MEATBALLS IN CRANBERRY AND PINOT NOIR SAUCE

This has been a favorite of ours for many years. It is from the "Recipes from the Vineyards of Oregon" cookbook. Delicious and elegant meatballs, the food service where DH teaches now makes these for entertaining.

Number Of Ingredients 12

1 (16 ounce) can whole berry cranberry sauce
1 cup brown sugar
1/2 cup pinot noir wine
2 teaspoons dry mustard (can use hot chinese if you wish)
2 lbs lean ground beef
1 1/2 cups fresh breadcrumbs
1/2 cup finely chopped celery
1/2 cup finely chopped onion
2 eggs, beaten
1 tablespoon Worcestershire sauce
2 teaspoons garlic salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Lightly oil a shallow baking dish.
  • In a large mixing bowl, combine ground beef, bread crumbs, celery, onion, eggs, Worcestershire sauce, garlic salt and pepper.
  • Shape into 24- 1 1/2 inch balls.
  • Place in one layer in baking dish.
  • Bake for 20 minutes.
  • Meanwhile, in a medium saucepan, stir together the cranberry sauce, brown sugar, Pinot Noir and mustard.
  • Simmer over medium heat for 5 minutes, stirring often.
  • Remove from heat and set aside until needed.
  • After the first 20 minutes of baking, pour Cranberry and Pinot Noir Sauce over meatballs.
  • Bake an additional 15 minutes.
  • Remove meatballs and sauce to a serving platter and serve warm.
  • A chafing dish or crockpot keeps them warm for buffets.

Pinot Noir & Cranberry Meatballs are super yummy and simple to make. Sheri came over for a pool day and as usual, we each made some delicious food to snack on while we hung out. These meatballs are quick and easy to make and work perfectly as an appetizer or lunch. They would also be great over noodles with the sauce. The Pinot Noir and Cranberry sauce is awesome and Sheri said they were the best meatballs she has ever had!

2 bag(s) (1-pound) frozen cocktail-size meatballs
1 can(s) (16-ounce) whole cranberry sauce
1 cup(s) firmly-packed brown sugar
1 cup(s) pinot noir wine
2 teaspoon(s) hot chinese mustard

Steps:

  • Bake the meatballs in the oven according to the package directions.
  • In a medium-size saucepan over medium heat, add cranberry sauce, brown sugar, pinot noir wine, and Chinese mustard.
  • Stir to combine and let simmer for 5 minutes, stirring often.
  • Remove from heat.
  • Transfer cooked meatballs to a crock pot and pour prepared Pinot Noir Sauce over the meatballs.
  • Over low heat, keep warm while serving, stirring occasionally.

How to make Cranberry Pinot Noir Meatballs

1 (1 lb 10 oz ) bag Italian Style Meatballs
1 (16 oz) can whole cranberry Sauce
1 c. brown sugar, packed
1 c. Robert Mondavi Private Selection Pinot Noir
1 tsp spicy brown mustard

Steps:

  • Prepare meatballs according to package directions.
  • In a saucepan combine cranberry sauce, brown sugar, Pinot Noir, and mustard. Whisk to combine over medium heat. Bring to a boil and simmer for 5 minutes or until mixture has thickened, stirring frequently.
  • Remove from heat and pour sauce over meatballs, serve immediately or hold in crock pot on warm or low setting.
