Yield 1 10-inch cake

Number Of Ingredients 8

2 cups chopped cranberry
1/2 cup walnuts
1/2 cup plus 1 cup sugar
2 large eggs,
3/4 cup (1 1/2 sticks) melted and cooled, unsalted butter, 1 cup sugar
1 cup flour
1/4 teaspoon salt
1/4 almond extract

Steps:

  • Preheat the oven to 350F. Put the chopped cranberries, walnuts and sugar into a buttered 10-inch pie plate or springform pan. Mix eggs, butter, 1 cup sugar, flour, salt and almond extract. Stir the batter until it is smooth and pour over the cranberry walnut mixture. Bake the cake in the middle of the oven for 40 minutes, or until a tester comes out clean.

2 eggs
3/4 cup melted butter
1 cup all-purpose flour
1 tsp almond extract

Steps:

  • Preheat oven to 350. Mix cranberries, walnuts and 1/2 cup of the sugar and put in the bottom of a 10-inch pie plate. Mix eggs, melted butter, remaining cup sugar, flour, and almond extract. Stir until smooth. Pour over cranberry-walnut mixture and bake for 40 minutes.
