1 cup yellow cornmeal
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 onion, chopped
1 green bell pepper, chopped
1 (4 ounce) jar diced pimentos, drained
⅓ cup vegetable oil
1 cup shredded Cheddar cheese
1 (15 ounce) can cream-style corn
⅓ cup chopped jalapeno pepper
1 pound peeled crawfish tails
1 pinch seasoned salt, or to taste
1 pinch cayenne pepper, or to taste
1 pinch garlic powder, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Stir together cornmeal, baking soda, and salt in a large bowl. In another bowl, beat together the eggs, onion, green pepper, pimentos, vegetable oil, Cheddar cheese, cream-style corn, jalapeno pepper, crawfish tails, seasoned salt, cayenne pepper, and garlic powder until the mixture is well combined. Pour the crawfish mixture into the cornmeal mixture, and stir together. Pour the mixture into the prepared baking dish.
  • Bake in the preheated oven until the cornbread is lightly golden brown, and a toothpick inserted into the center comes out clean, about 55 minutes. Allow to rest for about 10 minutes before serving.

This recipe was in our local paper during the holidays. I haven't tried it yet but plan to soon. I have had a commercially made version of this and it was fairly good but I think homemade anything is much better! Hope you'll give it a try and let me know how you like it. Edited: I finally made this and it is a wonderful recipe. Many people don't have crawfish, so I think lightly boiled shrimp could easily be substituted for the crawfish. Also, 1/2 tsp cajun seasoning could be added for an extra kick.

1 (14 ounce) can cream-style corn
1 1/2 cups grated cheddar cheese

5 cloves garlic, minced
3 stalks celery, diced
1 yellow onion, diced
1 green bell pepper, diced
2 cups seafood stock
3 tablespoons chopped fresh parsley
3 tablespoons tomato paste
1 teaspoon chopped fresh thyme
2 bay leaves
Cayenne, as needed
Smoked paprika, as needed

1 cup white rice
2 cups yellow cornmeal
1 tablespoon sugar
2 teaspoons baking powder

Steps:

  • For the crawfish etouffee: First, you make a roux. In a Dutch oven, add the butter over medium-high heat and melt. Add the flour and whisk until combined and there are no lumps in the flour. Continue to stir with a wooden spoon until the butter and flour mixture browns to the color of a shopping bag, 10 to 15 minutes. Make sure to stir continuously and do not allow the mixture to burn. If you notice little black specks, discard the roux and start over.
  • Once the roux is sufficiently dark, add the garlic, celery, onion and bell pepper and stir. Cook for 5 minutes, then add the seafood stock and bring to a simmer. Add the parsley, tomato paste, thyme, bay leaves and some cayenne, paprika, salt and pepper. Stir and continue to simmer for another 10 minutes. Add the crawfish tails and simmer for another 10 minutes.
  • Taste for seasoning and adjust if necessary. Remove the bay leaves before serving.
  • For the rice: Over medium-high heat, bring 2 cups of water to a boil with the salt. Add the rice and return to a boil with a lid. Reduce to a simmer, keep covered and simmer until the rice is fully cooked, about 20 minutes. Reserve for serving.
  • For the cornbread: Put a 10- to 12-inch cast-iron skillet in the oven and preheat to 425 degrees F.
  • In a mixing bowl, combine the cornmeal, sugar, baking powder, salt and baking soda. In another mixing bowl, combine the buttermilk, creamed corn and eggs and whisk until the eggs are broken apart. Add the dry ingredients to the wet ingredients and whisk until everything is incorporated.
  • Carefully remove the cast-iron skillet from the oven. Coat the inside with the canola oil, then pour the cornbread batter into the skillet. Place the skillet back in the oven and bake until the top is golden brown and the inside is cooked all the way through, about 20 minutes. Flip the cornbread upside-down onto a cutting board. Reserve for serving.
  • For the fried catfish: In a shallow pan or baking dish, combine the cornmeal, cayenne, paprika, chili powder, salt and pepper and stir to evenly spread the spices throughout the cornmeal. Hit each side of each catfish fillet with a few drops of a Louisiana-style hot sauce and spread it around. Dredge the fillets in the cornmeal mixture, generously coating both sides with it.
  • In a deep fryer with oil set to 375 degrees F (or a cast iron skillet with oil heated to 375 degrees F), fry the catfish in batches until golden brown, 4 to 5 minutes. Drain on a pan lined with paper towels.
  • For the grilled asparagus: Prepare a grill or grill pan for medium heat.
  • Cut the white woody ends off of the asparagus and discard. Put the asparagus in a shallow dish, drizzle with olive oil and toss with some salt and pepper. Grill for 3 to 5 minutes, then flip the asparagus to grill the other side for another 3 to 5 minutes. Transfer to a serving plate and toss with the lemon juice.

