1 Cup Yellow Mustard
1 Tbsp Frank's RedHot Original Hot Sauce
1/8 Tsp Cayenne Pepper
2 Tsp Light Brown Sugar
1 Tsp Apple Cider Vinegar
1/2 Tsp Kosher Salt

Steps:

  • In a small bowl, mix all the ingredients together until well combined.
  • Let the sauce sit for at least 1 hour in the refrigerator. This will allow all the flavors to meld. You can use it immediately, but the longer you let it sit in the refrigerator, the more flavorful it will be.

3 teaspoons Dijon mustard
3 teaspoons flour, plain white
3 teaspoons mustard powder
1 teaspoon horseradish, grated
1/2 teaspoon white pepper
1 teaspoon caster sugar
1/4 teaspoon salt
5 ounces water, hot

Steps:

  • Combine all ingredients EXCEPT water and mix well.
  • Then add the water, mix well and simmer for 2 minutes.
  • Remove from heat and allow to cool to room temperature.
  • Transfer to an air-tight jar and store sealed, in the refrigerator.

SPICY HOMEMADE DIJON-STYLE MUSTARD



Spicy Homemade Dijon-Style Mustard image

1 1/2 cups fresh white grape juice
1 cup dry white wine
1 1/2 tablespoons white-wine vinegar
1 teaspoon salt
1/4 teaspoon white pepper
1 large shallot, very finely chopped
2/3 cup mustard powder
1 tablespoon olive oil
Honey to taste

Steps:

  • In a saucepan, combine 1 cup of the grape juice, the wine, vinegar, salt, pepper and shallot. Place over medium heat and cook until reduced by half. In another saucepan, simmer the remaining 1/2cup grape juice over medium-low heat for 5 minutes. Set aside.
  • Place the mustard powder in the container of a blender. With the motor running, and using a fine-mesh sieve, strain the wine-and-juice reduction through the lid opening of the blender. Add the oil and blend for a few more seconds.
  • Scrape the mustard into a bowl and let stand 1 hour. Correct the texture and seasoning by adding 1 teaspoon at a time of the reserved grape juice and a little honey. Keeps refrigerated for 1 month.

1/2 cup tarragon or cider vinegar
1/2 cup water
1/4 cup olive oil
2 tablespoons prepared horseradish
1/2 teaspoon lemon juice
1 cup ground mustard
1/2 cup sugar
1/2 teaspoon salt

Steps:

  • In a blender or food processor, combine all ingredients; cover and process for 1 minute. Scrape down the sides of the container and process for 30 seconds. , Transfer to a small saucepan and let stand for 10 minutes. Cook over low heat until bubbly, stirring constantly. Cool completely. If a thinner mustard is desired, stir in an additional 1-2 tablespoons water. Pour into small airtight containers. Store in the refrigerator.

1 teaspoon salt
1/4 teaspoon turmeric
6 ounces flat beer or 6 ounces ale

Steps:

1/2 cup Coleman's dry mustard
1/2 cup hot tap water
1/2 cup white wine vinegar or 1/2 cup rice vinegar
2 teaspoons kosher salt
1 tablespoon bottled horseradish
1 clove garlic, peeled and sliced
1 teaspoon sugar
6 whole black peppercorns, crushed in a mortar,or pinch of ground black pepper
2 whole allspice berries, crushed in a mortar,or small pinch ground allspice
dry white wine, optional

Steps:

  • Stir together the dry mustard and water and let stand, uncovered, for 20 minutes, stirring once or twice.
  • In the container of a blender or a food processor, combine the vinegar, salt, horseradish, garlic, sugar, peppercorns, and allspice.
  • Process until the garlic and horseradish have been pureed in the liquid, then strain through a fine-meshed strainer, pressing all juice from any pulp in the strainer.
  • Combine the strained liquid with the mustard-water mixture in the top of a double boiler set over simmering water.
  • Cook, stirring constantly, for about 5 minutes, or until the mustard has thickened (it will thicken more while cooling).
  • Cool and taste.
  • Add more prepared horseradish, if desired, and if the mustard seems too thick, thin it with a few drops of white wine or additional vinegar.

GREEN PEPPERCORN MUSTARD

6 tablespoons white mustard seeds
3 tablespoons green peppercorns
2 tablespoons honey
60 ml cider vinegar (1/4 cup)
1 tablespoon salt
1/2 teaspoon nutmeg, ground
1/4 teaspoon allspice, ground

Steps:

  • In a blender grind mustard seeds finely.
  • In a glass or ceramic bowl, mix together mustard powder and 3 tablespoons water and leave to stand 30 mins.
  • Blend mustard mixture and the rest of the ingredients until mustard acquires a grainy texture. If mixture seems too dry, add a little more water or honey.
  • Cover and let stand 12 hours before pouring into sterilised jars.
  • Seal.
  • Store in a cool, dark place 2 weeks before using.
  • Refrigerate after opening.
