CREAMY CHICKEN, PASTA AND BROCCOLI BAKE
A tasty one dish meal from Kraft. They kept it quite light, and it's still creamy and comforting. You can use any shaped pasta and try to go for the high fibre ones. Smart Pasta has the most fibre, but you can use whole wheat or whatever your favourite is. I listed whole wheat so the nutritional count would be better and Zaar doesn't accept Smart Pasta. Enjoy!

Steps:
- Heat oven to 350°F Cook pasta as per package directions, adding broccoli for the last 3 minutes.
- Meanwhile, heat large nonstick frying pan on medium-high heat. Add chicken; cook 3 minutes or until no longer pink, stirring frequently. Stir in broth; simmer 3 minutes or until chicken is done. Add cream cheese; cook and stir on low heat 1 minute or until melted. Remove from heat and stir in 1/2 cup mozzarella.
- Drain pasta and broccoli. Add to chicken mixture; mix lightly. Spoon into 8 inch square baking dish; cover.
- Bake 15 minutes or until heated through. Sprinkle with remaining cheese. Bake, uncovered, 3 minutes or until melted. Let stand 5 minutes.

- cook egg noodles in boiling water with a little salt and oil till tender.

- in a medium saucepan empty alfredo sauce.
- add milk and flour mix inches.
- stir in cottage cheese.
- mix half of the cheese into the sauce until melted.
- salt and pepper to taste.
- Cooking:.
- mix all the ingredients together.
- top with remaining cheese
- place in oven and bake for 20 min or until cheese is melted.

- Sauce: Bring the chicken broth and ½ cup milk to a low boil in a saucepan. Whisk the other ½.
- cup milk with the poultry seasoning, garlic salt, and flour (or cornstarch); add the mixture (and wine / sherry if using) to the boiling liquid and whisk until a smooth creamy sauce forms. Taste and add Salt / Pepper to taste.
- Assembly: In a large bowl, mix the sauce from step one, cooked quinoa, cooked chicken, frozen broccoli, and cheese and stir to combine. Pour the mixture into a 9x13 baking dish generously coated with cooking spray.
- If freezing, spray the top of the mixture with cooking spray and cover with plastic wrap, then place in the freezer and proceed to follow "brick" method of freezing. Place the crumbled bacon in a separate freezer bag and freeze alongside the pan.
- On serving day, remove the frozen brick from the freezer, unwrap, and immediately place back in the 9x13 pan sprayed with cooking spray to thaw completely. Then proceed to bake:.
- Bake: Stir the room-temperature bake to re-incorporate all flavors, then bake, loosely covered with foil, in a preheated 350 degree oven for 25 - 30 minutes until heated through and bubbly. Remove, uncover, and top with the bacon crumbles (or almonds), then bake for 10 minutes longer, or just long enough to crisp the bacon (or toast the almonds).

- 1. Preheat oven to 350. Coat a 3 quart rectangular baking dish with nonstick cooking spray. Set aside
- 2. Cook noodles as pkg. directs. Drain well. Rinse with cold water, drain well again.
- 3. Meanwhile, coat an unheated large skillet with nonstick cooking spray. Preheat over medium heat. Add chicken to hot skillet. Cook and stir about 3 minutes or til chicken is no longer pink. Transfer chicken to large bowl.
- 4. Add mushrooms, the 8 green onions, and sweet red pepper to skillet. Cook and stir til vegetables are tender. If needed, add 1 Tbsp. vegetable oil to skillet.

- 6. Spoon chicken mixture into prepared dish. Mix bread crumbs and melted butter; Sprinkle over chicken mixture. Cover dish with foil. Bake for 30 minutes. Uncover and bake about 30 minutes or til heated through. If desired, garnish with bias sliced green onions. Makes 12 servings.
