TOMATO GORGONZOLA SOUP

3 tablespoons unsalted butter
2 large yellow onions, chopped
4 cloves garlic, chopped
3 tablespoons all-purpose flour
2 ounces (1/4 cup) cognac
1 1/2 pounds red-skinned potatoes, peeled and quartered
4 cups low-sodium chicken broth
1 35 -ounce can whole peeled tomatoes, crushed, juices reserved
2 3/4 cups heavy cream
2/3 cup crumbled gorgonzola cheese, plus more for garnish
2/3 cup fresh basil, plus more for garnish
Kosher salt and freshly ground pepper
2 teaspoons cider vinegar

Steps:

  • Melt the butter in a large stockpot over medium heat. Add the onions and cook until softened, about 5 minutes. Add the garlic and cook until fragrant, about 2 minutes. Add the flour and cook until lightly toasted, about 2 minutes. Add the cognac and scrape the pan with a wooden spoon to release any browned bits.
  • Add the potatoes and broth to the stockpot and bring to a boil. Reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  • Add the tomatoes and their juices, cream, gorgonzola and basil. Season with salt and pepper. Using an immersion blender, or in batches in a blender, puree until smooth. Add the vinegar and serve in warm bowls with more basil and gorgonzola.

¼ large red onion, diced
½ cup red bell pepper, diced
2 cloves cloves garlic, minced
¼ cup Gorgonzola cheese, crumbled
4 ounces cream cheese, softened
¼ cup heavy cream
¼ cup milk
1 (14.5 ounce) can diced tomatoes
1 ½ cups tomato juice
2 teaspoons dried basil
1 teaspoon white sugar
¼ teaspoon ground white pepper

Steps:

  • Heat oil in a medium saucepan over medium heat. Add the onion, pepper, and garlic; cook and stir 4 to 5 minutes or until vegetables are soft.
  • Add the cheeses, cream, and milk; heat mixture until cheeses melt and the mixture is simmering.
  • Stir in the tomatoes (including their liquid), tomato juice, basil, sugar, and pepper. Continue to simmer mixture for 15 to 20 minutes while stirring constantly. Do not boil.

3 tablespoons good olive oil
1 1/2 cups chopped red onions (2 onions)
2 carrots, unpeeled and chopped
1 tablespoon minced garlic (3 cloves)
4 pounds vine-ripened tomatoes, coarsely chopped (5 large)
1 1/2 teaspoons sugar
1 tablespoon tomato paste
1/4 cup packed chopped fresh basil leaves, plus julienned basil leaves, for garnish
3 cups chicken stock, preferably homemade
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
3/4 cup heavy cream
Croutons, for garnish

Steps:

  • Heat the olive oil in a large, heavy-bottomed pot over medium-low heat. Add the onions and carrots and saute for about 10 minutes, until very tender. Add the garlic and cook for 1 minute. Add the tomatoes, sugar, tomato paste, basil, chicken stock, salt, and pepper and stir well. Bring the soup to a boil, lower the heat, and simmer, uncovered, for 30 to 40 minutes, until the tomatoes are very tender.
  • Add the cream to the soup and process it through a food mill into a bowl, discarding only the dry pulp that's left. Reheat the soup over low heat just until hot and serve with julienned basil leaves and/or croutons.

I am not a tomato soup fan but this is really great and very easy. The recipe is from Cafe Gondolier with some subtle changes.

1/2 cup diced onion
1/2 cup diced red bell pepper
2 minced garlic cloves
2 tablespoons olive oil
16 ounces canned diced tomatoes (do not drain)
1 cup low-sodium tomato juice
4 ounces crumbled gorgonzola
4 ounces cream cheese
1/2 cup half-and-half
1 teaspoon salt
1 teaspoon sugar
2 teaspoons dried basil
ground pepper

Steps:

  • Heat oil in a sauce pan.
  • Add onions, garlic and bell pepper.
  • Saute over medium high heat until onion is translucent, about 3 to four minutes.
  • Reduce heat to medium.
  • Add cream, Gorgonzola and cream cheese, breaking cream cheese apart with a wooden spoon as you add it to the pot.
  • Bring to a simmer.
  • Add tomatoes and juices, tomato juice and other ingredients.
  • Bring to simmer again, stirring CONSTANTLY, for about 10 minutes.
  • Serve with fresh ground pepper.

2 Tbsp butter
1 small onion finely chopped
1 clove garlic, minced
1 qt tomatoes, with juice. home canned preferred
1 1/2 tsp chicken base
2 Tbsp sugar
1/4 tsp baking soda
2 Tbsp basil, fresh, chopped
1/2 tsp oregano
1/2 c heavy cream
1/2 c gorgonzola cheese, crumbled
2 Tbsp parsley minced

Steps:

  • 1. Melt butter in a heavy saucepan and sauté onions 2-3 min til softened. Add garlic and sauté another 3 min. Roughly chop tomatoes if they are whole, reserving all juice.
  • 2. Add tomatoes including all juice in jar. NOTE: if you use store bought canned or fresh ripe tomatoes you may want to add 1/2 cup or so of chicken broth.
  • 3. Add chicken base, sugar, baking soda,basil, parsley, oregano and salt and pepper to taste. Simmer on medium heat about 12-15 minutes. Using a stick blender, blend until smooth. Stir in cream and cheese reserving 3 tablespoons for garnish.
  • 4. Simmer another 5-7 minutes. Garnish with remaining cheese and parsley Serve piping hot with crostini or croutons.

1/2 cup onion, diced
1/4 cup celery, diced
1/4 cup carrot, diced
2 tablespoons vegetable oil
1 garlic clove, minced
28 ounces canned tomatoes, chopped and undrained
2 tablespoons tomato paste
1 cup water
1 tablespoon fresh basil, minced
1 teaspoon granulated sugar
4 ounces gorgonzola, crumbled

Steps:

  • In a heavy pot saute the onion, celery and carrot in the oil until the onion is soft, about 7 minutes.
  • Stir in the garlic and saute briefly, about 30 seconds.
  • Add the tomatoes and their juices, tomato paste, water, basil and sugar. Bring to a simmer and cook until carrots are tender.
  • Remove from the heat, add the gorgonzola, cover and let sit for 3 minutes, stir to blend. Salt and pepper to taste.
