This recipe has evolved over the years. Back in the 80s when invited to a party, I would slam a block of cream cheese on a platter, throw a couple cans of canned shrimp on top, then cover the whole thing with a bottle of chili sauce, or cocktail sauce. Surround it with Ritz crackers, and there ya go! Not to say that old way...

1 (8 ounce) container chive & onion cream cheese
1 1/2 lb large shrimp, peeled and deviened (can use smaller or jumbo, adjust roasting time)
2 Tbsp olive oil
1 12 oz bottle chili sauce, such as heinz
1 c celery, finely diced
4 green onions, finely chopped
2 tsp horsey, or horseradish sauce
1 tsp hot sauce, or to taste
1/2 Tbsp fresh lemon juice
buttery crackers, or crackers of your choice

Steps:

  • 1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  • 2. Pat shrimp dry with paper towels and place shrimp in large bowl. Add olive oil, salt and pepper, to taste, and gently toss to combine. Place shrimp onto baking sheet lined with parchment, leaving space between them. Put sheet into oven and roast just until pink, firm and cooked through, about 6-8 minutes. Remove from oven and let cool before dicing into bite-size pieces. (If you need to get this together faster, I put a baking sheet in the freezer until cold, then put the diced roasted shrimp on it and stuff it in the freezer for about 15 minutes to chill.).
  • 3. Mix together the chili sauce, horseradish sauce, hot sauce, chopped celery, and half of the chopped green onions. Add shrimp and place in refrigerator to chill.
  • 4. With a hand mixer or stand mixer, beat together the cream cheeses until very smooth. Spread onto a rimmed serving plate, (an offset spatula is helpful here), into a smooth frosting-like layer of equal thickness. Cover lightly with waxed paper and place in refrigerator to chill.
  • 5. When ready to serve, use a slotted spoon to place shrimp mixture on top of cream cheese base on the plate and sprinkle with remaining chopped green onions.
  • 6. Serve with buttery crackers (and knife for spreading, if desired.)

30 medium cooked shrimp (rinsed, patted dry and tails cut off) tiny salad shrimp can be used also
1 c ketchup (Brooks is best)
3-4 tsp hot horseradish
1-2 tsp sweet relish (drained)
2 tsp lemon juice
few dashes tobassco sauce or louisiana hot sauce
1 small container whipped Philadelphia Cream Cheese (with or with out chives)
30 Rtz or Townhouse crackers

Steps:

  • 1. Mix together ketchup, horseradish, sweet relish, lemon juice, Tabasco in small bowl ... spread a small spoon of whipped cream cheese on each cracker making a small well in center, add a small amount of cocktail sauce in well, place 1 shrimp in center or 2 small salad shrimp. Make up party platter with sprigs of parsley for garnish and Enjoy !
  • 2. Note: You can omit the hot by using other horseradish of your choice.

This recipe came about from a mix of several other recipes I have made over the years, and it has become a favorite. 35 years ago I would slap a brick of cream cheese on a platter, toss my homemade cocktail sauce with some canned or frozen shrimp, throw some crackers around the edge, and here ya go! I think you will agree that this recipe is much more sophisticated and tastes wonderful. Give this a try, any shrimp cocktail lovers will not be able to stay away! Cook time includes chilling time.

I have been serving this shrimp ball appetizer for 45 years and it is always a big hit. It is simple and easy to prepare and good for all seasons.

1 (4.5 ounce) can cooked salad shrimp
1 (8 ounce) package cream cheese, softened
1 small onion, minced
1 tablespoon prepared horseradish
½ cup ketchup
2 tablespoons prepared horseradish
2 tablespoons lemon juice

Steps:

  • Chop shrimp into small pieces. Mix with cream cheese, onion, and 1 tablespoon horseradish sauce. Form mixture into a ball, wrap in plastic wrap, and refrigerate for 8 hours, or overnight.
  • Mix ketchup, horseradish, and lemon juice for sauce together until well blended. Cover and refrigerate until chilled, about 30 minutes.
  • Unwrap shrimp ball and place on a platter. Pour sauce over top and serve.

Found this in Kraft Foods Magazine and sounds easy great for when companies coming. Once I pick up all the ingredients I plan on making it as a dip that's just a little different. Also suggested a substitute of 1 8oz package of chopped crabmeat for the shrimp. Will serve with crackers. Edited to change amount of shrimp to 3/4 pound based on flowers post.
