This is how they make asparagus around my dh's house. It is enough to make a meatless meal. It's very satisfying.

1 lb asparagus
3 tablespoons flour
1/2 cup milk
1 teaspoon salt
1/2 teaspoon pepper
6 slices bread, toasted

Steps:

  • Cut asparagus into 1 inch pieces; cover with water and boil until tender.
  • Add flour to milk; stir so there are no lumps.
  • Drain asparagus, keeping 1 cup liquid.
  • Add the milk mixture, salt and pepper. Cook until thick.
  • Meanwhile, toast the bread, cut into points (halves).
  • Pour creamed asparagus over toast.

My mom made this when I was a kid. My wife makes it for me often. It's easy and delicious. I am not a big fan of asparagus prepared any other way. I like to pour over one slice of toast, add another on top, and then pour more over it.

2 pounds fresh asparagus, trimmed
5 tablespoons butter, divided
3 tablespoons all-purpose flour
2 cups milk
1 teaspoon salt
6 slices bread, toasted

Steps:

  • Place asparagus into a large pot or skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 8 to 10 minutes. Drain.
  • Mix 3 tablespoons butter and flour together in the same pot over medium-low heat until flour is dissolved and mixture is smooth, 2 to 3 minutes. Add milk, asparagus, and salt to butter-flour mixture and simmer until thickened, 10 to 15 minutes.
  • Spread about 1 teaspoon butter onto each piece of toast. Pour creamed asparagus over each piece of toast.

1 pound asparagus, trimmed
1 tablespoon unsalted butter, softened
4 (1/2-inch-thick) slices good-quality white bread such as a pullman loaf, crusts discarded
1 cup heavy cream
1/4 cup finely chopped cooked sliced Virginia country ham
1/2 teaspoon finely chopped garlic

Steps:

  • Steam asparagus in a steamer rack over boiling water, covered, until crisp-tender, about 4 minutes. Transfer to a plate and keep warm, loosely covered with foil.
  • Put broiler pan (with unlined rack) in broiler and preheat broiler 5 minutes.
  • Generously butter bread slices on 1 side, then halve diagonally. Arrange bread, buttered sides up, on rack of hot broiler pan and broil 4 to 5 inches from heat until golden-brown in some spots and undersides are toasted, 2 to 3 minutes (watch carefully).
  • Briskly simmer cream, ham, garlic, and 1/8 teaspoon pepper in a 12-inch heavy skillet, stirring occasionally, until sauce has thickened and is reduced to about 3/4 cup, about 3 minutes. (If necessary, keep warm, covered.)
  • Arrange asparagus on toast, then stir sauce and spoon over asparagus.

3 green onions with tops, chopped
1/2 teaspoon seasoning salt

1 cup sour cream
1/3 cup dry vermouth
1/3 cup parmesan cheese, grated
1/4 cup seasoned bread crumbs, as needed

Steps:

  • Cook asparagus spears in boiling water for about 5 minutes, or until fork tender but not mushy (bigger stalks may take longer); drain well.
  • Combine remaining ingredients, except bread crumbs.
  • Combine sauce with asparagus and spread into a baking dish.
  • Sprinkle bread crumbs over the top- enough to thoroughly dust the surface.
  • Bake, uncovered, in a preheated 400F oven about 15 minutes or until cooked through.

1/4 cup plus 3 tablespoons butter, divided

2 cups whole milk
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs
4 slices bread, toasted and halved

3 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon nutmeg
13 ounces mushrooms, drain but reserve broth
milk
1/4 cup sour cream
4 slices toast
chopped pimentos, if desired

Steps:

  • Melt butter and stir in four, salt and nutmeg.
  • Drain broth from mushrooms and add milk to broth to make 1-1/4 cups.

1 bunch asparagus
1 tablespoon extra virgin olive oil
1/2 teaspoon sea salt
1/4 teaspoon cracked black pepper
3 tablespoons unsalted butter
3 tablespoons all purpose flour
3 cups milk
8 slices sourdough bread, toasted
Additional salt and pepper to taste

Steps:

  • Roasted Asparagus: Cut woody ends (about 1 inch) from asparagus and toss with olive oil then spread coated asparagus evenly on a roasting pan and sprinkle salt and pepper. Roast at 400 degrees for 25 minutes, 3 minutes longer for softer texture. Whit sauce: Melt butter over medium heat, add flour stir and cook out flour (about 30 seconds) then slowly add milk. Stir or whisk frequently until sauce thickens. Remove from heat. Chop roasted asparagus into 1 inch pieces and add to sauce. Save 8 stalks (2 per serving) for garnish. Toast bread and spoon creamed asparagus over toast. Garnish with asparagus stalks. Salt and pepper to taste.
