ONION CASSEROLE image

5 cups water
Salt
1/2 cup rice
1/4 cup ( 1/2 stick) butter plus extra for greasing dish
4 large onions cut into 1/2 inch dice
1 cup ( 6 ozs) shredded swiss cheese
2/3 cup half and half

Steps:

  • Bring water and 1 tsp salt to boil over high heat. Slowly stir rice Reduce heat and simmer covered 5 mins. Drain Rice and put into bowl Melt butter in large skillet over med heat. Add onions and cook stirring until softened and translucent 10-12 mins. Add to rice. Add cheese, half and half and 1/2 tsp salt or to taste and stir until well combined Place rice mixture in buttered 10 in round or 13 X 9 inch baking dish. Bake at 325 degrees until lightly golden about 1 hour
