CREAMY BAKED ACORN SQUASH



Creamy Baked Acorn Squash image

This elegant side dish needs almost no prep. Just pop the squash in the oven, then make the rest of the meal.

2 acorn squash (1 pound each), halved lengthwise, seeded, and bottoms trimmed to lie flat if necessary
Salt and pepper
1/4 cup heavy cream
8 sprigs thyme
1/2 cup grated Parmesan (2 ounces)

Steps:

  • Preheat oven to 375 degrees. Place squash halves cut side up on a rimmed baking sheet and season with salt and pepper. Divide cream and thyme among halves.
  • Bake until squash is tender when pierced with the tip of a sharp knife, 35 to 40 minutes. Sprinkle with Parmesan and bake until cheese is melted and golden, 10 to 15 minutes more.

CREAMY ACORN SQUASH AND LENTIL SOUP (VEGAN)

Adapted from an Australian Women's Weekly cookbook. Their version used kumara, which although we can find here, it isn't as easy to find. Good use for a bumper crop of acorn squash in your garden. The lentils in this soup make it thick and creamy. I tried to add chives under the list of ingredients (just for garnish), but the recipe builder wouldn't accept it. Sorry reviewer #1 had such problems with it - not clear why you had to peel hot squash, when you start with the squash peeled and chopped. I upped the prep time based on your comments, although I had no problems doing all the chopping in 15 mins.

2 tablespoons olive oil
1 large onion, diced
1 medium acorn squash, peeled and chopped
1 -2 leaf fresh sage, finely chopped (optional, or use à 1/4 tsp dried)
4 cups vegetable broth
1 cup red lentil, rinsed

Steps:

  • Warm the oil in a soup pot/dutch oven. Add in the onions and allow them to cook over medium heat until translucent (about 5-7 minutes).
  • Add in the acorn squash, let that cook together for a few minutes along with the sage.
  • Add in the broth followed by the lentils; stir well and bring to a boil.
  • Once boiling, bring back down to medium heat, cover and allow to simmer for about 20 minutes, until the squash is soft.
  • With the squash nicely cooked and the lentils cooked and starting to break up on their own, turn the heat off and blend until smooth (either in batches using a blender, or using an immersion blender).
  • Garnish with some fresh chives, chopped or in a few long sprigs. A dollop of something creamy would be great as garnish too.

2 cups pumpkin seeds
1 1/2 teaspoons extra virgin olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
12 tablespoons unsalted butter, diced
6 fresh sage leaves
3 garlic cloves, sliced
2 1/2 lbs acorn squash, halved, seeds removed, peeled and diced
sea salt & freshly ground black pepper
1 quart chicken stock, or as needed
2 tablespoons extra virgin olive oil
1 (8 ounce) skin-on red snapper fillets, scored
sea salt & freshly ground black pepper
2 1/2 tablespoons unsalted butter
2 ounces acorn squash, peeled, seeded, cut into 1/2-inch cubes and blanched
2 ounces savoy cabbage, cut into 1/2-inch squares and blanched
1/4 ounce pea shoots
1 drizzle pumpkin seed oil

Steps:

  • For the spiced pumpkin seeds:.
  • Preheat the oven to 350 degrees F. Toss the pumpkin seeds with the oil and spread on a baking sheet. Bake 15 to 20 minutes, turning the seeds halfway through the cooking time. Remove the seeds from the oven and toss with the salt, garlic powder and paprika. Cool and store in an airtight container.
  • For the squash sauce:.
  • Heat 8 tablespoons of the butter in a heavy-bottomed pan over medium heat. When the foaming subsides, add the sage leaves and garlic. Cook until the sage is crisp, the garlic is lightly colored and the butter has a light-brown color and nutty aroma. Add the squash and toss to coat in the butter. Season with salt and pepper. Pour in enough broth to barely cover the squash and bring to a simmer. Cover the pan and cook until the squash is soft enough to crush with a fork, 10 to 15 minutes. Working in batches if necessary, transfer the mixture to a blender and blend until smooth with the remaining 4 tablespoons butter. Season with salt and pepper and strain the sauce through a fine-mesh sieve.
  • For the fish and vegetables:.
  • Heat 1 tablespoon of the oil in a skillet. Season the flesh side of the snapper with salt and pepper. Once oil is hot, add the fish skin side down to the skillet and cook until the skin is golden and crisp, about 5 minutes. Turn the fish over and finish cooking on the other side. Cover and keep warm.
  • In another skillet, heat the remaining 1 tablespoon oil. Add 2 tablespoons of the butter; once the foaming has subsided, add the squash and cabbage and cook until tender and heated through. Season with salt and pepper.
  • Reheat 3 ounces of the squash sauce; when very hot, remove from the heat and swirl in the remaining 1/2 tablespoon butter. Place the sauce in the bottom of a bowl, add the squash and cabbage and top with the fish. Combine the pea shoots, 1 teaspoon of the spiced pumpkin seeds and a drizzle of pumpkin seed oil in a bowl and use it to garnish the dish.

I love acorn squash with butter and sugar, but since that doesn't go over very well with a low-fat, low-sugar diet I came up with this alternative. Feel free to adjust the seasonings to suit your individual tastes.

2 acorn squash, halved and seeded
1 (8 ounce) package low fat cream cheese
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 tablespoons brown sugar substitute (e.g., Splenda®)
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil; place squash cut-side down onto foil.
  • Bake squash in preheated oven until tender when pierced with a fork, about 30 minutes. Remove from oven, and set aside to cool until cool enough to handle, about 15 minutes.
  • Scoop the cooked squash into the bowl of an electric mixer. Add the cream cheese, then sprinkle with cinnamon, nutmeg, and brown sugar substitute. Beat until smooth, then scoop the squash mixture into a 2 quart baking dish and sprinkle with chopped walnuts.
  • Return the squash to the preheated oven, and bake until hot, about 20 minutes.
