2 tablespoons raspberry vinegar
½ teaspoon Dijon mustard
½ teaspoon sugar
½ teaspoon salt
1 pinch freshly ground black pepper to taste
6 tablespoons olive oil
6 cups mixed salad greens, rinsed and dried
¾ cup dried cranberries
½ medium red onion, thinly sliced
crumbled feta cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spread pecans evenly on a baking sheet. Toast for 8 to 10 minutes, or until lightly browned and fragrant.
  • In a small bowl, stir together the vinegar, mustard, sugar, salt, and pepper; mix until sugar and salt dissolve. Whisk in olive oil.
  • In a salad bowl, toss together the greens, cranberries, pecans, onions, and cheese. Drizzle with vinaigrette, and toss gently to coat.

3 cups diced boneless skinless chicken
1 stalk celery, chopped
1/4 cup dried cranberries
1/4 cup pecans, chopped
1/4 cup light sour cream
1/4 cup mayonnaise (made with canola oil preferably)
3 teaspoons lemon juice (fresh squeezed preferable)
1/8 teaspoon poultry seasoning
salt & pepper

Steps:

  • Cut up cooked chicken into bite size cubes - should be enough to fill 3 cups & place in large bowl. Add dry seasonings, celery, dried cranberries, and pecans - toss with hands so as not to break up chicken cubes.
  • In a small bowl, mix together the mayonnaise, sour cream, and lemon juice with small wire whisk & add to chicken mixture - gently toss all ingredients together and chill until ready to serve.

2 tablespoons balsamic vinegar
1/4 cup red onion, chopped
2 teaspoons brown sugar

salt and pepper
5 cups mixed salad greens, rinsed and dried
1 fuji apple, cored and chopped (or try Pink Lady or Gala)
2 tablespoons fresh lemon juice
1 tablespoon water

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat the pecans with the 2 tbls. maple syrup(or brown sugar mixture) and 1/8 teaspoons cinnamon.
  • Spread the pecans out on a baking sheet in a single layer. Bake for 5 to 8 minutes in the preheated oven, or until lightly toasted.
  • In a food processor, combine the cranberries, raisins, vinegar, onion, brown sugar, and mustard. Chop coarsely; remove from processor and place in a bowl.
  • Gradually whisk in olive oil, and season with salt and pepper.
  • Chop apple into bite size pieces, then mix with lemon/water mixture in a bowl to prevent browning. Keep apples in mixture until you toss ingredients into salad.
  • In a salad bowl, toss together the greens, apples, and enough of the cranberry mixture to coat.

3 cups boiling water
2-1/2 cups fresh or frozen cranberries
1-1/2 cups finely chopped celery
2 oranges, peeled, sectioned and diced
1 can (8 ounces) crushed pineapple, undrained
2 tablespoons grated orange zest
1 cup sugar
2 tablespoons lemon juice
Dash salt
3/4 cup chopped pecans

1/3 cup wild rice, uncooked
3 cups water
1 1/2 teaspoons salt

1 scallion, finely chopped

2 teaspoons curry powder
1/3 cup pecans, coarsely chopped

Steps:

  • In large saucepan, bring water and salt to boil.
  • Add rices, cover and turn down to a simmer for 20 minutes, stirring occasionally.Add a little more water if it evaporates before 20 minutes.

4 ounces of montrachet goat cheese, crumbled

2-3 cups leafy salad greens (*see note)
2-3 Tbsp. crumbled feta cheese
2-3 Tbsp. dried cranberries
2-3 Tbsp. chopped pecans
A few slices red onion, optional
A few slices radishes, optional
Dressing: raspberry vinaigrette (l used aldi's tuscan garden raspberry vinaigrette)
*Note: leafy greens used to make this salad - red & green romaine, red & green lettuce, iceberg, or spinach
ANOTHER SALAD VARIATION: BLUEBERRY-MANDARIN SALAD
to make this salad, add the following ingredients along with the leafy greens and raspberry vinaigrette dressing...
A few fresh blueberries
A few canned mandarin oranges (drained well)

2-3 Tbsp. dried cranberries
2-3 Tbsp. chopped pecans
Omit: the radishes and red onion, when making the blueberry-mandarin salad.

  • 1. To make the original Cranberry Pecan Salad with Feta Cheese, place leafy salad greens in a bowl.
  • 2. Top with the cheese, cranberries, and pecans.
  • 3. Add the slices of red onion and radishes, if using.
  • 4. Pour in the desired amount of vinaigrette dressing, and enjoy your salad. (I would go easy on the dressing, and just add a little bit at a time.)
  • 5. 7/8/2014 - I did want to mention... The raspberry vinaigrette dressing I used to make this salad, I purchased from from Aldi's. Not only was it reasonably priced ($1.29 for a 16-oz. bottle), but it's also very good! I think Aldi's only carries this dressing during the summer months, so if you can get your hands on this dressing, I suggest stocking up on it. I love this bottled dressing!

Y'all have got to try this one for the upcoming holidays! It is so simple and full of flavor... There won't be any leftovers!! Enjoy as a side or as dessert. This is beautiful and tasty! I'm not a fan of cherries nor cranberries, but I LOVE THIS DISH! HAPPY HOLIDAYS!

1 1/2 c water
2 box 3oz cherry jello
1 can(s) whole cranberry sauce
1 can(s) 8 oz crushed pineapple undrained
8 oz softened cream cheese
8 oz sour cream
1/2 c sugar
1 tsp vanilla
1 handful of crushed georgia pecans

Steps:

  • 1. Bring water to boil. Mix in both boxes of jello until dissolved. Mix in entire can of cranberry sauce. And entire can of undrained pineapple. Pour into your 9x13 casserole dish and set in fridge to chill!
  • 2. While that chills- Mix with your hand mixer the block of cream cheese, sour cream, sugar and vanilla.
  • 3. Once the jello is set, gently spread the cream cheese mixture over the jello and sprinkle with a handful of chopped pecans. Chill in fridge until your ready to serve! Easy enough!!
