This easy dip with Midwestern roots is the perfect thing for last-minute company because it only has 4 ingredients--most of which you likely already have in your refrigerator. Enjoy it slathered on a rich buttery cracker or some crisp fresh vegetables.

12 ounces cream cheese, a room temperature
3/4 cup finely chopped dill pickles (from about 2 large pickles)
4 ounces thick-sliced deli ham, finely chopped (about 1/2 cup)
Freshly ground black pepper
Crackers, sliced cucumbers and carrot sticks, for serving

Steps:

  • Combine the cream cheese, chopped pickles, ham and a hefty pinch of black pepper in a medium bowl. Stir until well combined. Serve at room temperature so it is spreadable, along with crackers, sliced cucumbers or carrot sticks.

My family and I LOVE pickle roll ups...but what a pain to make!! A friend at work brought this to a potluck, and OMG I was HOOKED!! Waaaaay easier, and every bit as yummy! Hope you enjoy!

8 ounces sour cream (I put a little less to make a little thicker)
8 ounces cream cheese
2 (2 ounce) packages carl buddig corned beef or 2 (2 ounce) packages ham, cut into small pieces
0.5 (16 ounce) jar dill pickles, diced
1 dash garlic powder
1 dash onion powder

Steps:

  • Blend together sour cream and cream cheese with hand mixer until smooth. Add everything else and mix until well-blended. (I usually hand mix in the pickles last).
  • Serve with plain bagels, pretzel or pita chips, or anything you wish!
