1 package (8 ounces) cream cheese, softened
1 cup Louisiana-style hot sauce
1 cup ranch salad dressing
3 cans (4-1/2 ounces each) chunk white chicken, drained and shredded
1 cup shredded cheddar cheese
Thinly sliced green onions, optional
Corn or tortilla chips
Celery sticks

Steps:

  • In a small bowl, combine the cream cheese, hot pepper sauce and salad dressing. Stir in chicken. , Spread into an ungreased 11x7-in. baking dish. Sprinkle with cheddar cheese. Bake, uncovered, at 350° for 20-22 minutes or until heated through. If desired, sprinkle with green onions. Serve with chips and celery sticks.

1 1/2 lbs chicken tenderloins (cut into 1" pieces)
3/4 cup flour
1 1/4 cups panko breadrumbs
1/2 cup fine cornmeal
1 teaspoon salt
1 teaspoon paprika
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon cumin
1/4-1/2 teaspoon cayenne pepper
2 eggs
1/4 cup Frank's hot WINGS Sauce (not their regular hot sauce *)
2 tablespoons honey
1/4 cup mayonnaise ((I use light))
1/4 cup nonfat Greek yogurt ((may sub mayonnaise))
1 teaspoon Frank's hot WINGS Sauce

Steps:

  • Line a baking sheet with foil. Place a baking rack on top of the foil and lightly spray with nonstick cooking spray. Preheat oven to 425 F.
  • Add flour to a large freezer bag. Mix together Panko Breading ingredients in a separate large freezer bag (or separate large bowl). In a large bowl, whisk together 2 eggs and 1/4 cup hot sauce.
  • Add chicken to flour mixture and toss until coated. Dip chicken in egg/buffalo sauce mixture and let any excess drip off before placing in bag with Panko Breading. Toss with breading until well coated, pressing breading into chicken through the bag.
  • Line chicken on the baking rack, and lightly spray with cooking spray. Bake for 10-15 minutes or until the chicken is cooked through and golden. Broil to desired crispiness.
  • Meanwhile, make the Creamy Honey Buffalo Dip by whisking all the ingredients together except the hot sauce. After chicken is done, taste a piece to decide how spicy you want to make the dip and proceed to add hot sauce. (I use a full teaspoon and it is hot how I like it :) Start popping!

This is my favorite buffalo chicken dip recipe for when I am not trying to be healthy and I have a bit of time on my hands.

1 boneless chicken breast half (fully thawed, fat trimmed and rinsed)
8 ounces cream cheese (I use Philadelphia)
1 cup ranch dressing (I use Hidden Valley)
1/2 cup sweet unsalted butter
1/2 cup cayenne pepper sauce (I use Franks)
1 teaspoon apple cider vinegar
2 garlic cloves
1/4 medium yellow sweet onion
1 cup cheddar cheese (or both) or 1 cup monterey jack cheese (or both)
3 -4 bunches scallions (chopped, just the greens)

Steps:

  • Preheat oven to 375. Dice onion and garlic and spread on chicken breast. Wrap chicken in tinfoil, put on oven safe tray, place on center rack and cook for 16 minutes. Turn chicken over and bake for another 16 minutes. Remove from oven and let stand for 5 minutes. Unwrap and allow to cool enough so that you can shred it.
  • On medium heat, melt butter in small sauce pan. Once butter is completely melted, add hot sauce and apple cider vinegar to the sauce pan and whisk until fully combined. If you like hotter buffalo dip, add cayenne pepper powder. Whisk periodically until the sauce is bubbling, and remove from heat. You can do this while the chicken is cooking.
  • To a medium-sized bowl, add softened cream cheese and ranch dressing. Combine fully before adding the buffalo sauce. Once sauce is added, stir until no longer lumpy. You can also do this while chicken is cooking.
  • Decrease oven temp to 350. Add shredded chicken, garlic and onions to mixture. Move mixture to an 11 x 7 baking dish. Evenly distribute cheese on top. Bake uncovered for 20-25 minutes, or until cheese is bubbling all over. You can always broil at the end if need be. Remove from oven when done.
  • Chop and add scallions (optional).
  • Serve with tortilla chips or whatever you might like.
