4 chicken breasts, large;
1 can (10 ¾ oz.) condensed cream of mushroom soup;
1 can (10 ¾ oz.) condensed cream of chicken soup;
1 cup sour cream;
1 can (8 oz.) mushrooms (stems and pieces), drained;
½ cup water;
½ tsp onion powder;
1 tsp chives, chopped;
½ tsp paprika;
½ tsp salt;
½ tsp pepper.

Steps:

  • Preheat oven to 350°F.
  • Place the chicken breasts on a lightly greased with non-stick cooking spray 9x13 inches baking pan, sprinkle with salt and pepper.
  • In a bowl, mix together the cream of mushroom soup, cream of chicken soup, sour cream, mushrooms, water, onion powder, and chives. Then, spoon this mixture over chicken breasts in baking pan and sprinkle with paprika.
  • Bake in the preheated oven for one hour or until chicken breasts are ready and cream mixture is lightly browned. Check the readiness of chicken breasts with a cooking thermometer (the safe internal temperature for cooked chicken is 165°F). Enjoy with your favorite side dish.

1 (10.75 ounce) can milk

1 medium onion, peeled & sliced

This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter, melted
4 cups water
1 (32 fluid ounce) container chicken stock
salt and ground black pepper to taste
3 skinless, boneless chicken breast halves, cubed
1 (24 ounce) container sour cream, or to taste
1 (26 ounce) can condensed cream of chicken soup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
  • Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. I made this on the fly for dinner this week. I used what I had in the kitchen...and it was easy and delicious. This can be served with orzo, pasta, mashed potatoes, rice, or even couscous (to give you some ideas). We served it with cream cheese mashed potatoes the first night...and since we had lots of leftovers, served it mixed with rigatoni pasta and an extra can of 98% fat free condensed cream of chicken soup and 1/4 cup water.

3 lbs boneless skinless chicken breasts
1 (10 ounce) can 98% fat-free cream of chicken soup

8 ounces baby carrots
1/8 cup butter, sliced

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup sour cream
1/2 cup water
1 teaspoon minced chives
Salt and pepper to taste
1/2 teaspoon paprika
