12 ounces seafood cocktail sauce

Steps:

  • Mix crab meat and cream cheese together. Spread into a 9 inch size pie pan or similiar size dish. Pour cocktail sauce over crab meat mixture to cover completely. Sprinkle with parsley. Refrigerate at least 1 hour to blend flavors. Serve with assorted crackers.

Crust:
3/4 cup real butter, softened
1 1/2 - cups all purpose flour
1/2 - cups pecans, chopped
Filling:
1 - 8 oz package cream cheese, softened
1 1/2 - cups powdered sugar
1 - cup cool whip
1 - 2 bananas, sliced
1 - 3 oz package instant banana cream pudding
2 - cups milk
Topping:
remaining cool whip
1/2 - cup vanilla wafers, crushed

Steps:

  • Preheat oven to 350 degree. Prepare crust by adding the butter and flour to a bowl and blend using a large fork or pasty blender. Add chopped pecans and mix. Press mixture into the bottom of a 8 x8 or 9 x 7 x2 inch pan. Bake at 350 degrees for 18-20 minutes or until light golden brown. Remove from oven and let cool. While the crust is cooling prepare the filling. In a large bowl using a kitchen aid mixer or a hand mixer add the softened cream cheese and powdered sugar. Cream the mixture until combined. Fold in 1 - cup cool whip and set aside. Prepare pudding according to package directions adding the 2 cups milk. Using a wire whisk, mix the pudding until thickened. When the crust is completely cooled spread on the cream cheese mixture evenly. Add a single layer of sliced bananas. Add the banana cream pudding and spread evenly. Top with remaining cool whip. Sprinkle the crushed vanilla wafers evenly over the top. Be sure to seal all edges. Chill for at least 2 - 3 hours before serving. Cook's Note: Pecans can be omitted if you have a nut allergy or just prefer a plain shortbread crust.

1 angel food cake
3 ounces instant vanilla pudding
8 ounces crushed pineapple
2 cups whipping cream
1/2 cup chopped pecans
1/2 cup sliced strawberry
4 tablespoons rum
strawberry
pecan halves

Steps:

  • Cut off top of cake 1 inch down from top. Scooping carefully, make a tunnel in bottom part of cake, 1 inch from sides and bottom.
  • Mix dry pudding mix and pineapple (including juice) and let stand.
  • Whip 1 cup of cream, add nuts, sliced berries and pineapple mixture, folding completely.
  • Sprinkle rum around inside cake tunnel and cake top,.
  • Fill tunnel with cream mixture and replace top on cake, pressing gently to seal.
  • Whip remaning cream and add remainder of filling that didn't fit into the cake. (Hopefully you have some left!)
  • Frost cake and decorate with whole berries and pecans.

1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a large bowl, combine the wafer crumbs, sugar and butter; set aside 1/4 cup. Press the remaining crumb mixture into a 13-in. x 9-in. dish. Cover and freeze 15 minutes. , Place hot fudge topping in a microwave-safe bowl; cover and microwave on high for 15-20 seconds. Spread over crust. , Spoon ice cream over fudge layer. Place spoonfuls of sherbet over ice cream; cut through sherbet with a knife to swirl. Top with raspberries. 1/4 cup sugar
1/2 cup cold butter
RHUBARB LAYER:
3 cups sliced fresh rhubarb (1/2-inch pieces)

CREAM LAYER:
12 ounces cream cheese, softened
1/2 cup sugar
2 large eggs
TOPPING:
1 cup sour cream
2 tablespoons sugar
1 teaspoon vanilla extract

Steps:

  • For crust, combine the flour and sugar; cut in the butter until the mixture resembles coarse crumbs. Pat into 10-in. pie plate; set aside. , For rhubarb layer, combine the rhubarb, sugar and flour; toss lightly and pour into crust. Bake at 375° for 15 minutes. Meanwhile, prepare cream layer by beating together cream cheese and sugar until light and fluffy. Beat in eggs, one at a time. Pour over hot rhubarb layer. Bake at 350° for 25-30 minutes or until almost set. Remove to a wire rack. Combine topping ingredients; spread over hot cream layer. Cool completely. Chill.

2 pkg 8 oz. ea. cream cheese, softened
1 c granulated sugar
1 large egg yolk
1 tsp vanilla extract
2 can(s) 8 oz. ea. pillsbury refrigerated crescent dinner rolls
1 c chopped pecans
1/2 c packed brown sugar
2 Tbsp melted butter
2 tsp ground cinnamon
garnish: powdered sugar, optional

Steps:

  • 1. Preheat oven to 375^. In a large bowl, beat the cream cheese and sugar with electric mixer on medium speed until fluffy. Add egg yolk and vanilla; beat on low speed until blended.
  • 2. Unroll 1 can of dough into a large rectangle; press seams and perforations to seal. Press onto bottom of ungreased 13x9-inch glass baking dish. Spread with cream cheese mixture.
  • 3. In a small bowl, mix pecans, brown sugar, butter and cinnamon. Sprinkle 1/2 the mixture over cheese layer. Repeat with the remaining dough and place over filling. Sprinkle the remaining nut mixture over top.