1 medium yellow onion, chopped (2/3 cup)
Half a medium bell pepper, chopped (1/2 cup)
1 tablespoon butter (I used salted)
4-5 green onions (tops only), chopped
2 fresh jalapeno peppers, seeded and sliced (or chopped)
2 cups yellow corn meal (I used Aunt Jemima's)
3 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 extra-large eggs, lightly beaten
1/2 cup oil (I used canola)
1 cup milk (I used 2%)
1 1/2 cups cheddar cheese, grated, shredded, or cubed
1 (11 ounce) can Green Giant Niblets whole kernel corn, drained
1 teaspoon Tony Chachere's Original creole seasoning
Garlic salt, to taste
Black pepper, to taste

Steps:

  • Generously grease a 10x10 (or equivalent) baking dish or cast iron skillet. Prep the onion, bell pepper, green onions and jalapenos (keep the green onions and jalapenos separate from the chopped onion and bell pepper). If crawfish are large, cut them in half then rinse them and drain in a colander. Drain the corn. Set everything aside. In a mixing bowl, whisk together the cornmeal, baking powder, baking soda, and 1/4 teaspoon salt. Set aside. Preheat the oven to 350 F. Melt the butter in a medium skillet over medium heat; add the onion, bell pepper, and a little salt and black pepper and saute just until onions are beginning to turn translucent, stirring frequently so they don't brown. Remove from heat (don't turn off the burner) and stir in green onions and jalapenos. Add the drained crawfish and sprinkle top with the creole seasoning and garlic salt; return to heat for 3-4 minutes just to warm it through, stirring frequently. Remove from heat and set aside. Meanwhile, whisk the lightly beaten eggs, oil, and milk into the cornmeal mixture. Fold in the cheese and drained corn. Stir in the crawfish mixture just until combined. Pour into the prepared baking dish. Bake for 40-45 minutes, or until center tests done with a wooden toothpick and top is browned. 6 thick slices smoked bacon, cut into 1/2-inch pieces
3/4 pounds andouille sausage, cut into 1/2-inch dice
1 large sweet onion, diced
1 medium red bell pepper, diced
1/2 cups diced celery
2 jalapeño chiles, seeded, chopped
1 tablespoon minced garlic
1 tablespoon fresh thyme leaves
3 cups cooked crawfish tails or small shrimp
4 scallions, sliced
1/4 cup chopped parsley
2 tablespoons Creole spice
2 cups reduced-sodium chicken broth
1 cup heavy cream
2 large eggs

Steps:

