1 can (11 oz) mandarin orange segments, drained and juice reserved
1 package (3 oz) orange-flavored gelatin
1 can (16 oz) whole berry cranberry sauce
Salad greens, if desired

Steps:

  • Add enough water to reserved mandarin orange juice to measure 1 1/4 cups. In 1-quart saucepan, heat juice mixture to boiling.
  • Place gelatin in medium bowl. Pour boiling mixture on gelatin; stir until gelatin is dissolved. Stir in cranberry sauce until sauce is melted. Stir in orange segments. Pour into 4-cup mold.
  • Refrigerate about 4 hours or until firm; unmold. Serve on salad greens.

Grandma's Cranberry-Orange Gelatin Salad image

My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

1 (6 ounce) package raspberry flavored Jell-O® mix
2 cups boiling water
1 (16 ounce) can whole berry cranberry sauce
1 (8 ounce) can crushed pineapple, undrained
1 cup chopped celery
1 cup chopped pecans
1 teaspoon orange zest
1 (4 ounce) package cream cheese, softened
½ cup whipped topping

Steps:

  • Place the gelatin into a bowl, pour in the boiling water, and stir until the gelatin dissolves. Mix in the cranberry sauce, pineapple, celery, pecans, and orange zest until evenly blended. Pour the gelatin mixture into a mold or serving dish.
  • Chill in the refrigerator overnight, or up to 8 hours.
  • To make the topping, beat the cream cheese with half of the whipped topping. Fold in the remaining whipped topping until well blended. Unmold the gelatin, and spread with the topping mixture.

3 cups fresh or thawed frozen cranberries, chopped
1 can (20 ounces) unsweetened crushed pineapple, drained
2 cups miniature marshmallows
1 medium apple, chopped
2/3 cup sugar
1/8 teaspoon salt
2 cups heavy whipping cream
1/4 cup chopped walnuts

Steps:

  • In a large bowl, mix first 6 ingredients. Refrigerate, covered, overnight., To serve, beat cream until stiff peaks form. Fold whipped cream and walnuts into cranberry mixture.

2 small oranges
1 cup sugar (or 12 tsp sugar substitute like Sucaryl)
1 (3 ounce) package apricot gelatin (or lemon Jell-O)
1 cup boiling water

Steps:

  • Put the uncooked cranberries and rind from the oranges through a food chopper, then add sugar and orange sections (cut in pieces).
  • Dissolve jello in boiling water and cool.
  • Combine the jello with berries and orange mixture.
  • Pour into mold(s) and chill until firm.Cooking time give is approximately chilling time.

This has been a staple of our holiday dinners for almost 20 years.I usually have to double the recipe so there will be some left over for "left-overs" the next day!.Besides doubling well, this can be made a day ahead of time. This is definitely a family and friends favorite!Chill time is cook time. * I've tried using Sucra or artificial sweeteners, but don't like the results as well as the "real" thing!

2 large navel oranges
1 lb fresh cranberries
1 cup sugar
1 (1/4 ounce) envelope unflavored gelatin
1/2 cup orange juice

Steps:

  • Peel oranges and reserve one fourth of the peel.
  • Remove white membranes and seeds from oranges and chop them coarsely.
  • Wash cranberries, drain, and remove any stems.
  • Pulse cranberries in a food processor until coarsely chopped.
  • Mince orange peel-it should measure about 3 tablespoons.
  • Combine cranberries, orange peel,oranges, and sugar in a large bowl and set aside.
  • Sprinkle gelatin over orange juice in a small saucepan (or in a small bowl in the microwave) to soften.
  • Heat over low heat, stirring, until gelatin is completely disolved.
  • Add gelatin mixture to cranberry-orange mixture and mix well.
  • Spray a 1 quart mold with cooking spray and fill with cranberry-orange mixture.
  • Cover with plastic wrap and refrigerate until firm, 6 to 8 hours, preferably overnight.
  • Unmold when ready to serve by running a small, sharp knife around rim,place a warm damp cloth over inverted mold, and shake gently to release.

2 cups sugar
1/2 orange, rind of, ground
2 peeled oranges
3/4 cup walnuts, semi coarsely chopped
2 (3 1/2 ounce) boxes orange Jell-O

Steps:

  • Grind cranberries, oranges, rind and fold in the sugar.
  • Make the Jello with 1/2 the water it calls for. Stir quickly until dissolved.
  • Add to the cranberry mixture, add nuts.
  • Refrigerate overnight.

2 cups fresh cranberries
1 (15 ounce) can mandarin oranges, drained and chopped
1 cup pecans
1 (15 ounce) can crushed pineapple, drained
2 (3 ounce) packages cranberry-flavored gelatin mix (such as Jell-O®)
¾ cup white sugar
1 cup boiling water
1 cup cold water

Steps:

  • Place cranberries, mandarin oranges, and pecans into a food processor and pulse several times to chop; process mixture until finely ground, about 30 seconds. Transfer mixture into a large bowl.
  • Mix pineapple, gelatin, sugar, boiling water, and cold water together in a separate bowl until gelatin and sugar have dissolved. Pour gelatin mixture into cranberry mixture and stir. Pour into a gelatin mold and refrigerate 8 hours or overnight before serving.