2 (8 ounce) packages cream cheese, at room temperature (I use 1/3 less fat)
2 (8 ounce) packages crescent roll dough (I use the low-fat kind)
1 cup sugar
1 teaspoon vanilla
1/2 cup butter, melted
1/2 cup sugar
1 teaspoon cinnamon

Steps:

  • Grease 9x13 pan.
  • Preheat oven to 350°F.
  • Spread one can of crescent dough on bottom of pan.
  • Mix softened cream cheese, 1 cup of sugar and vanilla until smooth, and spread on top of crescent dough.
  • Spread 2nd can of dough on top of cheese mixture. Be careful not to leave too many gaps in dough.
  • Pour melted butter all over crescent dough.
  • Mix 1/2 cup sugar with 1 teaspoons of cinnamon. Sprinkle on top of butter. Use all of it--it looks like a lot, but it's just right.
  • Bake for 30 minutes.
  • Allow to cool before cutting.
  • Serve with coffee, milk or ice cream!

CREAM CHEESE FILLING:
1 (8-ounce) pkg cream cheese, room temperture
1 c confectioner's sugar
1 egg, room temperture
3 Tbsp unsalted butter, melted
1 Tbsp fresh lemon juice, (juice from 1/2 of a large lemon
1 tsp lemon extract
1/2 tsp vanilla
zest of 1/2 of a large lemon
CAKE BATTER
2/3 c all purpose flour
1/3 c sugar
2 tsp baking powder
1/2 tsp kosher salt
1/2 c unsalted butter, melted and slightly cooled
2 eggs, room temperture
2 Tbsp fresh lemon juice, (juice from 1 large lemon)
1/2 tsp vanilla
lemon zest, from 1 1/2 large lemons
1 c frozen blueberries, or fresh
confectioners' sugar (optional for dusting cake)
BLUEBERRY SAUCE
1 Tbsp cornstarch
1/4 c sugar
2 c frozen blueberries, or fresh
1 Tbsp fresh lemon juice (juice of 1/2 large lemon)
zest of 1 small lemon
1/2 tsp vanilla extract
pinch of salt
WHIPPED CREAM TOPPING
1 c very cold heavy whipping cream
1/4 c powdered sugar
1/2 tsp lemon extract

Steps:

  • 1. First; set out butter, cream cheese and eggs about an hour prior to baking and let them come to room temperture.
  • 2. Preheat oven to 325 degrees. Prepare 10-spring from pan with cooking spray. I used "Joy Baking Spray". Go ahead and zest and juice your lemons; set aside. 1 1/2 large lemons for cake batter and 1/2 lemon for filling. And, if you are making the blueberry sauce you will need to zest and juice 1/2 large lemon.
  • 3. CREAM CHEESE FILLING: In the bowl of stand mixer, beat cream cheese on medium-high speed until smooth about 5 minutes, scraping bowl as needed. Add confectioners' sugar and beat another 2 to 3 minutes. Add egg; beat until completely combined, about 1 minute. Add butter, lemon juice, lemon and vanilla extract and zest; beat 1 minute; set aside.
  • 4. CAKE BATTER: In a batter bowl (or large bowl) combine flour, sugar, baking powder and salt; whisk together. Whisk in melted butter, eggs, lemon juice and vanilla; don't over beat. Gently fold in blueberries.
  • 5. Pour batter into 10-inch prepared spring-form pan. Gently pour cream cheese filling into center of cake batter; spread gently to within 1/2 of sides of pan (the filling should cover all of the cake batter except for 1/2-inch of the outter edge of the cake batter, 1/2-inch of the batter should be visable).
  • 6. Bake at 350 degrees for 35 to 40 minutes or until until toothpick inserted near the edge of cake comes out clean. Remove from oven and cool on wire rack for 10 minutes. Carefully remove sides from spring-form pan and allow cake to cool for 1 hour.
  • 7. BLUEBERRY SAUCE: In a small saucepan, add the cornstarch and sugar. Whisk together. Stir in 1 cup of the blueberries, the lemon juice, zest, vanilla and salt. Cook the mixture over medium heat for 4-5 minutes, until thickened. Stir in the remaining blueberries and cook for 2 minutes. Cool and store in the refrigerator for up to a week.
  • 8. WHIPPED CREAM TOPPPING: Pour cold whipping cream into a cold bowl. Beat on high speed of hand mixer until it starts to thicken; add sugar and lemon extract; continue beating until it forms a peak. Refrigerate until ready to serve.
  • 9. When cake is completely cool; spinkle with powered sugar; slice and serve as is.
  • 10. Or, add whipped cream and blueberry sauce! Keep any remaining cake refrigerated. ENJOY!

