CREAMY LEMON CHEESECAKE BARS



Creamy Lemon Cheesecake Bars image

This bakes out to the perfect texture, and is light as a cloud, I have made this using a vanilla cookie crumb crust also. Although I have not tried it as yet, but I am thinking this might be good using oranges too. This needs to chill for about 5 hours before serving, so plan ahead. I always add in some white sugar to the cream cheese mixture for a sweeter taste, but that is optional.

2 1/2 cups graham cracker crumbs
1/3 cup finely chopped pecans
1/3 cup sugar
1/4 teaspoon cinnamon (optional)
1/2 cup melted butter or 1/2 cup margarine
2 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1/2 cup sour cream
2 large eggs
1 1/2 tablespoons lemon zest (you can use more or less)
1/2 cup lemon juice (I use 1/4 cup fresh and 1/4 cup bottled)
2 drops yellow food coloring (optional)

Steps:

  • Set oven to 325°F.
  • Set oven rack to second-lowest position.
  • Butter an 11 x 7-inch baking pan (can also be made in an 13 x 9-inch pan).
  • In a small bowl combine the graham cracker crumbs, pecans, sugar, melted butter and cinnamon (if using) mix well to combine (you may use just a regular graham cracker crust or a vanilla wafer crust for this).
  • Set aside about 1/2 cup of crumbs for topping.
  • Press the remaining crumbs lightly into prepared baking dish.
  • Bake for 6 minutes.
  • Remove and cool on wire rack.
  • With an electric mixer beat cream cheese in a large bowl until fluffy (about 3 minutes) then add in yellow food colouring (if using).
  • Add in sweetened condensed milk and sour cream.
  • Add in eggs; beat until just combined.
  • Add in lemon juice and zest.
  • Spoon the mixture into crust.
  • Sprinkle with reserved crumbs.
  • Bake for about 30 minutes, or until set (it really should not take much more than 30 minutes to bake).
  • Cool on wire rack for 1 hour.
  • Chill in the refrigerator for a minimum of 5 hours before serving.

This recipe is one of my favorite. Although pineapple comes in almost on top ! LOL. This is so good-you will want to try all the pie filling, apple, pineapple, peach, cherry, strawberry......you can make it bars or into pie- so easy.... This is a family favorite!

FILLING:
21 oz can fruit pie filling, i used blueberry in this one
1 tsp grated lemon juice
8 oz pkg. cream, cheese, softened
14 oz can sweetened condensed milk
2 large eggs
2 Tbsp lemon juice
1 tsp vanilla or almond extract
9 inch pie pan or square baking pan
PIE CRUST:
1 1/2 c vanilla wafer cookies, crushed
1/4 c granulated sugar
1/4 tsp cinnamon
1/4 c soft butter

Steps:

  • 1. Heat oven to 375^. Filling: Chill all but 1 cup pie filling. Combine blueberry filling with 1/2 teaspoon lemon peel, if desired. Pour into pie shell.Bake 9 minutes.
  • 2. Beat cream cheese until fluffy in large bowl. Gradually beat in sweetened condensed milk, eggs, lemon juice, vanilla and remaining 1/2 teaspoon lemon peel. Pour over partially baked pie. Reduce oven temperature to 350^. Bake for 25 minutes more or until set. Cool. Chill. Serve with remaining chilled blueberry filling over top.
  • 3. Crust: Combine crumbs in a medium bowl. Blend with pastry blender. Press evenly on bottom and sides of a 9-inch pie plate(not on the rim) or in the square pan. Fill with filling as directed. Note:You can use a regular pie shell or use chocolate graham crackers(1 1/3 cups) or cinnamon grahams or regular grahams.

1 cup all-purpose flour
1/2 cup ground walnuts
1/3 cup packed brown sugar
1/3 cup cold butter
FILLING:
1 package (8 ounces) cream cheese, softened
1/3 cup sugar
1 egg, lightly beaten
2 tablespoons milk
1 tablespoon lemon juice
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a small bowl, combine the flour, walnuts and brown sugar; cut in butter until crumbly. Set aside 2/3 cup for topping; press remaining crumb mixture into a greased 8-in. square baking dish. Bake 10-12 minutes or until lightly browned., Meanwhile, in a small bowl, beat cream cheese and sugar until light and fluffy. Beat in the egg, milk, lemon juice and vanilla just until blended. Pour over crust; sprinkle with reserved crumb mixture., Bake 15-20 minutes or until filling is set. Cool on a wire rack for 1 hour. Refrigerate at least 2 hours. Cut into bars. Refrigerate leftovers.
