound) rotisserie chicken, skinned and boned, meat pulled into large chunks
1 (8 ounce) package cream cheese, softened
½ cup half-and-half
1 tablespoon olive oil
2 medium green bell peppers, chopped
2 medium jalapeno peppers, diced
3 cloves garlic, chopped
1 tablespoon dried minced shallots
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
8 cups chicken stock
1 (16 ounce) jar salsa verde
1 tablespoon ground cumin
2 teaspoons dried oregano

Steps:

  • Shred chicken meat; set aside.
  • Place cream cheese in a microwave-safe bowl. Microwave on high power until soft, about 20 seconds. Add half-and-half and stir until completely mixed; set aside.
  • Heat oil in a large skillet over medium heat. Add bell peppers, jalapenos, and garlic; saute until soft, 5 to 7 minutes. Toss in chicken, dried shallots, cayenne pepper, salt, and black pepper. Add chicken, cream cheese mixture, chicken stock, salsa, cumin, and oregano; bring to a boil.
  • Reduce heat and simmer for 1 to 2 hours.

A recipe I got from my mom, with a few modifications. I'm whimpy when it comes to spice, so feel free to add more spice if you wish. You could add a diced jalapeno into the sauce, or more cayenne. You could also substitute flour tortillas for the corn. These are creamy, rich, and make great leftovers.

1/4 cup butter
1/4 cup flour
2 cups chicken broth
8 ounces sour cream
2 (4 ounce) cans green chilies, undrained
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
1/4 teaspoon chili powder
4 tablespoons cilantro, chopped
1 tablespoon olive oil
1 small onion, finely chopped
1 tablespoon lime juice
3 cups cooked chicken, shredded
1/4 cup salsa
3 cups cheese, shredded (I used a mixture of pepper jack and colby jack)
12 small corn tortillas

Steps:

  • In a medium sauce pan, melt the butter, stir in flour, mix and cook until bubbly. Slowly stir in the chicken stock, cook slowly, until thickened.
  • Remove from the heat and add the sour cream, cilantro, green chilies, cayenne, cumin and chili powder. Remove from heat.
  • In a small pan, saute the onion in 1 tablespoon olive oil. Add to a bowl with the cooked chicken, salsa, lime juice, and 3/4 cup of the cooked sauce. Stir well.
  • In a greased oblong baking dish, add 1 cup sauce to the bottom of the pan. Soften each tortilla for a few seconds in the microwave, and fill each tortilla with 2 tablespoons chicken mixture and 1 tablespoon cheese. Put seam side down in the baking dish. Pour the remaining sauce on top.
  • Bake 1/2 hr at 350, covered.
  • Take off cover and add the remaining cheese, and a bit of salsa or chopped tomato. Bake another 5- 10 minutes until the cheese is melted.

3 Tbsp olive oil
1 tsp dried oregano
1 tsp cumin
1 tsp coriander
1 tsp red pepper flakes
2 c chopped onion
1 pinch salt
1/3 c dry white wine (Folie a Deux Chardonnay)
1 lime (juice only)
2 c chicken stock (I used homemade)
1 can(s) cream of celery soup, 10 3/4 oz
1 1/2 c chicken, chopped
1 can(s) green chilies, 4 oz.
1 can(s) cannelloni white kidney beans with juice, 15 1/2 oz.
1/3 c heavy cream
dollop of sour cream (optional)
spring onions for garnish
lime tortilla chips for garnish

Steps:

  • 1. Heat oil over medium heat in a Dutch oven.
  • 2. Add next 4 ingredients. Stir for about 30 seconds to release the fragrant oils. Keep stirring and be careful not to let them burn.
  • 3. Toss in onion and sauté until tender and caramelized. Pour in wine and deglaze pan for about 5 to 10 minutes.
  • 4. Add lime juice. Then chicken stock. If you're using fresh and it's been refrigerated or frozen it can take a few minutes to dissolve. If you're using canned, just stir to heat through.
  • 5. Add celery soup. Bring to a boil and whisk to dissolve. Turn down to medium.
  • 6. Add chicken, chilies, and beans. Cook for about 20 minutes to heat, cook the chicken and allow the flavors to meld together.
  • 7. Pour in the cream and continue cooking for about another 10 to 15 minutes to thicken. Serve with sour cream, a bit of onions, and crumbled tortilla chips.

4 boneless skinless chicken thighs cut into chunks
1 medium onion diced
4 clove garlic minced
2 c chicken broth
2 15 oz cans great northern beans drained
2 4 oz. cans green chilies drained
1 tsp each salt, cumin, and mexican oregano
2 tsp chili powder
1/2 tsp black pepper
1 c sour cream
1 c heavy cream
sweet paprika for garnish

Steps:

  • 1. Heat olive oil in a large Dutch oven. Add the onion, chicken, and garlic. Cook until chicken is browned. Add the chicken broth and spices. Bring to a boil. Add the beans, and green chilies.
  • 2. Reduce heat and simmer about 20 minutes. Stir in the heavy cream and sour cream and mix until well incorporated.
  • 3. Garnish with sweet paprika to serve

2 skinless, boneless chicken breasts, cut into cubes

Steps:

For the chicken thighs:
2 tablespoons honey
1 tablespoon chili powder
1/4 cup amber beer
2 tablespoons cider vinegar
1 tablespoon olive oil
10 boneless, skinless chicken thighs (about 1 1/2 pounds)
Roughly chopped cilantro, for garnish
For the sauce:
1 cup (8 ounces) sour cream
1 1/2 cups loosely packed cilantro
1 lime, zest and juice
1/4 teaspoon salt

Steps:

  • Preheat the oven to 450°F. Whisk together the honey, chili powder, beer, cider vinegar, and olive oil in a large mixing bowl. Add the chicken thighs to the bowl and stir until the thighs are evenly coated. At this point, the thighs can be baked immediately or refrigerated for up to three hours. Arrange the chicken thighs on a baking sheet and drizzle any dressing remaining in the bowl over top. Roast for 25-30 minutes, until cooked through and the thickest part of the thighs register 165°F with an instant read thermometer. While the thighs are roasting, make the cilantro sauce. Combine the sour cream, cilantro, lime zest and juice, and salt in the bowl of a food processor or blender. Process continuously until the cilantro is minced very fine and the sauce is light green in color. Taste and add more lime juice, salt, or cilantro to taste. The cilantro sauce can be made the day ahead and kept refrigerated until serving. Serve the chicken thighs immediately after roasting. Spoon any extra glaze from the pan over the hot chicken and garnish with roughly chopped cilantro. Serve the cilantro sauce alongside.