  • Preheat oven to 375°. In a large skillet, melt butter over medium heat. Add almonds; cook and stir 2-3 minutes or until toasted. Stir in Rice Chex, coconut, brown sugar and salt. Press onto bottom of an ungreased 13x9-in. baking dish. Bake 5-6 minutes or until edges are golden brown. Cool 10 minutes; place in freezer 30 minutes., Gently spread ice cream over crust. This is a very pretty and easy cake with a very light, not too sweet simple cream cheese frosting...

1 - container of cool whip (8 oz.) defrosted
1 package(s) cream cheese (8 oz.) room temperature
1 teaspoon(s) vanilla extract
1 can(s) cherry pie filling (21 oz.)

Steps:

  • Prepare white cake mix as directed on box.
  • Bake in 2 greased cake pans (8 inch or 9 inch pans).
  • Let cakes cool
  • Prepare frosting by mixing softened cream cheese, defrosted cool whip and vanilla extract with hand mixer until blended and smooth.
  • Place one completely cooled cake layer on a serving platter. Frost with about 3/4 cup frosting. Top with second cake layer. Frost top and sides of cake.
  • Begin to place cherries on top of cake with a teaspoon one at a time starting in the center, (trying not to add too much of the cherry pie filling syrup or jell to avoid cherries sliding off)
  • Once the top of the cake is covered in cherries, add cherry pie filling syrup/jell to the edges of cake and allow to drip down the sides of cake.
  • Refrigerate for 1-2 hours before serving

A cookie crust topped with ice cream, peanuts and homemade caramel and chocolate sauce...no wonder this dessert was such a hit at my future daughter-in-law's bridal shower.

1 package (15-1/2 ounces) Oreo cookies, crushed
1/3 cup butter, melted
1/2 gallon vanilla ice cream, softened
1-1/2 cups salted peanuts
CARAMEL SAUCE:
1 cup packed brown sugar
1 cup heavy whipping cream
1/2 cup butter, cubed
1 teaspoon vanilla extract
CHOCOLATE SAUCE:
1 can (12 ounces) evaporated milk
1 cup semisweet chocolate chips
1/2 cup butter, cubed
2 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a bowl, combine cookie crumbs and butter; press onto the bottom and up the sides of an ungreased 13-in. x 9-in. dish. Spread ice cream over crust; sprinkle with peanuts. Cover and freeze for at least 1 hour., For caramel sauce, in a small saucepan, combine the brown sugar, cream and butter. Bring to a boil; cook and stir for 1 minute. Remove from the heat; stir in vanilla. Cool. Drizzle over peanuts. Cover and freeze for at least 1 hour., For chocolate sauce, in a large saucepan, combine the milk, chocolate chips and butter. Cook and stir over low heat until melted and smooth. Stir in confectioners' sugar. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened, stirring frequently. Remove from the heat; stir in vanilla. Cool. , Drizzle over dessert. Cover and freeze for 2 hours or until firm.

1-1/2 cups pumpkin pie filling
1 cup finely chopped pecans, toasted
1/3 cup sugar
1 teaspoon vanilla extract
1 quart vanilla ice cream, softened

Steps:

  • In a large bowl, mix pie filling, pecans, sugar and vanilla until blended. Fold in ice cream. Transfer to an 8-in. square dish coated with cooking spray. Freeze, covered, 3-4 hours or until firm.

2 cups heavy whipping cream
¾ cup white sugar
4 egg yolks
1 ½ cups whole freshly roasted coffee beans
1 cup whole milk
½ teaspoon vanilla extract
¼ teaspoon salt

Steps:

  • Place the bowl of ice cream maker in the freezer.
  • Combine cream, sugar, and egg yolks in a saucepan; cook and stir over medium-low heat until mixture is heated through but not boiling, 10 to 15 minutes. Remove saucepan from heat and add coffee beans. Transfer cream mixture to a bowl and refrigerate, 8 hours to overnight.
  • Strain coffee beans out of cream mixture. Stir milk, vanilla extract, and salt into cream mixture; transfer to bowl of ice cream maker.
  • Process cream mixture in the ice cream maker according to manufacturer's instructions.
