From a Taste of Home magazine. Made the recipe w/o the pecans for my residents @ the retirement community where I work as a nurse. Definitely a HIT. Pretty with the red cranberries

Number Of Ingredients 7

1 1/2 cups graham cracker crumbs
1/2 cup butter or 1/2 cup margarine, melted
1 1/2 cups white chocolate chips
1 1/2 cups dried cranberries, craisins
1 (14 ounce) can condensed milk
1 cup flaked coconut
1 cup pecan halves, i use pecan pieces.

Steps:

  • Preheat oven to 350 degrees.
  • Combine graham cracker crumbs with melted butter.
  • Press into 13 x 9 pan that has been sprayed with cooking spray.
  • Sprinkle coconut, cranberries, vanilla chips and pecans over the crust.
  • Pour condensed milk evenly over crust.
  • Bake@ 350 degrees for 25-28 minutes or until edges are golden brown.
  • Cool on wire rack Cut in bars.

2/3 cup all-purpose flour
1/3 cup butter, cut into pieces
2 tablespoons sugar
1 cup powdered sugar
1 teaspoon freshly grated orange zest
2 -3 tablespoons orange juice
1/2 cup sweetened flaked coconut
2/3 cup macadamia nuts or 2/3 cup pecans, coarsely chopped
1/2 cup dried sweetened cranberries
1/3 cup sugar
2 eggs, slightly beaten
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Heat oven to 350°F Combine all crust ingredients in small bowl. Beat at low speed until mixture resembles coarse crumbs. Press into ungreased 8" square baking pan. Bake for 15-17 minutes or until lightly browned.
  • Combine all filling ingredients in medium bowl until well mixed. Carefully spread filling over hot, partially baked crust. Bake 22-27 minutes or until golden brown.
  • Combine powdered sugar, orange pee and enough orange juice for desired glazing consistency in small bowl. Drizzle glaze over warm bars. Cool completely.

3 cups fresh or frozen cranberries
2 large unpeeled oranges, cut into quarters and seeded
2-1/2 cups sugar
3 tablespoons cornstarch
1 teaspoon ground ginger
1/2 cup chopped nuts, optional
CRUST:
3-1/4 cups all-purpose flour
3/4 cup sugar
1 tablespoon grated lemon zest
1 cup butter, cubed
3 large egg yolks
3/4 teaspoon vanilla extract
1 to 2 tablespoons water

Steps:

  • Grind cranberries and oranges (including peel). Set aside. In a large saucepan, combine the sugar, cornstarch and ginger. Add ground fruit; bring to a boil. Reduce heat; cook and stir for 15 minutes or until thickened. Remove from the heat; stir in nuts if desired. Set aside to cool. , Meanwhile, for crust, in a large bowl, combine the flour, sugar and lemon zest. Cut in butter until coarse crumbs form. Add egg yolks and vanilla. Gradually add water, tossing with a fork until dough forms a ball. , Pat two-thirds of dough into a greased 13x9-in. baking pan. Cover with cranberry-orange mixture. Crumble remaining dough on top. Bake at 425° for 20-25 minutes or until topping is golden brown. Cool on a wire rack; cut into bars.

  • Preheat oven to 350°. In a large bowl, beat brown sugar, melted butter, eggs and vanilla until well blended. In another bowl, whisk flour, baking powder and salt; gradually beat into sugar mixture. Stir in baking chips, cranberries, pecans and orange zest., Spread into a greased 15x10x1-in. baking pan. 1 1/2 cups coarsely chopped dried sweetened cranberries
2 cups butter, softened

Steps:

  • Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through. Cool completely (about 15 minutes).
