Recipe video above. For all those days when nothing but a creamy pasta will do! This one is loaded with all the essential food groups - chicken, bacon, cream and parmesan. It's saucier and richer than the classic Alfredo.

6 oz / 180 g fettuccine or other pasta
5 -7 oz / 150 - 200 g bacon (, chopped)
6 oz / 180 g chicken breast (, cut in half horizontally)
1 tbsp (30 g) butter
2 garlic cloves (, minced)
1/2 small onion (, finely chopped (brown, white or yellow))
3/4 cup (185ml) heavy cream / thickened cream
3/4 cup (185ml) pasta cooking water ( (Note 1))
1/2 cup FRESH grated parmesan ((or 1/4 cup store bought grated) (Note 2))
Fresh parsley

Steps:

  • Bring a large pot of salted water to boil. Add pasta and cook for time per packet MINUS 2 minutes (finishes cooking in Sauce).
  • SCOOP OUT a mugful of pasta cooking water, then drain.
  • Meanwhile, cook bacon until golden, drain on paper towels.
  • Season chicken on both sides, cook in bacon fat, 2 minutes each side.
  • Wipe pan - optional, to keep sauce pretty and white, and for a buttery clean tasting sauce rather than very bacony (Note 3).
  • Over medium heat, melt butter. Add garlic and onion, cook for 3 - 4 minutes until onion is light golden and soft.
  • Add cream, about 3/4 cup pasta water and parmesan. Stir, then simmer for 2 minutes until it reduces slightly - you don't need to be exact here. Season with salt & pepper.
  • Add pasta and toss gently in the sauce for about 1 1/2 minutes. The sauce will thicken and coat the pasta, do this step until you get the sauce consistency you want. If your sauce gets too thick, add a splash of pasta water.
  • Toss through bacon and chicken.
  • Serve immediately, garnished with parmesan and parsley!

1 (16 ounce) package farfalle (bow tie) pasta
½ cup butter
1 (8 ounce) package cream cheese, cubed
2 tablespoons ranch dressing mix
2 cups milk
1 (8 ounce) package shredded Monterey Jack cheese
8 slices cooked bacon, divided
2 cooked chicken breasts, shredded
1 cup shredded Cheddar Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 baking dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, melt butter in a saucepan over medium heat. Add cream cheese and ranch dressing mix; whisk until smooth. Slowly whisk in milk. Stir in Monterey Jack cheese; cook until cheese has melted and sauce has thickened, 5 to 10 minutes. Crumble 6 slices bacon and stir into sauce.
  • Combine cooked pasta and shredded chicken in a large bowl. Pour sauce on top and mix until well combined. Transfer to the prepared baking dish. Top with Cheddar Jack cheese and crumble remaining 2 slices of bacon on top.
  • Bake in the preheated oven until cheese has melted, about 20 minutes.

5 strips thick cut bacon, sliced
1 lb chicken breast, cubed
1 teaspoon seasoned salt
pepper, to taste
1 small onion, sliced
½ lb asparagus, cut into 1-inch or 2 1/2 cm long pieces
3 cloves garlic, minced
2 cups fresh spinach
⅓ cup sun-dried tomato, roughly chopped
6 cups milk
1 lb rotini pasta
1 ¼ cups shredded parmesan cheese

Steps:

  • In a large pot, crisp the bacon on medium heat.
  • Drain excess grease so there's about 3 tablespoons left in the pot.
  • Add in the chicken, season with half of the seasoned salt and pepper, and cook.
  • Once the chicken is nicely browned, remove it from the pan but leave the bacon.
  • Add in the onion and asparagus. Stir until the onions begin to become translucent.
  • Add the garlic and spinach. Stir until spinach is wilted.
  • Add in the sun-dried tomatoes and season with remaining salt and pepper.
  • Pour milk over veggie and bacon mixture, and bring to a boil. Stir periodically so the bottom does not burn.
  • Once milk is bubbling, add pasta and stir frequently until pasta reaches your desired doneness (approximately 10 minutes at medium heat).
  • Stir in chicken and parmesan cheese and mix until cheese is melted.

3/4 cup buffalo sauce
1 cup mozzarella (shredded)

Steps:

Totally made up this recipe because I had chicken breasts, bacon and Atkins penne pasta. I love spicy food and I have tried other buffalo chicken pasta recipes, but this one is the best (if I do say so myself). You can use regular pasta and different cheeses if you wish. You may be able to find some shortcuts since this is a long recipe, but I promise you will be happy if you follow it exactly :)

36 ounces boneless skinless chicken breasts or 3 large chicken breasts
salt and pepper
1 tablespoon olive oil
4 teaspoons Frank's red hot sauce
4 tablespoons wing time buffalo wing sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon red pepper flakes
1/8 teaspoon cayenne pepper
7 slices bacon
8 ounces penne pasta (or any pasta)
2 tablespoons butter
2 tablespoons flour
1 cup skim milk
2 ounces monterey jack pepper cheese
2 ounces shredded colby-monterey jack cheese
3 ounces Velveeta cheese

Steps:

  • Cut up chicken into pieces, season with salt and pepper, and cook in olive oil in large skillet until brown. I had to cook in two batches.
  • Put chicken into large bowl and add hot sauce, buffalo sauce, garlic powder, onion powder, red pepper flakes, and cayenne pepper. Stir until well coated.
  • Cook bacon in microwave for 6 minutes. I use a plate, cover with paper towel, lay bacon on paper towel, then cover with another paper towel. Once cool, crumble into pieces.
  • In a large pot, boil water, add pasta and cook according to directions. Drain in a collander and set aside.
  • In same pot, melt butter. Stir in flour and cook until light brown.
  • Slowly add milk, stirring with a wisk.
  • Add cheeses one at a time until melted.
  • Add salt and pepper to taste.
  • Add pasta and stir until coated.
  • Add chicken and stir until coated.
  • Add bacon and stir until mixed well.
  • Enjoy!
