2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1-1/2 cups spreadable chive and onion cream cheese
1 cup grated Parmesan cheese
1 cup shredded part-skim mozzarella cheese
1/4 cup butter, cubed
1/4 teaspoon pepper

Steps:

  • In a large saucepan, combine all ingredients. Cook and stir over medium heat for 8-10 minutes or until blended and heated through.

CREAMED SPINACH WITH CRISPY CHEESE



Creamed Spinach with Crispy Cheese image

Number Of Ingredients 11

2 tablespoons unsalted butter
1 medium onion, finely chopped
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
2 tablespoons all-purpose flour
3 tablespoons heavy cream
One 10-ounce package frozen chopped spinach, thawed and drained
1 cup grated white Cheddar
Juice from 1/2 lemon
Hot sauce, to taste
3/4 cup grated Parmesan

Steps:

  • Melt the butter in a medium pot over medium heat. Add the onion and sprinkle with salt and pepper. Cook until the onion is soft and translucent, 5 to 7 minutes. Add the garlic and cook for about a minute longer. Stir in the flour until combined and cook for 2 minutes to cook out the flour taste. Add the heavy cream and cook, stirring, until the sauce is thick and there are no lumps, about 5 minutes.
  • Add the spinach, breaking up any frozen chunks with the back of a wooden spoon. Stir to combine with the creamy mixture until uniformly incorporated. Taste and season with salt. Cook until the spinach is heated through and mixture begins to bubble, about 3 minutes. Add the Cheddar, lemon juice and hot sauce. Season with salt and pepper. Turn to the lowest setting.
  • Heat a large nonstick pan over medium-high heat and line a baking sheet with parchment paper. Make 2-tablespoon mounds of Parmesan in the pan, leaving 3 inches between each (work in batches if your pan isn't large enough). Allow the Parmesan to melt and bubble until it starts to brown around the edges. Use an offset spatula to carefully lift each cheese crisp to the lined baking sheet. Allow to cool for 2 minutes. Crumble or serve whole on top of the creamed spinach.

Number Of Ingredients 18

2 pounds russet potatoes, peeled and chunked, 3 large potatoes
Salt and pepper
1/2 cup half-and-half or cream, eyeball it
4 ounces, 1/2 cup garlic and herb cheese (recommended: Boursin)
3 tablespoons chopped chives or, 2 scallions, thinly sliced
1 1/4 pounds ground beef sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 small onion, finely chopped
1 tablespoon steak seasoning blend (recommended: Montreal Seasoning by McCormick) or, coarse salt and pepper
Extra-virgin olive oil, 3 tablespoons, 3 turns of the pan
12 crimini or baby portobellos, sliced
12 shiitake mushrooms, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef stock
2 boxes frozen chopped spinach, 10 ounces, defrosted in microwave
2 tablespoons butter, cut into pieces
1/2 cup heavy cream

Steps:

  • Place potatoes in a pot and covered with water. Cover pot with lid and bring water to a boil. Salt boiling water and potatoes. Leave lid off pot and simmer at rolling boil until tender, 8 to 10 minutes.
  • While potatoes cook, combine meat, Worcestershire, onion and steak seasoning or salt and pepper. Form 2 large, oval patties, 1-inch thick.
  • Preheat large nonstick skillet over medium high heat. Add a tablespoon of extra-virgin olive oil and the meat patties to a hot pan. Cook meat 6 minutes on each side until meat is evenly caramelized on the outside and juices run clear. Remove meat and cover with loose tin foil to keep warm. Add 1 more turn of the pan extra-virgin olive oil and butter to the pan, then the mushrooms. Season mushrooms with salt and pepper and saute mushrooms until tender, 3 to 5 minutes.
  • While mushrooms cook, squeeze defrosted spinach dry by wringing it out in a kitchen towel. To a small skillet, add butter and cream and heat to a bubble over moderate heat. add spinach and salt and pepper. Cook until spinach thickens with cream, 3 to 5 minutes.
  • To mushrooms, add a sprinkle of flour to the pan and cook 2 minutes more. Whisk in stock and thicken 1 minute.
  • While sauce thickens, drain potatoes and return to hot pot. Smash potatoes with a little half-and- half or cream and garlic and herb cheese. Smash and incorporate chives. Add salt and pepper, to your taste.
  • To serve, pour gravy over Salisbury steak. Serve potatoes and creamed spinach alongside the steaks. Now that's a TV dinner, DELUXE!

4 tablespoons butter
1 tablespoon flour
1/2 cup whipping cream
7 ounces spinach, chopped
1/4 cup whipping cream
5 eggs separated
1/4 teaspoon finely ground black pepper
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon freshly ground nutmeg
2 ounces firm goat cheese
3 teaspoons red pepper jelly
butter to grease ramekins

Steps:

  • Melt butter in heavy saucepan over medium heat then add flour and cook 5 minutes. Slowly stir in 1/2 cup whipping cream and season with salt, pepper, cayenne and nutmeg. Reduce heat and cook 30 minutes then remove from heat Preheat oven to 400 then grease 6 ramekins with butter. In separate pot bring 1 cup water to a boil then add a little salt and spinach. Cook 5 minutes then drain and stir spinach into sauce. Add 1/4 cup cream and egg yolks the stir well. Whisk egg whites to stiff peaks then carefully combine with spinach mixture. Avoid deflating foam as much as possible then distribute equally over ramekins Top each ramekin with small pieces of goat cheese and 1/2 teaspoon of pepper jelly Bake 20 minutes then serve immediately.

This is a popular side at our place. It serves four moderately, 2 generously.
4-6 slices of pancetta
1/2 medium yellow onion, chopped
1-2 T pine nuts
3 oz cream cheese
2 oz blue cheese or similar
1/2 tsp salt
6 oz baby spinach, washed and patted dry

Steps:

  • In a large, heavy frying pan cook pancetta till crisp but not brown. Remove pancetta from pan, reserve. Add onion to pancetta fat in pan, saute until transparent. Add pine nuts, salt and cheeses. Stir a bit, 1-2 minutes, then add spinach. Stir untill spinach is wilted and chese is completely melted. Serve immediately, topped with reserved pancetta slices.

2 pkg (10 oz.) frozen chopped spinach
2 Tbsp butter
1/2 c chopped green onion
4 clove garlic, minced
4 oz cream cheese
1/2 c milk
1 pinch nutmeg
1/4 c grated parmesan (optional)

Steps:

  • 1. Thaw spinach and squeeze all the water out. (I put it in a colander and use a potato masher to squeeze all the water out.) Set aside.
  • 2. In a large sauce pan, heat butter over medium heat. Add green onion and garlic, season with salt and pepper. Cook just until flavors are brought out.
  • 3. Add cream cheese and milk, cook, stirring constantly until cream cheese is melted.
  • 4. Stir in spinach and simmer until mixture is warmed through. Season with salt & pepper to taste. Garnish with a little grated parmesan cheese if desired.