  • Heat oven to 300°F. Place cornbread in a large roasting pan. Bake 30 minutes, gently stirring cubes twice, until lightly toasted and firm. Cool completely. Place cubes in a large bowl. Butter a 13 x 9 x 2-inch baking dish. Cook bacon in a large skillet over medium heat until crisp and fat has been rendered; remove with a slotted spoon and drain on paper towels. To drippings in skillet, add andouille, onion, bell pepper, celery, chiles, garlic, and thyme; sauté 10 minutes, stirring frequently, or until andouille is golden brown. 3 cups day-old sourdough breadcrumbs, crumbled
3 tablespoons butter
1 cup finely-diced onion
1 cup celery
3 garlic cloves, minced
1 tablespoon poultry seasoning
3 teaspoons red pepper flakes, crushed
2 teaspoons Tabasco sauce (more to taste)
salt and pepper
1 (10 1/2 ounce) can cream of shrimp soup
1 (15 ounce) can sweet cream-style corn
1 1/2 lbs cooked peeled crawfish tails (I use frozen)
3 cups stock (I use vegetable, but stock made from turkey neck is acceptable if you aren't vegetarian)

1/2 cup fresh parsley, chopped

  • Thaw crawfish tails.
  • Saute' onion, celery, and garlic in butter until soft.

3 box jiffy cornbread mix
3 eggs
1 c buttermilk
1/4 c vegetable oil
2 c cheddar cheese, grated
1/2 yellow onion, chopped
1 can(s) sweet cream style corn
1/4 c jalapeno peppers, chopped
2 lb crawfish tails, chopped
2 tsp tony chachere's creole seasoning
1 bunch green onion tops, chopped

Steps:

  • 1. Preheat oven to 325 degrees. While the oven is warming up, pour a capful of vegetable oil in a 13x9-inch pan and place back in oven.
  • 2. Combine all ingredients in large mixing bowl until thoroughly mixed. Once mixed, take pan out of the oven and make sure the oil saturates the entire bottom of the pan.
  • 3. Once complete, pour mix into pan. Bake for 1 hour or until toothpick comes out clean from the middle of the pan.

2 jalapeno peppers, finely chopped 1 onion, finely chopped
1/2 cup bell peppers, finely chopped
1/2 tsp baking soda
1 tsp salt
1/2 cup oil
3 tsp baking powder
1 cup milk

Steps:

  • Directions Saute onions and bell pepper in a small amount of butter until the onions are transparent. Add jalapeno peppers and set aside. Mix together all other ingredients, except crawfish. Add in cooked onions and peppers. Then stir in crawfish or meat. Pour into a lightly greased 13x9 inch pan and bake in a 400 degree oven for 35 to 40 minutes.

Mi-Mi's Crawfish Cornbread image

Our family loves crawfish and loves cornbread! This was always a win-win combination, all in one meal for us. Unlike most corn breads that do not reheat well, this is almost better reheated than just out of the oven, moist and tasty. It freezes well also!

1 medium onion, minced
2 clove garlic, minced
1 can(s) rotel tomatoes
1 medium bell pepper, minced
4 Tbsp butter
2 pkg 12 oz crawfish, cut in half
4 oz cream cheese
3 pkg cornbread mix (6 oz.)
3 large eggs, beaten
8 oz sharp cheddar, grated
1 tsp garlic powder
1 tsp tony chachere's seasoning
3/4 c milk
1/4 c cooking oil
1 can(s) whole corn, small and drained
1 can(s) cream style corn, small
2 Tbsp oil for skillet

Steps:

  • 1. Sauté the vegetables in the butter for about 3 minutes. Add the crawfish tails (cut them in half before adding) and the cream cheese and heat through for 2 more minutes. Let set off heat while preparing the corn bread mix.
  • 2. Heat oven to 375. Put the 2 tablespoon of cooking oil in the skillets and place in the oven while it is heating. (This will fit in 10' and 5' skillets). A 9x13 pan will accommodate it as well, I use the skillets because we like the crunchy cornbread bottom! =)
  • 3. Stir together the cornbread mix and the rest of the ingredients in a large bowl, just until mixed. Fold in the sautéed vegetables and crawfish just until blended.
  • 4. Carefully remove your skillets or casserole dish to the stovetop and carefully pour the mixture into it. Place in oven and cook until done. Done is inserting a fork or knife into the middle and it comes out almost dry. DO NOT overcook. This tends to cook a little more after taking out, while resting. Enjoy...
