250 g puff pastry
1 small egg, beaten
50 g butter
225 g mixed mushrooms
350 g cooked chicken, cut into bite-sized pieces
150 ml condensed mushroom soup
150 ml dry white wine
3 tablespoons chopped chives or 3 tablespoons spring onions, green tops

Steps:

  • Roll out the pastry on a floured surface to make an oblong.
  • Neaten the edges, brush with egg and fold in the edges (trim the corner) and score.
  • Bake for 25-30 minutes at 200C/400°F The centre will rise, but will flatten when filling is added.
  • Meanwhile melt the butter and fry the mushrooms until soft.
  • Stir in the chicken, the soup, the wine and most of the chives.
  • Season, bring to the boil and simmer for 5 minutes until hteated through.
  • Pile into the pastry case, sprinkle with the remaining chives and serve.

I made this up one day when I had a lot of leftover chicken and didn't want to just waste it. It is one of my families favorite dinners and we have it often. You can use either Cream of Mushroom or Cream of Chicken soup. I also sometimes add a small jar of sliced mushrooms.

4 cups cooked chicken, shredded
1 (26 ounce) can cream of mushroom soup or 1 (26 ounce) can cream of chicken soup
1/2 cup water
1 (2 1/2 ounce) jar sliced mushrooms, drained (optional)
pepper, to taste
2 (7 1/2 ounce) cans refrigerated biscuits

Steps:

  • Preheat over to 325*.
  • Place cooked chicken in 9x13 baking pan.
  • Combine the soup and water (and sliced mushrooms if desired). Mix well and pour over chicken.
  • Place uncooked biscuits over chicken mixture. Sprinkle with pepper.
  • Bake for 15-20 minutes or until biscuits are lightly brown.

This is a simple recipe that looks like you spent a lot of time on it. This recipe makes TWO tarts (9-inch pie plates). I've made this once for friends, and it was creamy & delicious, full of flavor. It's sort of quiche-like, but I found it more full-bodied and not as "eggy." Served with a spinach salad & artichoke dip with pita toasts. Yum. I also think this would be good with mushrooms added, or artichokes.

1 1/2 cups chopped cooked chicken (I used roast deli chicken)
4 slices bacon, chopped into short lengths
1 small white onion, finely chopped
1 (4 ounce) can chopped mild green chilies
1/2 teaspoon kosher salt
2 9-inch pie shells (I used frozen pie shells in foil pans)
1 cup shredded swiss cheese
1/2 cup shredded sharp cheddar cheese
2/3 cup sour cream, divided use
4 eggs, divided use
2/3 cup milk, divided use

Steps:

  • Preheat oven to 400 degrees.
  • (If using pie shells in foil pans, place baking sheet in preheating oven.).
  • In medium saucepan, fry bacon until almost crisp.
  • Add onion and saute, stirring, about 1 minute.
  • Stir in chopped chicken, green chilies and salt.
  • Cook 2 minutes, stirring well.
  • Take off heat, drain any excess drippings& set aside.
  • Divide bacon/chicken mixture and spread evenly between pie shells.
  • Mix cheese together, and spread over bacon/chicken mixture.
  • In small mixing bowl, whisk 1/3 cup sour cream with 2 of the eggs, one at a time.
  • Add 1/3 cup milk; whisk.
  • Pour mixture over one pie pan.
  • Repeat sour cream-egg-milk mixture for 2nd pie pan.
  • (If using foil pie pans, place tarts on heated metal baking sheet.) Place in oven and bake 20 minutes.
  • After 20 minutes, reduce heat to 350 degrees, and bake an additional 25 minutes.
  • Remove from oven and let stand 5 minutes before slicing.
  • Each tart yields 6 small slices.

6 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon pepper
2 tablespoons canola oil
1 cup sliced fresh mushrooms
1/4 cup butter
4-1/2 teaspoons all-purpose flour
1 cup milk
3/4 cup grated Parmesan cheese, divided
Minced fresh parsley
Hot cooked pasta

Steps:

  • Sprinkle chicken with pepper. In a large skillet over medium heat, brown chicken in oil until a thermometer reads 170°. Remove to a serving platter and keep warm. , In the same skillet, saute mushrooms in butter until tender. Sprinkle with flour and stir until coated. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat; stir in 1/2 cup cheese. Pour over chicken. Sprinkle with parsley and remaining cheese. Serve with pasta.
