Dough for single-crust pie
1-1/2 cups fresh or frozen cranberries
1/4 cup packed brown sugar
1/4 cup chopped walnuts
1 large egg
1/2 cup sugar
1/2 cup all-purpose flour
1/3 cup butter, melted
Vanilla ice cream

Steps:

  • Preheat oven to 375°. On a lightly floured surface, roll pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge., Spread cranberries evenly into crust; sprinkle with brown sugar and walnuts. In a bowl, beat egg on high speed until thick and pale yellow, about 5 minutes. Gradually beat in sugar. Beat in flour and melted butter (mixture will be thick). Spoon over cranberries, spreading evenly., Bake on a lower oven rack until crust is golden brown, 40-45 minutes. Cover pie loosely with foil during the last 10-15 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack. Serve warm with ice cream.

Something Special from Wisconsin. The state fruit is the cranberry, and of course, Wisconsin is the dairy state. The ingredients in this seasonal pie bake up into a wonderful treat for Thanksgiving. Our family first had this pie at the Elegant Farmer in East Troy Wisconsin. It took us quite a few attempts to recreate it. I think this is pretty close. You can make your own crust, or use a prepared one. Timing based on using prepared crust.

2 cups fresh cranberries
1 cup whole walnut halves
1/4 cup brown sugar
1/2 cup sugar

3/4 cup sugar
1/2 cup butter, melted

Preheat oven to 450°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. 3 cups Flour
1 cup sugar
1/2 cup packed dark brown sugar
1 teaspoon salt
1 tablespoon cinnamon
8 ounces of unsalted butter or shortening
Pie Filling( for each pie)
6-8 medium to large apples cored peeled and sliced
(preferably 20 ounce, Ida Red or Crispin variety of apples)
1 cup of fresh cranberries
1 cup of chopped walnuts
1 cup of sugar
1 and 1/2 tablespoon of cinnamon
3 tablespoons of flour or cornstarch mixed with sugar and cinnamon
Crust ( Makes enough for 3-4 crusts)
6 cups all purpose flour
2 sticks or 12 ounces of shortening
1 1/4 cup of milk
1 Tablespoon of salt
2 Tablespoons of sugar

Steps:

  • Crust Directions ( can be made by hand or using the paddle on a stand mixer) 1. Cut shortening into flour till small pieces of flour and shortening form the size of small pebbles. 2. Mix milk, sugar and salt together stirring to mix them together. 3. Pour all at once into the flour shortening and mix till it all comes together in a clump and uniform in consistency. 4. Wrap in plastic wrap and refrigerate till morning or for at least 1 hour. Notes: If the dough is too sticky the moisture will be absorbed by the flour overnight. Do not mix too long or the dough will not be flaky. Crumb Directions Place all dry ingredients in mixing bowl with mixer fitted with a paddle Slice butter or shortening into smaller pieces and place with dry ingredients Blend at medium speed till mixture is uniform in color and texture. Stop when mixture holds together when pressed together but easily crumbles apart when run through fingers Assemble pie 1. Mix apples, nuts, cranberries and dry ingredients together in a bowl. 2. Roll out crust and place in pie dish. 3. Mound apple mixture in pie till well above sides of pan ( apples will decrease greatly during baking) 4. Top pie with crumb mixture. 1 keebler graham cracker pie crust
1 (16 ounce) can whole berry cranberry sauce, divided

Steps:

  • In large bowl beat milk, pudding mix and lemon peel with wire whisk for 1 minute.
  • (Mixture will be very thick.) Whisk in half of the whipped topping.

Steps:

  • Preheat oven to 400 degrees. Place flour, sugar, vanilla, lime zest and salt in a food processor. Start the processor and through the feed tube add the pieces, one at a time. Process until a ball of dough forms on top of the blade. Remove from machine. Pick up chunks of the dough and press them into a well-greased 9-inch glass pie plate. Smooth the pieces together with your fingertips and bring the rim up a little higher than the pan edge. Flute or scallop it, cover and chill thoroughly. 1 c walnut halves
1/3 c granulated sugar
2 c all purpose flour
1/2 c butter, cubed
2 eggs, divided
1 tsp vanilla extract
FILLING
1 Tbsp butter
1/3 c packed brown sugar
1/2 tsp cinnamon, ground
5 sweet apples such as royal gala, peeled, cored and sliced into1/4 inch slices
2 c fresh or frozen cranberries
2 Tbsp all purpose flour

Steps:

  • 1. In food processor pulse walnuts until coarsley chopped, add sugar and flour, pulse until fine. add butter pulse until combined and crumbly, add one egg and vanilla and pulse until dough sticks together about 19 seconds...if dough is not holding together, add 1 to 2 tsps cold water and pulse til dough sticks together.. press dough into a ball and divide into 2 portions, one third and 2 thirds wrap in saran and refrigerate for 15 minutes.
  • 2. Press larger piece of dough into bottom of a 9 inch pie pan and flute the edges and refrigerate for 15 minutes.
  • 3. For the filling in large skillet over medium heat melt butter, add brown sugar, cinnamon, apples and cranberries, stir and cook until apples are tender-crisp and juicy and cranberries pop 8 to 10 minutes, stir flour into apple mixture and cook for 2 minutes until juices are thickened. pour mixture into chilled pie crust and spread evenly.
  • 4. Preheat oven to 375F and on lightly floured surface roll out top crust and place over pie filling and crimp the top and bottom crust..beat the egg and brush over crust and cut several slits into pie crust to let steam escape while baking, bake for 35 to 40 minutes until crust is golden...remove from oven to cool..serve with a dollop of icecream.

  • Whisk 3 eggs in a medium bowl. Stir in brown sugar, corn syrup, melted butter, salt and vanilla extract.
  • Fold in chopped walnuts and cranberries. Pour into pastry, cover with foil and bake 25 minutes.

Cranberry-Walnut Upside-Down Apple Pie image

1 package(s) (37 ounces) frozen apple pie
2 tablespoon(s) butter
1/2 cup(s) packed brown sugar
1/4 cup(s) heavy whipping cream
3 tablespoon(s) maple syrup
1/3 cup(s) coarsely chopped dried cranberries
1/3 cup(s) coarsely chopped walnuts
2 teaspoon(s) minced fresh rosemary
- vanilla ice cream

Steps:

  • Bake pie according to package directions. Cool on wire rack for 30 minutes or until warm.
  • Invert pie onto an ovenproof serving plate or foil-lined baking pan. Meanwhile, in a small saucepan, melt butter. Add the brown sugar, cream and syrup; cook and stir until smooth. Stir in the cranberries, walnuts and rosemary; pour over inverted pie.
  • Broil 6 in. from the heat for 2-4 minutes or until bubbly and walnuts begin to brown. Serve warm with ice cream if desired.
