1/2 lb mushrooms, cleaned and sliced
1 Tbsp shallots, finely minced
4 Tbsp butter
2 pkg 10-oz. packages frozen peas
1/2 c cream
8 slice bacon, cooked crisp, drained and crumbled
salt and pepper to taste

Steps:

  • 1. Saute mushrooms and shallots in butter until mushrooms are tender.
  • 2. Add peas and cream and continue cooking until peas are tender.
  • 3. Add bacon and seasonings and toss. Heat through and serve.

Old-Fashioned Creamed Peas uses frozen peas that is jazzed up with a white sauce made of butter, half and half and flour.

16 oz. frozen green peas
2 Tablespoons butter
2 Tablespoons flour
1 cup half and half
1/2 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Cook peas according to package instructions. I prefer this method. In a small saucepan, boil a small amount of salted water (approximately 4 cups). Pour the boiling water over the frozen peas just until they are covered. You may not need all the water. Let sit for 3 to 5 minutes or until cooked.
  • In a medium saucepan, melt butter. Add flour and stir until smooth. Let cook for additional 30 seconds to remove raw flour taste.
  • Over medium heat, slowly add in half and half to the butter/flour mixture while constantly whisking. Bring to a boil while constantly whisking, and let boil for approximately three minutes until it thickens.
  • Add salt and pepper to the sauce.
  • Drain the peas, and add to the white sauce; stir. Cover with a lid and cook until the peas are hot and the sauce is creamy, approximately 2 to 3 minutes.
  • Taste, add more salt and pepper if needed.

2 tablespoons butter
1 small onion, thinly sliced and separated into rings
4 to 6 ounces thinly sliced mushrooms
2 tablespoons all-purpose flour
1/4 cup water, low sodium vegetable broth, or chicken broth
1/2 cup milk
1 package (10 to 12 ounces) frozen peas, cooked
dash ground nutmeg
dash ground black pepper
salt, to taste

Steps:

  • Gather the ingredients.
  • In a medium saucepan, melt butter over medium-low heat. Add the mushrooms and onions and sauté, stirring, until mushrooms are golden and onions are tender.
  • Stir in flour until well blended. Continue cooking for 2 minutes, stirring constantly.
  • Gradually add the chicken broth and milk to the roux and mushroom mixture. Continue cooking, stirring, until the sauce is thickened.
  • Add the hot cooked and drained peas to the sauce and stir to blend.
  • Taste and add a dash of ground nutmeg, freshly ground black pepper, and salt, to taste.

2 cups frozen green peas
2 tablespoons butter
1 cup sliced fresh mushrooms
1 small chopped onion
1 tablespoon all-purpose flour
1 cup light cream
¼ teaspoon salt
¼ teaspoon ground black pepper
1 pinch ground nutmeg

Steps:

  • Fill a small saucepan with one inch of water. Bring to a boil, add peas, and cook until tender, about 5 minutes. Drain and set aside.
  • Melt butter in a medium saucepan over medium heat. Add mushrooms and onions, and cook for a few minutes, or until tender. 2 1/2 cups frozen peas
1/4 cup butter
2 green onions, chopped
8 ounces fresh mushrooms, quartered
2 tablespoons flour
3/4 cup half-and-half (or evaporated milk)
1 teaspoon sugar
1/4 teaspoon thyme
1/8 teaspoon nutmeg
1/2 teaspoon savory
1/4-1/2 teaspoon salt
