1 pound farfalle pasta
2 heads broccoli, trimmed to florets (about 4 cups)
1/4 cup extra-virgin olive oil
4 tablespoons butter
3 garlic cloves, chopped
5 anchovy fillets, diced
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Parmesan

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook, stirring occasionally. After 5 minutes, add the broccoli florets to the pasta and stir and cook for another 4 minutes. Drain pasta and broccoli, reserving 1 cup of the pasta water.
  • Meanwhile, in a large skillet, heat the olive oil and butter over medium heat. Add the garlic, anchovies, and red pepper flakes and cook for 5 minutes. Add the broccoli, pasta, salt and pepper and toss. Add some of the reserved pasta water, if necessary, to make a light sauce. Transfer to a serving platter and sprinkle with Parmesan.

Broccoli florets and seasoned chicken breast tossed in a creamy cheese sauce with farfalle (bow-tie pasta). I generally don't measure when I cook so all measurements are approximate. Feel free to add less of more of anything to suite your taste.

2 cooked boneless skinless chicken breasts, diced
2 1/2 cups broccoli florets
1 1/2 tablespoons butter
1 1/2 tablespoons flour
1/2 teaspoon garlic powder
1/4 cup dry white wine
1 cup chicken broth (or 1 cup water with 2 tsp liquid chicken boullion)
1/2 cup cream
1 cup old cheddar cheese, grated
3 -4 cups farfalle pasta

Steps:

  • For the chicken, cook however you want. Grilled, baked, fried, poached. I prefer to seanson with 1 tsp of italian seasoning and grill, but this you can do to your personal preference.
  • Bring a pot of water to a boil. Salt boiling water and cook pasta until done.
  • Meanwhile, steam broccoli florets. I do this in the microwave just to cut down on time. Place broccoli in a bowl with about an inch of water. Cover the bowl with plastic wrap. Make a slit in the plastic for steam to escape. Microwave for 1 1/2 minutes or until desired tenderness is reached.
  • Melt butter in a small pot on Medium-low heat. Add flour and garlic powder and whisk to form a roux. Cook for a few minutes. Add wine and whisk until it is evaporated. Add in chicken stock and then the cream, whisking the whole time.
  • **You need to work quick once you add the wine. If your pot is too hot when you add the wine it can turn your roux into a dough which won't mix into your liquids well.
  • Allow mixture to cook until it begins to thicken. Whisking often to ensure it does not burn. Once thickened add in cheese.
  • **whisk in a zig zag motion to ensure that the grated cheese doesn't turn into a ball in the sauce.
  • Toss pasta with broccoli and chicken and serve.

¼ cup extra-virgin olive oil
3 cloves garlic, minced
3 tablespoons freshly squeezed lemon juice
½ teaspoon salt
⅛ teaspoon ground black pepper
1 (8 ounce) package farfalle (bow tie) pasta
1 head broccoli, cut into florets
¼ cup grated Parmesan cheese

Steps:

  • Warm olive oil in a small frying pan over low heat. Slowly cook garlic in oil until golden, about 2 to 3 minutes. Be very careful not to burn garlic. Stir in lemon juice, and season with salt and pepper.
  • Meanwhile, cook pasta in a large pot of boiling salted water. About 5 minutes before pasta is done, drop broccoli into the pasta water. Continue to cook until pasta is cooked and broccoli is crisp-tender. Drain.
  • Toss pasta, broccoli, and lemon sauce in a large bowl. Sprinkle with grated Parmesan cheese.

A hearty and delicious pasta dish, Broccoli and Chicken Farfalle that is simple enough to make for any day of the week.

Number Of Ingredients 13

2 skinless (boneless chicken breasts (cut into 1 inch pieces))
1 bunch of broccoli (cut into florets)
2 large plump tomatoes (skinned, seeded and diced)
1 medium onion (chopped)
1/4 cup of extra virgin olive oil
3 plump garlic cloves (minced)
a generous pinch or two of red chili pepper flakes
chopped fresh basil (I used approximately 2 handfuls)
salt and pepper
454 grams farfalle pasta
1/3 cup grated Parmigiano Reggiano cheese
extra virgin olive oil for drizzling
2 tablespoons chopped fresh parsley (for garnishing)

Steps:

  • Bring a large pot of water to boil.
  • In the meantime, cut the chicken into 1 inch pieces and set aside.
  • Cut the broccoli into florets, rinse and set aside.
  • Skin the tomatoes, slice in half, remove the seeds and dice into small pieces.
  • When the water is boiling, add the pasta and some salt and cook according to package directions.
  • While the pasta is cooking, heat the oil in a large skillet over medium heat.
  • Add the chicken to the skillet and sautè for about 2 minutes, stirring once or twice.
  • Next, stir in the diced tomatoes, chopped onions, minced garlic, chili pepper, basil and salt and pepper to taste.
  • Reduce the heat and let simmer till the pasta is ready.
  • Three minutes before the pasta is ready toss in the broccoli into the pot with the pasta and stir.
  • Once the broccoli and pasta are ready, reserve about a cup of the pasta water.
  • Drain the pasta and broccoli and toss into the skillet with the chicken and tomato, stirring well.
  • If the pasta seems a little dry you can add some of the reserved pasta water.
  • Stir in the Parmigiano Reggiano and drizzle with some extra virgin olive oil.
  • Plate and serve while hot, topped with chopped fresh parsley for garnish and an extra sprinkle of Parmigiano Reggiano cheese.

1/4 cup finely chopped onions
1 cup corn flakes
