RASPBERRY CREAM CHEESE COFFEE CRUMB CAKE
Taken on this site http://www.dairygoodness.ca And a friend of mine did it 2 years ago. It's really good. She used frozen raspberries instead of jam. And she used the juice from the defrosted raspberries.

Steps:
- Combine flour and 2/3 cup sugar in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Set aside 1 cup of crumb mixture.
- To remaining crumb mixture, add baking powder and baking soda. Mix well.
- Combine sour cream, 1 egg and lemon rind. Add to baking powder mixture. Stir until just moistened. Spread batter over bottom and part way up the side of greased 9-inch springform or 10-inch round fluted quiche pan with removable bottom that is 1-1/4-inches deep.
- Beat together Cream Cheese, 1/3 cup sugar and remaining egg until combined. Pour over batter in pan. Carefully spoon jam over cheese filling. Sprinkle reserved crumb mixture over top.
- Bake in 350 °F oven 45 minutes or until filling is set and crust is deep golden brown. Cool in pan on wire rack. Remove side of pan and cut into wedges to serve.
- Do-ahead tip: Wrap cooled coffee cake in foil and freeze for up to 1 week.

SASKATOON BERRY CREAM CHEESE CRUMB CAKE
Delicious cross between a crisp and a crumb cake. Saskatoon berries (or blueberries) and cream cheese flavours go so well together. Cake will be a little crumbly to eat, but it is very, very delicious!

- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
- Whisk brown sugar, 1 1/2 cups flour, oats, and cinnamon together in a bowl; gradually stir in oil until mixture is crumbly. Press half the crumb mixture into the prepared pan; set remaining crumbs aside for topping.
- Bake in the preheated oven until firm, about 10 minutes. Remove crust from oven and cool slightly, leaving oven on.
- Place serviceberries and water in a saucepan. Bring to a simmer and cook for 10 minutes; stir in lemon juice. Whisk white sugar and 2 tablespoons flour together in a small bowl; stir sugar mixture into berries and cook until the mixture begins to thicken, about 3 minutes. Allow to cool for a few minutes; pour berry filling over crumb crust.
- Sprinkle cream cheese pieces evenly over berry filling. Spread remaining crumb mixture over cream cheese layer and press gently with a potato masher.
- Bake in the preheated oven until crumb topping is golden and filling is bubbly, about 40 minutes.

BLUEBERRY CREAM CHEESE CRUMB CAKE
Yum! This blueberry crumb cake is delightful. The cake dense and slightly sweet. You get a great surprise when you bite in and taste the cream cheese and blueberries in the middle. The crumb topping adds a little crunch. This will be great for breakfast, brunch or even dessert if you don't like overly sweet desserts.

- 1. Grease a 9 x 13 pan and pre-heat oven to 350. For the filling, beat together cream cheese and sugar.
- 2. Once creamed, add vanilla and egg. Set aside.
- 3. For the cake, in another bowl combine flour, baking powder, baking soda, and salt.
- 4. In a separate bowl, cream together butter, granulated sugar, eggs and vanilla.
- 5. Add the flour mixture alternately with the sour cream into the wet batter until well blended.
- 6. Pour half the batter into a well-greased 9x13 pan.
- 7. Spread the cream cheese filling over the batter.
- 8. Place about a pint of blueberries, I use a little more, over the cream cheese mixture. Cover the cream cheese layer with remaining batter.
- 9. For the crumb topping, using a pastry blender combine cold butter, flour and sugar until the mixture looks like small peas.
- 10. Sprinkle the crumb topping over the top of the cake. Bake in a 350 oven for 55- 60 minutes. Test in center with toothpick. DO NOT LET THE TOP GET BROWN! It will be overbaked and dry!
- 11. Let cool, cut and enjoy!!
CREAM CHEESE-FILLED CRUMB CAKE
I adore Entenamann's cheese filled coffee cake and wanted to try my own. Original recipe from Teriskitchen.com. I halved the crumbs/batter for my square pan, but not the filling, as I like mine loaded. :)

- Preheat oven to 350°F
- Grease a 13x9x2-inch cake pan.
- In a large bowl, combine the butter, flour, sugar, salt and baking powder. Mix with your hands to form crumbs (I used a small handheld pastry blender).
- Take out just enough for crumbs on top of cake, about 3/4 cup. Set aside. To the remaining crumbs add the eggs and milk; beat well.
- Place all filling ingredients into a medium bowl and beat with a whisk or mixer until smooth.
- Spread half the batter into the cake pan (batter is very thick and sticky).
- Pour the cream cheese mixture on top to within about 1/2-inch of the edges.
- Gently spread the remaining batter on top of the cream cheese (I dropped little dollops of it all across the top, as it was so thick it didn't spread well, especially on top of liquid cream cheese).
- Sprinkle the top with the reserved crumbs.
- Bake for 40-45 minutes or until cake tester inserted in center comes out clean.
- Remove from oven and set on a rack to cool.
- To serve, cut into squares.
- Leftover cake should be refrigerated after a day.

- Heat oven to 375 degrees F. Spray 8 regular-size muffin cups with cooking spray.
- In small bowl, stir cream cheese and powdered sugar until smooth. Set aside. In another small bowl, using fork or pastry blender, mix melted butter, 4 tablespoons of the flour and the granulated sugar until mixture looks like coarse crumbs. Set aside.

- For the coulis: Put all the ingredients in medium sauce pan and cook over medium (not high!) heat until fruit is mostly dissolved and mixture has reduced a bit as well as thickened up; about 30 minutes or more. Strain through a fine mesh sieve, pushing down on the solids. You might have to let this sit for a while to finish draining-it takes a while. Don't forget to scrape off the bottom side of the sieve for all the juicy, thickened pulp. Discard the seeds. Taste and add more sugar or lemon juice if needed; it shouldn't need anything. Cover and refrigerate until ready to serve. For the crumb topping: In a medium bowl, combine all dry ingredients, pour melted butter over mixture, and toss with a rubber spatula until large crumbs form. Set aside Cream cheese mixture 8 ounces cream cheese, room temp. 1 large egg yolk 3 TB white sugar 1 TB fresh lemon zest 2 TB or more of the coulis (optional, but wonderful) For the cream cheese mixture: Mix all in a bowl (really well) until ready to use. For cake: Place rack in center of oven, and heat oven to 350°. Lightly butter a 9 x 13 baking pan and dust with flour, and tap to remove excess. (I've also used the Pam with Flour and it worked just fine). Set aside. In a medium bowl, sift together 2 ¼ cups flour, add in the granulated sugar, baking powder, and salt; set aside. In a second bowl, whisk together egg, butter, half & half, canola oil, sour cream, and vanilla. Using a rubber spatula, fold dry ingredients into wet mixture. Spread batter evenly into prepared pan, and set aside. (to keep batter from sticking to your hand or spoon, just wet or oil your fingers or a spoon and spread evenly throughout pan). The batter should be about half an inch high. It will cook/rise to an inch thick. (Don't worry if the batter is very thin and hard to get into the corners, it does spread out as it's cooking). Use wet fingers to push batter into corners. Next put on the cream cheese mixture either in one single layer, clumps or vertical lines. You can make swirls if you want too, I did not. Next add on the crumbs. Then drizzle on the coulis (if it helps put the coulis in a pastry bag and draw lines). Then transfer pan to oven, and bake for 14 minutes, rotate pan. Then cook another 10 minutes or until a cake tester comes out clean. Check cake at 25 minute mark for sure. Let cake cool and set up before slicing. Using a serrated knife or bench scraper, cut into 3-inch squares. Store in an airtight container for up to 2-4 days. cake:
