11 ounces smoked trout (about 3 fillets), coarsely flaked
1 medium Granny Smith apple, peeled, cored, cut into matchstick-size strips
1 cup finely chopped celery (about 2 stalks)
1/4 cup finely chopped fresh chives
1/2 cup sour cream
1/2 cup mayonnaise
1 1/2 tablespoons fresh lemon juice
1 tablespoon (or more) finely grated peeled fresh horseradish or prepared horseradish sauce
1 loaf thinly sliced brown bread (such as Westphalian-style pumpernickel), lightly toasted, cut into triangles

Steps:

  • Mix trout, apple, celery, and chives in large bowl to blend. Whisk sour cream, mayonnaise, lemon juice, and 1 tablespoon horseradish in small bowl to blend. Fold horseradish mixture gently into trout mixture (do not break up trout). Season to taste with salt, pepper, and more horseradish if desired. (Can be made 1 day ahead. Cover and refrigerate.)
  • Transfer trout mixture to serving bowl and place on platter. Surround with toasts and serve.

6 c sliced apples
1/2 c white sugar
1 tsp corn starch
1/2 c evaporated milk
1 c quick cooking oats
1/3 c flour
1/2 c brown sugar
1/2 tsp salt
1 tsp cinnamon
1/3 c butter, melted
1/3 c evaporated milk

Steps:

  • 1. Preheat oven to 325 degrees. Grease an 8x8 baking dish.
  • 2. Place sliced apples in baking dish. Mix sugar and corn starch in medium bowl, stir in the evaporated milk and pour over the apple slices.
  • 3. Mix the oats, flour, brown sugar, cinnamon and salt together. Stir in the melted butter until mixture is crumbly.
  • 4. Spread mixture on top of apples. Spoon 1/3 cup evaporated milk over the topping. Bake at 325 degrees for 60-70 minutes or until apples are tender.
  • 5. Top with freshly whipped cream or vanilla bean ice cream.

3 each red and green cooking apples, sliced
1 cup water
2 Tbsp. lemon juice
1 pkg. (1 oz.) JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding
1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
1/2 cup old-fashioned or quick-cooking oats
1/4 cup granular no-calorie sweetener
2 Tbsp. soft margarine
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg

Steps:

  • Heat oven to 350ºF.
  • Place apples in large bowl. Add water and lemon juice; toss to coat. Stir in dry pudding mix. Add cheese; mix lightly. Spoon into 2-qt casserole sprayed with cooking spray; cover.
  • Bake 40 min. or until apples are tender. Meanwhile, mix remaining ingredients until blended; sprinkle over apple mixture.
  • Bake 15 min. or until topping is golden brown.

My aunt used to make this all the time, I finally got the recipe from her, lol. The only thing I did different was to add whole wheat flour, to make this a little bit healthier. But, this is a perfect fall dessert, especially after going apple picking!

1-1/2 c quick-cooking oatmeal
1 c all purpose flour
1/3 c whole wheat flour
1 c packed, light brown sugar
2 tsp cinnamon
3/4 c cold butter, cut up
6 c chopped, firm apples
1/3 c sugar
2 Tbsp flour
1 tsp cinnamon
1/2 c sugar
1 8 oz pkg reduced-fat cream cheese, softened
2 eggs
2 Tbsp flour
2 Tbsp milk

Steps:

  • 1. Heat oven to 350. Lightly spray a 9" x 13" baking dish w/ cooking spray. In lg bowl, stir together oats, 1-1/3 cups flour, brown sugar, and 2 tsp cinnamon until crumbly.
  • 2. Press 1/2 the mix into bottom of baking dish. Reserve remaining mix for topping. In another lg bowl, toss together apples, 1/3 sugar, 2 tbsp flour, and 1 tsp cinnamon. Spread mix over crust.
  • 3. In another lg bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs, 2 tbsp flour and milk. Beat until combined. Spread over apple mix. Sprinkle w/ remaining reserved oat mix. Bake 40-45 mins, or until golden brown.
