RED WINE CRANBERRY SAUCE

We were feeling festive when we started our holiday cooking, but a bottle of wine was a bit more than we wanted to drink. I added half a cup to the cranberry sauce, in place of juice, and a new recipe was born! -Helen Nelander, Boulder Creek, California

1 package (12 ounces) fresh or frozen cranberries
1 cup sugar
1 cup water
1/2 cup dry red wine or grape juice

Steps:

  • In a large saucepan, combine all ingredients; bring to a boil, stirring to dissolve sugar. Reduce heat to medium; cook, uncovered, until most of the berries pop, about 15 minutes, stirring occasionally., Transfer to a bowl; cool slightly. Refrigerate, covered, until cold (sauce will thicken upon cooling).

1 (10-oz.) pkg. frozen raspberries in syrup, thawed
2 cups raspberry cranberry juice drink blend, chilled
3 cups white zinfandel wine, chilled
1 1/2 cups lemon-lime flavored carbonated beverage, chilled
12 orange slices or star fruit slices

Steps:

  • In medium bowl, combine raspberries and 1/2 cup of the raspberry cranberry drink; mix well. Spoon into 12 sections of ice cube tray. Freeze 3 1/2 hours or until firm.
  • To serve, place 1 ice cube in each of 12 wine glasses. In large pitcher, combine remaining raspberry cranberry drink, wine and carbonated beverage; stir gently. Pour into glasses. Garnish with orange slices.

I love wine coolers as they aren't as strong as most wines. So I had some left over riesling wine and I decided to mix it with cranberry and raspberry juice. It is excellent in my humble opinion.

Coming soon to a market near you: sweet-tart raspberries. Use the fruit as the base for an aromatic syrup, and combine with seltzer for a refreshing sip. A few tablespoons of the mixture also enlivens white wine, vodka, and iced or hot tea. Make a double or triple batch to keep in the refrigerator. It will last for up to a week.

2 pints raspberries
1 lemon, sliced 1/4 inch thick (optional)
1 vanilla bean (split, seeds scraped, pod reserved) or 1/2 teaspoon pure vanilla extract
1/4 cup sugar
3 cups seltzer
Lemon wedges, for serving

Steps:

  • Combine raspberries, sliced lemon (if using), vanilla bean, and sugar in a double boiler or heatproof bowl set over a pan of simmering water. Cook, stirring, until raspberries have released most of their juices, about 12 minutes.
  • Strain through a fine sieve, pressing gently with the back of a spoon; discard solids. Let cool. Pour 1/4 cup syrup into each of 3 ice-filled glasses. Top each with 1 cup seltzer. Serve with lemon wedges.

1/4 teaspoon almond extract
1-1/4 cups ginger ale, chilled

  • In a pitcher, combine the juices, sugar and extract. Stir until sugar is dissolved. Refrigerate for at least 2 hours. Just before serving, stir in ginger ale.

1 (12 ounce) can raspberry-cranberry frozen juice concentrate, thawed
1 (12 ounce) can frozen pink lemonade concentrate, thawed
4 cups water
1 (1 liter) bottle club soda, chilled

  • In a 4 quart non-metal container, combine concentrates and water.
  • Blend well.
  • Refrigerate until thoroughly chilled.
  • Just before serving, gently stir in club soda.
  • Serve over ice.
